The Sink is a Boulder landmark and the city’s oldest restaurant, serving locals, students, alumni, and visitors since 1923. Located on The Hill near the University of Colorado Boulder, we’re famous for some of the best pizza and burgers in Boulder, including our Colorado-style pizza served with honey and the iconic Sinkburger, consistently voted among Boulder’s best burgers.
Our menu also features hand-crafted sandwiches, fresh salads, vegetarian dishes, gluten-free pizza, and gluten-free buns. The Sink boasts 18 local beers on tap, Colorado spirits, craft cocktails, mocktails, and hand-spun milkshakes. Most bar drinks are half off during Boulder’s Best Happy Hour.
But The Sink is more than a restaurant. It’s a piece of Boulder history. Every inch of our walls is covered with iconic artwork, and our ceilings are filled with signatures from guests spanning generations.

History
Established in 1923.
The Sink is Boulder's oldest restaurant near CU Boulder. Originally a European-style restaurant named "Summer's Sunken Gardens" featuring a sunken fountain that patrons called "The Sink." The Pudliks purchased it in 1949, the name was officially changed, and the walls started filling with artist Mike Dormier's paintings. In 1955, the Sinkburger was born. Between 1974 and 1989, owner Herbie Kauvar covered the walls with pineboard and rebranded the restaurant as Herbie's Deli. In 1989, The Sink was reborn. In 1992, the Heinritz brothers purchased the restaurant. Updates to the full bar, tap system, and restaurant brought back artist Llloyd Kavich to paint the walls. We continue serving famous Sinkburgers and fresh, scratch-made food and drinks.
In 2011, Diners, Drive-Ins and Dives featured The Sink. In April 2012, President Barack Obama stopped by for pizza. Since then, The Sink has become a favorite for students, alumni, locals, visitors, and the occasional celebrity.
Meet the Business Owner: Chris, Mark, Tell H.
Brothers Chris and Mark Heinritz purchased The Sink in 1992 with little restaurant experience but a deep respect for one of Boulder’s most beloved institutions. More than three decades later, they remain the longest-serving owners in the restaurant’s history.
They often describe themselves as caretakers of more than 100 years of memories and traditions. Their goal has always been to preserve what makes The Sink unique while ensuring it remains relevant for future generations.
Under their leadership, The Sink underwent major renovations, introduced modern technology, expanded its food & beverage program, and improved the guest experience while maintaining its historic character. The famous artwork, signatures, Sinkburgers, and quirky atmosphere remain at the heart of The Sink.
Today, Chris, Mark, and new partner Tell Jones continue to invest in sustainability, community partnerships, and the long-term preservation of The Sink so future generations can create memories of their own.
