I'm not gonna lie, I used to be a very huge fan of the Waffle Lab. I'm a huge fan of waffles and I enjoyed the taste of theirs and the variety in the menu. This morning I went over to the Waffle Lab hankering for a waffle only to find out that it has been rebranded to just the lab. So lame. Wednesday is half priced for students = 2 stars. Yep, waffle in the name and they can't even cook that! Ordered the signature waffle and chicken. Waffle was mushy and the chicken was ok. The gravy poured on top seemed to come from a can and was tepid. Service was akin to walking into a McDonalds - all business and no greeting. Music BLARING over the house-speakers were filled with inappropriate stuff (we are no prudes; but I'm not keen on listening to FBombs, female genitalia, and like crass words while I try and have a conversation. Chicken and waffles is a dangerous combination, as it so brazenly combines sweet and savory flavors. Thankfully, the waffle Lab served up the best chicken and waffles I have ever had. The waffle was huge and fresh, the chicken tenders well spiced, and the sausage gravy was chock full of sausage bits. It was served with real maple syrup on the side, allowing one to balance the sweetness according to taste. I didn't take out any of their waffle donuts, but their waffle recipe is so good that you can't miss. The ambience is totally college student hangout, but don't let that stop you. Though, I would say this place is on the pricier end as the portion sizes and amount of toppings that go into each waffle don't justify the price very well. Save yourself and your money. It took one bite to figure out why there was not a line at a place called The Waffle Lab at 11:30am on Sunday. We were sure our waffles were made yesterday. They came out very hard and cold. The "thick cut bacon" on the Maple Bliss was an x made out of two halves of thin, undercooked bacon and there is not a chance that the syrup is actual maple syrup. Heavily diluted if it is. I am always bewildered by places that serve terrible fries. The waffle fries were the kind with the coating that creates the fake crunch. We always order fries to share and I don't think we leave a fry behind even if they are "not that great" fries. Today, we did. We aren't sure how the place is still in business and can only think it taste good with a really bad college hangover. I love a good brunch so I was excited to try it. Not a single employee was wearing a mask in Boulder where it's mandated. Most of the silverware still had food crusted on it. I can maybe understand waiting over half an hour for a burnt grilled cheese when most places are understaffed, but workers not complying with mask mandates and literally Not Washing Dishes in the middle of a pandemic is...yikes. read more

Waffle Lab was a dining experience like no other. We got the classic and the chicken and waffles and LET ME TELL YOU.... SOOOO GOOD. 10/10 would recommend. The waffles were fluffy, held up against the syrup and gravy and never became soggy. Waffle Lab had everything I wanted in a waffle. read more

Such an amazing staff with even better food (if that's even possible)! You walk in and the first thing you're greeted with is the smell from the waffle makers. AMAZING! I was SO disappointed coming here. Heard great things but did not live up to hype at all. My boyfriend got the chicken and waffles which was ok. I got the flatiron and it sucked so much- the worst breakfast I've had in a while. Jalapeños were not even grilled the cheese was not melted tomatoes were not ripe. I could go on. Do not waste 14 dollars on a meal here. Need more options and better food. read more
