The food arrived in a timely manner but the gravy for the loco moco was served in a small ramekin on the side; now I didn't ask for it on the side but maybe that's just how they serve it. The eggs were cooked perfectly, the short ribs and rice not so much (short rib could have braised longer and the rice was a little over cooked)... and the little ramekin of gravy was definitely not enough for the large bowl of food. I had high expectations for Vida at Fontainebleau because the hotel itself is beautiful and positioned as a luxury destination. The restaurant's decor and lighting are elegant and create a pleasant atmosphere. Unfortunately, that's where the positive experience mostly ended. The restaurant has a surprising amount of noise from dishes and silverware echoing throughout the dining room. We were initially seated next to the station where servers constantly grabbed cups and silverware, making it one of the noisiest tables in the restaurant. When I politely asked to be moved, instead of simply seating us at another available table, we were sent back to the hostess stand to wait again. It felt unnecessary and poorly handled. Food was mixed. The salmon with cottage cheese was flavorful and well prepared. However, the chicken ciabatta sandwich was extremely dry, bland, and disappointing despite including bacon and other ingredients that should have added flavor. The biggest issue was the service. Our server, Stephanie, came across as cold, unwelcoming, and passive-aggressive throughout the meal. We never received a water refill. The only team member who was genuinely pleasant was the person who delivered our food. What disappointed me most is that several interactions, from the hostess to the seating to the table service, felt consistently below the standard I would expect from Fontainebleau. It gave the impression of poor management and inconsistent training. This restaurant has a beautiful space and some good dishes, but the service experience overshadowed the meal. Deciding it was time to make a visit and see the hotel/casino, I looked at their website to pick a restaurant for breakfast. There were a couple of options. I chose Vida. I came down the elevator from the garage and it was only a few steps to Vida. It's in the South Lobby area. I lined up behind a couple for a table. One of the people at the desk asked if I wanted to sit at the bar. That was fine for me, and I went in and sat down. The bartender/server working the bar came and gave me a menu. He also asked if I wanted coffee and orange juice. Yes to both. I was poured a cup of hot coffee which helped wake me up a bit. I opted for the smoked ham and cheddar omelette which the menu describes as Vermont white cheddar, hashbrown, choice of toast. I ordered rye toast. Taking the time while waiting for breakfast, I took in the surroundings. The restaurant is very nice even elegant. It wasn't very busy, but the bar was a popular place as several more people came in a short time while i was there. Breakfast arrived and my coffee was refilled again. I had been sipping the orange juice during this time, also. The omelette was good tasting. The small squares of ham added to the overall flavor quite a bit. I came here with the intention of having a full course meal. They had the option of an app, main and dessert for $45. I wasn't feeling great but i knew i needed to eat. Dante was my server and he was absolutely wonderful. I got the chicken soup and it tasted really good, but i realized as i was eating it that i couldn't eat anything anymore. I was feeling sick and when i had asked him if i could cancel the salad and desert, he did so without any issues. He ended up getting me a shot of ginger apple juice refresher and some honey and lemon for my water to help with my throat and nausea. I also ordered the hot chocolate which I remembered to be fantastic when I had it the day before. Hubby's order came within 15 minutes. He did not like his order very much. He said the pork was too salty. After about 30-35 minutes, my order had not arrived. When I told Adrian this, he profusely apologized. He was very busy attending to many patrons thus, he did not notice. I was getting quite hungry. He gave me another cup of the wonderful hot chocolate and told me that it and my shrimp pesto would be on the house. He thanked me for being so patient and said it was the least he could do. He was genuine in his effort to make it up to me. He was truly wonderful! My shrimp pesto came and I inhaled it. It was very good. I was starving.
