This is a mixed review. First, the positive. The food was excellent. The filet and sea bass were beautifully prepared and delicious. The serving staff (Aaron and Juan) were friendly, professional and gave flawless service. The negative. One of the dessert orders was messed up. And, when I spoke to the manager about that (and one other concern) she was condescending and dismissive. That ended what was otherwise a very pleasant evening on a very sour note. This place would be 5 stars if not for the food poisoning. We had been to Chop House once before and had a wonderful experience. I had given it 5 stars then, which I included in an overall review of the Monarch where it is located. However, with this last visit, that was not the case at all. This is an upscale, dimly lit steakhouse, and we had an amazing time trying it for our anniversary a while back. When we went to celebrate my birthday this year, it was a different story. Though service was attentive, prompt and friendly (which of course was reflected in our tip) I cannot give extra stars, as the food physically made my husband ill. He decided to have the lobster bisque, and unfortunately it immediately did not sit well with him. I tried it as well, and it tasted rancid. Being polite, he just pushed it to the side and did not say anything. Then the staff came over a few times asking about the bisque, then proceeded to comp it, which made us even more concerned. I'm a professional chef, and we do not serve anything that tastes or smells even remotely questionable, especially when it comes to seafood. He was ill for hours afterward (and into the next day). After tasting it myself, I could not stomach much more of our very expensive meal. My steak and French onion soup were fantastic in flavor, but I was not able to enjoy much of it, as I also had a nasty taste from the bisque and felt nauseous just from the smell alone. They did bring me a free birthday dessert, which I appreciate. However, I did not get to choose what I was eating. They brought out pumpkin cheesecake. To give credit- I'm sure it was chosen because it's a popular dish, but I personally do not like pumpkin at all. In fact, it makes me gag, frankly. I do however, love cheesecake and tried a bite to be polite, but I did not like it, let alone want it. I decided not to say anything about the dessert they chose for me, since I did not pay for it, and we were trying to get out of there due to not feeling great after the food served. I was disappointed even more at this point, as it would've been nice to at least be able to choose and enjoy my "celebration dessert", especially considering how much money we spent- even less the bisque. Not to mention how awful the experience was due to food poisoning. We will not be back, which is unfortunate considering how great our first experience was. This place just sucks. We were there two years ago and it was awful, but we thought, hey, maybe they were just having an off night and so we tried it again. Still awful. For the second time in a row, we had some of the worst service that we have ever had at any restaurant. Sat for 30 minutes before anyone approached us, got a snippy response when we flagged someone down to ask for drinks. It went downhill from there. Everyone from the manager to the bartender to the server is inconsiderate and condescending. Truly eye-opening given that we dined at the Monarch's Mariposa Bistro the night before and had the most amazing food and service. I honestly hated my whole experience. After a hike in Georgetown, I searched and found this spot with really high reviews. Once I got there, I realize it was in a casino; not my scene but whatever. The server was rude which I could have overlooked if the food was decent!! Food: I ordered Chilean sea bass. I didn't realize it was a steakhouse, but that's not excuse for poor food. I found it to be uninspiring and pretentious. The fish was sitting in this yellow sauce, possible a butter sauce, which was just salty with no depth of flavor. The texture was also off putting. After the unpleasant dinning experience, I was gifted with a stomachache that wouldn't stop hurting until I went to bed. I felt better the next day for obvious reasons. Positive note: Service was fast so I could gtf out. If you want to spend a lot of money to wreck your wallet and your guts, come to Monarch Chophouse. I personally would rather starve. read more

Dined at this restaurant during a girls trip to Colorado. I was blown away by the phenomenal customer service from the staff. Every person we encountered was kind, patient, and attentive. Everyone from our server to their assistants was amazing. My favorite employee interaction was with Rush, who made our Caesar salads table-side. He had a wonderful spirit and great conversation- cherry on top was that he made a delicious salad for us! I loved the bold flavors of the salad. I ordered the lamb shank while my friends ordered seafood. Unfortunately, I did not enjoy the lamb shank. The meat was incredibly tough. I would recommend cooking the meat slower for longer to improve its tenderness. However, the sides were delicious!! I got full from eating all the sides we ordered (whipped potatoes, Brussels, and Mac and cheese). I will say the Mac was just ok - I did not care for the noodle type. The food was absolutely awfull, please do not get the table side caesars salad, the grilled octopus, or the pork chop. Spare yourself from a miserable dinning experience. My boyfriend made us reservations here for my birthday. It was an overall lovely experience filled with excellent service and delicious food. The atmosphere gives off a romantic vibe for sure - think white tablecloth, candles, and roses. We started with cocktails. I think my boyfriend got one that was tequila based and I had the martini. I enjoyed my martini very much! We had the oysters and lobster crab cakes as appetizers. I enjoyed both! We both ordered filet mignon and added on the truffle mac 'n cheese, fingerling potatoes, and brussel sprouts as our sides. The filet mignon was cooked to perfection. Medium rare, just how I like it! It was a touch on the salty side in terms of seasoning, but still delicious! The sides were all quite good. My favorite was probably the truffle mac 'n cheese. It was cheesy and truffle-y and an excellent addition to the meal. The brussel sprouts had amazing flavor and the fingerling potatoes were perfectly smoky. The sauce that the potatoes sat on was also tasty. For dessert we ordered the blueberry cheesecake. It was DELISH. I could not believe that I could eat another bite after the meal, but ya know, it was my birthday and I tend to develop additional stomach space for dessert. This is the second time dining at the Monarch Chophouse and I was even more blown away this time. The food is perfection but the service is what makes it my favorite place to dine. I noted my husband's birthday when making the reservation and we had fresh rose petals on our table and a complimentary glass of champagne to start the experience. Chris was our server and he made the perfect wine suggestion and made sure everything was perfect from beginning to end. I ordered the Steak Diane again and it was amazing. I love seeing it prepared tableside. We now plan on making the drive up the hill just for the dining experience. Out of every review I've done this would be my strongest recommendation! Didn't make a reservation to try this restaurant but we came since he likes steak and they also have seafood. The bar area had seats so we sat at the bar. There's also a lounge area to have appetizers at and dinner if you think you want to. Small tables though. Liz, Tyler and Tristan were out servers. They were busy but personable. I selected the Chilean sea bass and he chose the New York strip loin. We were given a small appetizer which was the chef's selection and it was delish. The small bite packed a flavorful taste. The surroundings were modern and cool. I love the vibe. The Chilean sea bass was delish. So smooth and not over cooked. The steak was soft and tender. I definitely recommend this place. Yesterday, my wife and I decided to get out of town for a date night and chose Blackhawk for some light gambling and dinner. On our way up, we started getting hungry and decided to try the Monarch Casino, as we'd never been there before. The parking lot was packed, and we only found a few open spots on the top level. After parking, we looked for a place to eat. Most restaurants had a 45-minute wait--except for the Monarch Chophouse, where we were seated immediately at the bar. The digital menus were like oversized iPads--bright, modern, and easy to read. The food itself was excellent, which made the experience even more frustrating. The biggest issue was the excessive wait between courses. I understand busy nights, but the lack of follow-up or communication from the staff about our order was disappointing. It felt like there was no effort made to check in with the kitchen or keep us updated. We've dined at other Chophouses and had great experiences, but this wasn't up to the standard we've come to expect. Do better Monarch Chophouse. read more

Date Night, Special Occasions, Birthdays... Highly Recommend! I came here for my 30th birthday with a few girlfriends. I made the reservation a day prior and I'm glad I did as it was quite full. This is the type of restaurant where you can dress up or be semi casual. The drink options were great, I had a lovely martini and my friend had a delicious mocktail. Our waiter was great, I wish I had remembered his name. He gave good suggestions and was friendly and personable. The food was amazing - some of the best food I have had in Colorado and hands down the best Bone Marrow I have had in the state. The Bison was very interesting great flavor however I am not sure the texture is for me. My favorites were the mac and cheese, brussels sprouts and bone marrow. The bread they bring to the table also hits the spot. The price is what you expect, I think we paid around 80/90 per person after tip. Very fair considering the quality of the food. We found a new favorite steakhouse! Unexpectedly, this is a better meal and experience than Shanahan's or Del Frisco's. Everything about this meal was perfect. The steak was reasonably priced, and the portions all generous. The staff was incredibly attentive and nice. Chris was amazing - he gave us great suggestions, such as splitting a Caesar and the French onion soup, so we could try both. There were little extra touches, like amuse bouche servings, little chocolates after dinner, and a to-go bag of carrot cake. It's a beautiful restaurant and isn't too big. It wasn't noisy at all until a particularly loud table was seated next to us, but under normal circumstances, it would be perfectly quiet. There are a ton of cool options, like a lot of table side dishes. And every bit of food was phenomenal. Steaks were cooked perfectly, the sides were delicious, the bread was delicious, and the dessert was (chocolate indulgence) was creative and fun. What an outstanding experience. Visited the Monarch Chophouse with another couple to celebrate my wife's birthday. The service was outstanding, led by Eric our waiter. We enjoyed the Caesar salad (A) made table side, and House Salad (A). Followed by the filet mignon, sea bass and 22oz bone-in ribeye. All A's and cooked perfectly. I would put this steakhouse over Del Frisco's, Fleming's, or any others in Denver. A very solid wine list with recommendations by the Sommelier that were spot-on. We were so full by the excellent meal that we couldn't enjoy any dessert. Regardless, they brought out truffles to close the meal, and some take-home mini banana breads. What a nice touch...This will easily be a repeat favorite spot. Must try! read more

First impressions were a little off. Tried to get a table earlier than our reservation- hostess was rude. Then get a text, table is ready 20 minutes before our reservation so we return to wait 10 minutes while they are getting the table ready. But after that, service was impeccable. A couple of weeks ago was my probably 6th visit to this restaurant, going back to 2021. Between this and the prior visit I hate to say I've noticed a drop in quality of the steaks. This last time the steak (NY Strip) was not very tender, maybe somewhere between prime and choice, but not unquestionably prime as early visits were. The meat was largely medium rare but on the over side and the seasoning was lacking some salt. We also ordered some oysters and they were just "ok", and didn't seem very fresh. Not sure what was up with the service, since this was a mid-week visit and it wasn't quite as busy as on the weekend, but we were there for about 2:30. Not because we're slow but because the food took inordinately long to arrive. We did also have to wait 10 mins to be seated, as the front desk seemed disorganized (polite but disorganized). I know there's not really and competition for fine dining in Black Hawk, so not sure what to do next visit. I hope the Chophouse steps up their game, because what was, during 2021-2023, 5 stars all the way, has sadly slid into just-above-average. With the price considered, I call the last visit just average. read more

We started with the lobster bisque which was the highlight of the meal and the Caesar prepared tableside. Cool presentation, below average salad. We did the tomahawk steaks for two which were very good but not that memorable. Kind of the theme for the night. The mac n cheese (with lobster added) was a great side and highly recommended. The Chophouse is our favorite place to celebrate birthdays, anniversaries and other notable events. The food is always perfect and the service is better than impeccable. Last night, from the moment the hostess greeted us to the time we left, we felt welcome. Service: we *always* ask for Eric. He has been there for years. He is very personable and he knows the menu inside and out. You can absolutely trust his wine and food recommendations. The support staff, from the hostess to the bus staff, is equally wonderful. They're friendly without hovering. They unobtrusively keep your water glasses and bread basket full and the table clear. They go out of their way to make sure all have the best dinner experience possible. Last night, Eric and the team handled our small celebration for my husband's birthday and a party of twenty or so simultaneously. He did it so smoothly, along with the rest of the team, that everyone had a great time. Food: last night, we started with the kusshi oysters from Deep Bay, British Columbia. They were dramatically presented on a bed of dry ice, which was fun. Perfectly chilled, they were accompanied by horseradish, lemon and a tasty cucumber mignonette. My husband had the lamb - generous serving, perfectly prepared, with a mint/pistachio crust with red wine reduction. The crust enhanced the flavor of the meat without overwhelming it. I had the New York strip - a thick cut of beef that was so tender I could cut with my butter knife. We added asparagus, juicy and flavorful in a bagna cauda sauce, generously dusted with parmesan cheese. Eric recommended the Mt Brave wine, which was exactly what I described I wanted - fruit forward, good mouth feel, big flavor. We skipped dessert this time and took a doggie bag home. The food may sound highbrow, but the menu is so well thought out that everything works together. The dining experience is also so relaxing. The combination is challenging for any restaurant to pull off, but the Chophouse staff make it look easy. The Chophouse will continue to be where we celebrate special occasions. My husband and I were visiting Monarch and thought we'd go for a steak over the casino's more casual dining establishments, and my expectations were absolutely exceeded. I was not expecting this quality of food and service. We arrived late, about an hour before closing, on a Saturday night. We had no problem getting a table for two, but it was still quite busy, so I'd recommend a reservation. There is no dress code, and we were fine in jeans; however, I felt very underdressed and I would say a vast majority of patrons were dressed very nice (not black-tie level but dressed for a night on the town; i.e., slacks and button-up shirts and dresses). The ambience is great; the décor is very modern and upscale. Because it's dark, the menus light up, which is cool. We took our server's recommendation and started with the bison carpaccio, which was excellent. We shared a filet, which came with chive potatoes and mushrooms. It was still a good amount to share, but you may want your own or split a larger steak. We also were torn on the sides, so we got the baked potato and truffle mac-n-cheese. Both were great, but given the steak comes with potatoes, it was too much starch, and I would get a veggie side or salad next time. We didn't finish everything and were both stuffed. All the food was excellent. We are new to Colorado, but this was definitely the best steak I've had here thus far, and is definitely in my lifetime top 10, and I've had A LOT of good steaks (I'm from Nebraska)! As a bonus, we earned the price of our meal on the tables downstairs, but I don't necessarily recommend that! This is just a lovely high-end establishment with delicious food and stellar service. You'll pay a little more for the experience, but if you have a special occasion to celebrate or just want to treat yourself, you'd do well to choose this place. Yes, it's in a casino, but the environment of the Chophouse is a world away from the bluster, noise, and opulence of the casino area. It's tucked away in a corner of the third floor, in its own little room. The colors are muted, the music tends toward jazzy, and the decor is pleasant and inviting. We made a reservation and had dinner. My husband enjoyed the New York Strip and I had the perfectly prepared trout. The sides are a la carte, but they are quite substantial and easily shared. Our appetizer was a generously portioned cheese platter that we paired with some prosecco. Justin was our server and he couldn't have done a better job. After dinner, we moved to the lounge area for some drinks. We had a nice socially distanced conversation with some other folks in the area and the bartender, Tyler, provided stellar service and well prepared drinks. Just a great experience overall. We live in Black Hawk, the same town as the Chophouse, but about 10 miles away in a rural mountain area. It's special to have service and food of this quality so nearby. We'll be back.
