Wow. Hands down the best Vietnamese food I have ever had, not even just on Oahu. The French dip is one of the best things i have ever eaten. The pho broth that comes with is the perfect level of savory and light and warm. The beef is perfectly tender, and the bread is just right balance of crunch and softness. I could eat this French dip every day. The vermicelli noodle bowl was also delicious and I loved the crispiness and sauce of the tofu. The Thai tea was the right level of sweetness, and the chili oil. That homemade chili oil is something else. It's aromatic, fresh, and utterly delectable. It was so good we bought a jar of it. You have a choice of egg or rice noodles, I got the latter. Bò Kho with vermicelli. The beef broth was sweet with plenty of onions. Dish came with the typical accoutrements one would get with Pho - the Hoisin was mixed with chili oil. The broth was good and the chunks of chuck roast were tender and with carrots...kinda looked like local style beef stew...sorta. Also, got an Iced Vietnamese Coffee. Strong and sweet as one comes to expect. Robusta coffee is SE Asian coffee is definitely underrated. Hours are 1000a to 1000p daily, except Sundays, when they're closed. I ordered the n10 beef Vermicelli bowl with lemongrass beef. I thought it was pretty good but it wasn't as much of a taste bud party as the pork vermicelli bowl which included spring roll, that I had before. For me, I think it was that I didn't really taste much lemongrass which is one of my favorite spices. I really like the intimacy of this restaurant. I LOVE VIET CHUBBY BOY! My coworkers and I bring up ordering from them at least once a week. We all know what we want and it's the pho french dip sandwich! If there's anything you have to try it's this specific sandwich. It's so flavorful and delish! The meat is tender and packed with seasoning. And I like how the bean sprouts were cooked since it gets rid of the bitter taste the fresh ones add. They're super easy to order with over the phone and to pick up. Parking is tight but if you come during off hours, there are lots of open stalls. Recently Yelp GF told me that he tried their French Dip (Banh Mi) and said it was amazing. It was the nudge I needed to finally go down and give them a try. I decided to order their French Dip to go. Since I was in a rush, I called my order in and it only took them about 15-20 minutes to get my order ready. Customer service was friendly and the place was pretty busy with people waiting for their take out orders. The drive home was fragrant and got me excited for my first bite. I thought the sandwich would have more roasted beef brisket but it was mostly bean sprouts. When I could taste the brisket, it was good but almost every bite tasted only like bean sprouts. I used up the container of their saute sauce in a few bites to try drown out the dominant bean sprout taste. Their saute sauce was quite tasty. Good thing I have a lot of saute sauce at home so I could finish the banh mi. Their broth is on the sweeter side and I liked that they have a lot of sliced onion in it. But its missing the essence of the spices, like the cinnamon, star anise, cloves, coriander seeds, cardamom and fennel. Also the smokiness of the onions and ginger. I just prefer my pho broth to be heavier on the spices. But I still enjoyed it. The rice noodles was perfect, and the meat toppings is a little on the stingy side. Also only one size bowl. I also tried the Summer Rolls with BBQ Pork. It was just average to me. Service was good, attentive and refilled my water when needed. Came to check on me a couple of time. The banh mi here is decent, but not something I would call the best on the island. The bread is good, but a little shorter than what I've had at other banh mi shops. We were in the area and looking for a place to eat on Yelp. Viet Chubby Boy popped up with good reviews and a menu with a variety of dishes. We were only 2 minutes away so decided to check it out. We're glad we did since the selection was very good and the dishes were five-star! They have a variety of Asian dishes, not just Vietnamese as you would think by their name. I had the salad wrap; lettuce leaf with minced pork, shrimp, bell peppers and garlic. Very tasty and healthy dish. All the ingredients complemented each other nicely. We also had the fried spring rolls vermicelli. The spring rolls were light and crispy with a good amount of filling. The vermicelli cooked well, not overcooked, and came with a their house fish sauce, very flavorful. The prices are also competitive and you definitely get your money's worth. The place is cozy and comfortable. Parking is convenient as the lot is right outside. Service is excellent and they all seem to look out for you. For our mains, we ordered the stir-fried egg noodles with seafood and the Pho French Dip. I really enjoyed the Pho French Dip. It has roasted beef brisket with avocado sauce, thai basil, bean sprout, onion, cilantro in a Viatnamese baguette. It's oily but the flavor is well-balanced and so good when I dipped it in their house pho broth. Actually, both the stir-fried egg noodles and pho french dip were already tasty on their own, but when the staff offered chili oil, it completely elevated the flavors. It was so good that I asked if they sold it, and they do! The staff told us they make it fresh with lemongrass and chili, and they even bottled one for us. Drove by here many times never took notice of this small unassuming small pho restaurant...located in same parking lot as Diners upscale ( right before post office) The parking is shared with alot of other eateries. The insides is small maybe 6 or 7 tables it (wasnt cramped) appears to all be manned (host waiter busboy cashier etc) by one guy. He was busy but pleasant in his duties. Our server, who also is the owner and chef, Kevin, graciously explained that this was his nickname given to him by his wife when he was 50 lbs heavier. So, at 50 lbs lighter now, you won't find him chubby anymore. Love the restaurant's logo of Kevin's caricature profile on the staff t-shirts, caps, cover menu, and building front. Originally from Vietnam, Kevin started cooking when he was enrolled in the culinary programs at Leeward and Kapiolani community colleges. This brought back memories when he was younger, and he learned to combine them with the local Japanese and Korean accents. He then opened his restaurant in the former Old Saimin House in the Kapalama Shopping Plaza in July 2022. Viet Chubby Boy is a casual, hole-in-the-wall restaurant offers authentic, as well as creative Vietnamese comfort dishes using Korean (e.g., kim chee) and Japanese accents (e.g., cheese omelette topped with mayo and an okonomiyaki-style sauce) to accommodate local residents familiar to Asian multi-ethnic tastes. Parking available but I suspect during high noon or dinner hours, parking may become an arduous task. Mr Nguyen (he took care of business like no other, I'm guessing he might be the owner. Now let's talk about the food. Because let's face it, that is what we're here for. We started with spring roll app. They were yummy little rolls. I liked that the order was bigger than most other places. The beef stew with egg noodles was my dinner. I have to stay that I think this was the best one I've had. I order this at every Vietnamese joint we go to. The broth was to die for. BUT, the beef was not super tender as beef stew meat is supposed to be. However, I will still get it next time. I think I've had better summer rolls and pho at other places, but given the fact that this place is open late, I think I'd still be back to try other things on the menu and my husband liked his bunmee bowl. As an appetizer, we shared some onion rings. What can I say about da grub??? Loved the taste of the wings, although I didn't think my wings were spicy. The deep fried wings were a bit overdone, as the meat was a bit dried out, but of course the fish sauce really helped put back some moisture in those wings. My meal came with a scoop of white rice & a salad. The onion rings were done perfectly! Big chunks of onions, battered & deep fried to perfection. My friend Gary enjoyed his noodle dish. This is my boyfriend and I's go to pho spot! The service here is always phenomenal. It always seems to be the same guy (that wears glasses) working and he's always so sweet and attentive. Our go to order is the beef combination pho which has a really clean and clear broth. I also enjoy their shaking beef and love that they also offer crinkle fries because you can also do a side order of fries. And soup with a side of fries is a combo that I personally love! The beef stew and bahn mis are also really good. But the fried chicken is a whole other thing you have to try as an appetizer or get even as a rice plate! They have about 6 tables and the shared lot does get busy but we have also done takeout a few times and the food is just as good! We will be back! read more

The mapo tofu and chicken pho are my two favorite go-to items. I think I order the mapo every or every other week . It's not like the Chinese/typical saucy dish, but is seasoned well with black pepper and sautéed onions - so comforting. Love their house lemongrass chili oil too! read more
