ChoLon Modern Asian - Downtown

While visiting Denver, my coworkers and I went to ChoLon downtown. It was restaurant week in Denver…read moreso the menu was limited but we still found a lot of items to try out. The chicken soup dumplings, pork potstickers, and the ice cream was all very good! I wasn't such a huge fan of the tufu pork belly noodles. I'm not really a fan of tofu but I didn't really like the noodle dish in general. The inside of the restaurant is beautiful and well designed. The wait staff was also very friendly. I would like to come back here and try more items from their regular menu.

If you've read my reviews before, you already know two things about me. I give honest feedback, and…read moreI cannot stand being served cold food. Lately it feels like a lot of restaurants are charging more while giving less, and it's getting harder to find places that actually care about the customer experience. Unfortunately, this was another one of those experiences. We ordered three side dishes and three drinks, and the bill came out to around $100. Two of the three sides were served cold, the dumplings at least came out hot, but they were pretty mediocre and nothing I'd order again and drinks were extremely over priced. The waitress was fine, no real issues there, but it did feel like the food may have been sitting in the kitchen too long before it hit the table even though the place was empty. At the end of the day, it's hard to justify paying that kind of money for cold, underwhelming food, then feeling awkward about the tip because the experience just wasn't good. I won't be back. If I had known this is what the experience was I would have definitely gone somewhere else. As an added bonus I felt like crap afterwords, I think it was because of poor quality ingredients. My aim in writing these reviews is to highlight the restaurants and businesses that truly take care of their customers, to give people a heads up about the ones that clearly do not prioritize quality or the customer experience, and to express myself in a world where it often feels like there is very little room to speak honestly about paying top dollar for mediocre experiences. Very disappointing.

If you're looking for a spot with undeniable vibe, Linger absolutely delivers. The ambience is…read moreeasily the star of the show--dim, moody lighting paired with some of the best views in Denver. On a beautiful evening, the open-air setup makes it feel like you've stumbled into one of the city's coolest rooftop escapes. It's the kind of place that makes you want to linger (no pun intended) over drinks and soak it all in. The staff also deserves credit--friendly, attentive, and clearly dialed into creating a great guest experience. Where things start to fall apart, unfortunately, is the food. The concept is ambitious: a globally inspired menu pulling flavors from all over the world. In theory, it should be exciting. In execution, it feels like too much of a good thing. Nearly every dish we tried leaned heavy--over-seasoned, overly sauced, and lacking balance. The most consistent note across the board? Salt. Not just a touch too much, but enough to overpower the actual ingredients. Instead of distinct, thoughtful flavors, many dishes felt like they were competing with themselves--bold sauces layered on top of already strong components, resulting in bites that were more overwhelming than enjoyable. It's the kind of menu that seems designed to impress, but ends up exhausting your palate. Linger nails the atmosphere and hospitality, making it a fantastic place for drinks, a date night, or to show off Denver's scenery. But if you're coming primarily for the food, it may leave you wishing for a bit more restraint and refinement. Great setting, great service--but the kitchen could benefit from remembering that sometimes, less really is more.

We had the somakase, and every dish seemed better than the last. The hama chili and walu walu were phenomenal. From the quality of the food to the overall experience, this was easily one of the best meals I've had in Denver. A must try for anyone who appreciates exceptional sushi, great service, and an experience that feels special from beginning to end.

We ordered a bunch off the menu: shrimp and chicken karaage, two sushi rolls, sashimi, specialty drinks, hot sake, and dessert. I regret not taking photos of the menu but the sashimi we ordered was off the Toyosu market menu, which means the fish is flown in from Japan. It was yellowtail. Very tasty! The rolls were very good too. My boyfriend loved the karaage. The cocktails were pretty damn good. I had a spicy mezcal drink that I thought was very refreshing. The dessert was amazing! It was a banana cake with ice cream, miso caramel and some kind of crumb that was chef's kiss. The restaurant is pricey but I think it reflects the quality of service and food. I would come back but this place is definitely more of a special occasion type of place.

This is my family & I 2nd time here in Denver and after finding this place the 1st visit we make it a point to come to this location. We're located in Georgia so I think we have a good sense of good Chinese. I always get the Mongolian beef with fried rice (no egg; I'm allergic) My husband always gets the General Tso chicken with the fried rice and he ALWAYS orders this and never has a complaint. My son gets the Sesames chicken also with fried rice and it's sweet and crunchy as they fry the chicken to mix in their sauce and it's worth every penny. Every time! Service sometimes can be short in communication but expected especially when they're working all day and don't have time to eat but their food never misses! It's never crowded or busy when we come no matter the time of day, never noisy always sit at a booth. I highly recommend this place I will always come here when visiting Denv

Uncle makes me want to move to Denver! To start the ambiance is really chill and inviting with warm lighting and offers countertop as well as table seating. Our server was amazing and explained the menu well and made some recommendations that did not disappoint. We ordered way to much food but I do not regret that because I got to try so many amazing dishes. Despite ordering so many options they even brought us a chilled tofu dish complimentary (no clue why but not complaining) and it was lovely! We shared the uncle salad (amazing!), thai shrimp, eggplant buns, several different nigiri/aburi nigiri and sashimi and the toro toro and spicy tuna roll. All of the sushi was fresh and had excellent pairing of accompaniments. The only dish that I remember being a miss was the soft shell crab buns. The proportion of bun to interior was off and there was way too much mayo. Everyone got their own ramen which they seemed to love. I ordered the Veggie Khao Soi per our servers recommendation and I am still thinking about it weeks later. It was a curry/ramen mix and had big chunks of trumpet mushrooms in it and the perfect amount of spice that I love. Denverites I am jealous you have Uncle and anyone visiting make sure to add it to your list!
