This was my first time eating at this restaurant and it was scrumptious! Timberline is on the casino floor of the Ameristar Black Hawk Casino. My bestie brought us here for a relaxing getaway and birthday dinner for my mom. She, as always, picked the perfect spot because we had a great time! The restaurant was busy as all get out so there was a slight wait for our table but the hostesses checked in with us several times. The kind of great customer service I appreciate. We were sat a few minutes after our reservation time in a private booth in the front area of the restaurant. Our server, Jessica, was slammed but made sure to touch all of her tables. She came over with water and since we're starving we ordered our drinks and food all at once. She brought over fresh bread and butter which was warm and yummy. Our appetizers came out: squash blossoms, scallops, crab cakes, and bone marrow for the bestie. We devoured everything and made a lot of satisfied food sounds. We were able to sit back and digest before our entrees came out. She ordered the 3oz wagyu and we ordered the 8oz salmon to share. The sides were ala carte so we ordered the asparagus, heirloom tomatoes, and mashed potatoes to share. It was all so good. Everything was cooked to the requested temps. The sides were perfect! Can't even truly describe how perfect this meal was. We all sat back and sighed when we were done. The sides were a generous portion so we have leftovers. We had such a wonderful dining experience! We started with the yellowtail kinilaw, which was light and bright with just the right touch of citrus, followed by rich, decadent bone marrow and perfectly crisp corn battered squash blossoms with creamy ricotta and basil pesto - an incredible trio of appetizers. The cucumber mint gimlet was crisp, refreshing, and beautifully balanced. For the mains, some of us shared the rib eye, filet mignon, and prime rib--each cooked exactly to order, tender, juicy, and full of flavor. The sides were just as impressive: the asparagus was cooked to perfection with green romesco sauce, grilled stone fruit, pineapple tomatillo, and the lobster mac and cheese was indulgent, creamy, and packed with sweet chunks of lobster. The evening ended on a sweet note when the team surprised our friend with a luscious, 20 layered chocolate cake for her birthday. We got the prime rib. Everything we ordered except the Mac n cheese was as if it was thrown in the microwave and zapped for 30 seconds then called good. This is my third visit to Timberline, and the review is based on a Friday night @ 1900 Timberline is the steakhouse inside Ameristar located next to escalators. Shoutout to Kenny and Jon the bartenders with spirit knowledge reigns supreme over nearly anyone. Ask Jon for a history lesson on scotch or the origin of the martini or Martinez drink. I tried the 40 day dry age NY strip and it was well marinated but don't taste 3 times better than the regular NY strip. The house made Roku Gin (with butterfly pea flour) was purple and liquorish tasting almost like absinth. Friday night it was very busy needing a reservation. We just grabbed a barstool at the bar. Overall it was a enjoyable experience. The food did take like an hour to come out so be a turtle not a rabbit. read more

Restaurant was in the casino and a cute set up for being so. We were sat in the center and it was empty so we asked to be moved to a booth, the lady gave us such a hard time it was laughable. We even said if she cannot move us it's fine but booth preferred. She said that's what the comments section is for in the reservation to where we had just put birthday. Our server was friendly but wow a smile or recommendation something would be nice lol Filet was delicious! I loved my strawberry peach salad! French Onion Soup was mediocre and not warm enough. We are regulars of Black Hawk and have tried almost every restaurant in town but strangely had never been to Timberline Grill, so we decided to change that this weekend. She got everything right and she did it with a pleasant attitude. Wait time for food wasn't horrible for a busy Friday night. The wings came for the appetizer and they were $14 for 6-- rather pricey. For the meals, we got the burger (table favorite), the prime rib (very fatty), and the jerk half chicken (was supposed to come with apple slaw & chorizo but was over a bed of what seemed like breakfast potatoes). This place does not even deserve one star. Horrible food. Waited over 30 mins for drinks and never asked if we wanted to order more. Ordered a filet mignon medium and it was still purple and blue sent it back and it came out within a minute and only the outside was cooked middle still cold. Talked to the manager and she was very rude didn't offer to help and was very confrontational just wanted to argue instead of fixing the problem. Also waited 30 mins past a reservation time. When you are spending 250+ you expect good service and this place is not it. Baked potato was absolutely disgusting and inedible. Overall very disappointed and dissatisfied. This place totally rocks! The food, the staff, the wine and cocktails list.... What more can I say? Well...the prices. Menu is a bit on the pricey side but totally worth it. The filet was perfect without the Bordelaise and the sides (carrots and asparagus) cooked al dente (nice crunch!) Just a helpful hint...if you order the pork chop or filet, ask them to butterfly. They are super thick. Also, request a side of the shishito peppers. These are grilled to accompany the entrees (so not on the menu) however our waiter brought some at request (au gratis!) Food: AMAZING!! Appetizer we had Shrimp Cocktail. Perfect! Entree, My wife had the Wagu filet. I had the bone-in Ribeye. Both were cooked to perfection!! When I think "steak" I think "woo hoo!" Take a break from gambling and try out a steak or some seafood at Timberline Grill. I can't say this is one of the better places I have been, but it's reasonably good. I've visited many times and staff can be wonderfully excellent or sadly can fall a bit short of what you might expect from a high-end steakhouse. THE GOOD: * I love the backlit menus. When you're in a dimly lit restaurant you don't want to be squinting and don't want them to turn up the lights since it would kill the mood. Speaking of the mood, the atmosphere here is great with a rustic but upscale vibe. Go on and clink your glass of wine and relax or be romantic. * The food. Everything that I've tried here has been delicious and I haven't had any significant problems. My steak was so good I might have accidentally slipped out a moan with my first bite. However, on this last visit my friend's steak was missing the requested sauce. No big deal since the steak was great on its own. * Table service is pretty good here and the servers attempt to engage without intruding on table conversation. * A bread basket is automatically served with a variety of delicious rolls, and refills were available as needed. I could probably eat a whole basket of the pretzel roll variety. They were soft and warm and perfect with a little butter. THE NOT-SO-GOOD - this place misses many of the small attentions to detail that would set it apart. From my last visit: * Sit near the kitchen and you'll hear the door noisily opening and closing along with the harsh white light from the kitchen shining out to your table. * The shared sides were served without serving spoons so we either had to flag down our server or use our forks. They were hot and looked too delicious to wait, so we opted for the latter and dug on in. * Front podium seems to be indifferent to your business or seating preferences. Two people were present when we arrived and instead of a cheerful greeting they looked up and just said, "Hi". I gave the name and they escorted us to the bar area for seating at a center table. I told the host that my reservation requested a booth for a birthday. She walked back and confirmed before taking us to the booth by the kitchen. Before leaving the table she did wish my friend a happy birthday, but there was no apology for the small mixup and no confirmation that the table was to our liking. I realize they can't always accommodate but the restaurant was not very full. It wasn't unfriendly at all, but it wasn't very welcoming and the initial seating is a diner's introduction to the meal. * Special occasion: In my opinion, restaurants don't have to go over the top, but if there's a special occasion noted like a birthday it should be acknowledged. At the end of the meal when the server offered dessert, I let him know that we were interested since it was my friend's birthday. He joked that we should have let him know sooner (hello front podium, are you there?) and asked what we'd like to help celebrate. We chose a favorite, and I was naive in thinking that it would be complimentary but found the full charge on the bill. No biggie - we ordered it & ate it so we should pay for it. * Leftovers: There was a lot of good food so we had leftovers. Our server brought a container to the table but made no offer to help box the food or provide a bag for us to carry. I had to flag down a passing team member to ask for a bag to take the food with us. MY TAKE: Give this place a visit if you're in the area, but I probably would not make a special trip and don't set your expectations to the top. I can't speak to the full menu because I've only come here for one thing really: the seafood platter. It's absolutely delicious and I can't get enough of it. I had the same waiter and it was months apart and she not only remembered us but was again spectacular. Not sure if I would try the steaks, but she mentioned that it's one of the reasons people come. We came here for a Yelp Elite event and Timberline Grill did not disappoint. It was a 6 course meal with wine pairing. And it was so delicious! We started with an oyster duo. One was served hot and the other on ice. It was definitely a new experience to have an oyster appetizer with opposite temperatures, but an amazing experience nonetheless. The next course was a beet carpaccio with kale. I need to learn how to make it because it was so delicious and I would be so much healthier eating this by the pound everyday. Yes, it is that good that you probably couldn't get enough of it. Next was the egg yolk ravioli. The yolk came from a free-range hen and this was definitely an experience that was completely different from anything I have had. The yolk is in the middle and you need to poke it so that you get the entire flavor with the handmade ravioli. If you don't like your yolk runny, then this is not the course for you. The intermezzo was a lime sorbet in a prickly pear. I have tried prickly pear syrup, but have never eaten one. I thoroughly enjoyed it, but let's be honest, I thoroughly enjoyed the entire meal and I don't think I have a favorite. The entree was a NY Strip steak. It was cooked for hours at 125 degrees and then seared. The way it was cooked was so perfect for me, but for those who like medium or more for temperature, you wouldn't appreciate it. Finally, the dessert was amazing. I always joke that I have a separate compartment in my stomach just for dessert and I'm glad that it came through last night. The wine pairing was great. This was the most disappointing meal. We both ordered the NY strip. I ordered mine medium rare and my husband ordered rare. Both were extremely over cooked. The steaks looks gray and not grilled or seared. They both had a mealy texture which was very unappetizing. We pry the vegetable medley. Very under seasoned and bland. Two slices of what was supposed to be eggplant. For $13 this was a shame. The service was subpar, we felt rushed. I honestly had never heard of Timberline Grill until I attended a Yelp event for dinner one night. The restaurant is decorated as a beautiful cabin like steakhouse with a great atmosphere. I love the feeling you get when you walk in. It welcomes you. We were set up with a menu that is not typically offered on their regular dinner menu, but I can speak to the food that we tried and it was amazing! They provided a wine pairing with each course and walked you through each wine and dish. Some dishes I was skeptical about because the ingredients didn't seem like they would work, but they did. I couldn't have asked for better service. The chef came out and spoke about picking each item and how it was prepared, The sommelier was there to also explain each wine and how it brings out certain flavors in the dish. We came to the casino for a little R&R and our tummy's shouted "let's eat steak"! We did not have a reservation but were seated right away. Let me begin with the atmosphere. Low lighting and very comfortable. Nice table settings and the ambiance is set to fine dining. The menus light up so you don't have to struggle to read through what you want to order. Service was exceptional and our server, Anthony, was very accommodating. He gets a 5 star rating! How to the food. We ordered the French Onion Soup which tasted like the wine had not burner off. It had a strong vinegar taste. This could be a personal preference so I did not eat it. Anthony offered the other soup (shrimp bisque) which had a better flavor although still wasn't anything to get excited about about. My mother and I both ordered the filet mignon. When they brought the plates out, her steak was beautifully presented where as mine...looked like a hockey puck! What!!?? I immediately pointed this out to Anthony and they made me another steak. This time... It was perfect. Listen, everyone has an off night so I'm willing to let it slide. The ONLY reason my star rating is 4 was because Anthony handled everything with eloquence and was a true host to our dinner. My only complaint would be that when the manager came out to.speak to me about the burnt steak, he worded his apologies in a way that was almost placing blame on me for the style in which I ordered. My wife and I are locals, we took advantage of a "free" room at Ameristar this past Wednesday night. On a whim, we decided to try Timberline again. I walked up to the hostess, asked for a table for two, she asked if I had a reservation, I said no, (the place was half empty) she seemed annoyed, walked us past several nice (empty) tables to one at the very back, right outside the kitchen door. She dropped the wine list and menus on the table and turned around and walked away without saying a word?! I've had a better hostess at Village Inn. The food is ok, but definitely not worth the money. I love the place, and the ambiance (when you're not right outside a noisy kitchen) but I won't be back. read more

The casino is having issues because of a lack of staff. These poor employees are being worked to the bone but the Timberline Grill, under the sous chef turned acting Head chef killed it! She needs to be hired as Head Chef. OMG she had the most perfect Scallops appetizer. Gordon Ramsey would be proud of that beautiful sear! You just couldn't get them cooked any better. The trout was perfectly crisp and the filet just amazing! Bone in Rib-eye had great flavor and seared nicely as well. Best meal we have had in several years including meals in Las Vegas. The chef is really creative and makes the meals so innovative. The chicken breast was not your normal chicken breast but a creation that I could not even Imagine duplication. The pork belly appetizer was cooked to perfection and like nothing we have had. Simply the best restaurant in the Peak to Peak area. My husband and I have attended two Yelp Elite events here and have visited once on our own, and nothing in Black Hawk, Central City, or off of the Peak to Peak highway between those areas and Nederland even comes close. The food quality, service, and atmosphere are a step above everything else in the region. You will pay for that quality, but that's to be expected and it's great to have a place that is able to provide it. Make sure you make reservations as that is necessary and bring your appetite. As a side note, the restaurant is located on the ground floor of the Ameristar right in the casino, but in my experience, this does not negatively affect the atmosphere as the Timberline Grill is closed off from the casino and in it's own little "building." This was a wise choice. Worth your time and your hard earned money, particularly if you are spending an evening in Black Hawk or Central City. read more
