We visited The Copper Grouse for breakfast and dinner multiple times throughout our stay in Manchester. Our key takeaway - very worth the higher cost for delicious food! For breakfast we enjoyed a bagel with lox, the breakfast sandwich and the eggs Benedict which we would order all again (in fact we did haha). For dinner we had a few wings and salad one evening and a more formal dinner for Valentine's Day. We had the lobster ravioli and the Braised Short Ribs which were absolutely fantastic. What made the experience that much better was our waitress Kate. We requested to have her a second night because of how fun, helpful and accommodating she was to us. On Valentine's Day a few things that could have put a damper on our evening were handled very professionally and we really appreciated it. We stayed in Vermont for the weekend and while I wanted to stay at the Taconic it was a little too pricey for what I had in mind. However, we made it to their restaurant and it did not disappoint! The Copper Grouse had a very enticing menu so I was excited for this dinner. We started with the beef tartare app which was SO good that I cannot stop talking about it. I would typically go for a tuna tartare but this was excellent! For dinner, I ordered the Garganelli pasta dish. It was light and creamy. And ended the meal with one of their dessert specials that had white chocolate raspberry ice cream with strawberries - it was delightful. The restaurant itself was pretty cozy. Lots of high top and standard table seating along with a bar. They offered outdoor seating on the porch as well. There was also a fire pit set up outside with plenty of Adirondack chairs - I saw people drinking by the fire but I'm not sure if food is served in that area. Our server, Molly, was awesome!! Next time we are in Manchester, I plan to stay here - it's close enough to walk to town and the hotel / restaurant are highly recommended! read more

While staying at the Taconic, we enjoyed breakfast 2 mornings and had one dinner at the Copper Grouse. So this review will cover all! If the weather permits, sit on their beautiful front porch with views of the Green Mountains. All of our servers were exceptional. Extremely polite and friendly. Regarding the breakfasts-the cucumber gazpacho was one of the most refreshing, delightful soups I have ever had! It's such a great blend with the sweetness of the apples combined with the saltiness of the celery and the refreshing taste of cucumbers. Absolutely loved this. We were bummed to hear it was not available the next day but we got to try the tomatoe gazpacho instead, which was almost as perfect as the cucumber. I loved that it didn't have an acidic taste that many gazpachos can take on. It was smooth and creamy. I had the duck confit hash which was phenomenal. My husband had the Croque Madam which was a huge portion. He wound up bringing half to our room to be eaten later. We also tried a side of their chicken and cheese. The next day, knowing how large the portions were, we went with eggs over spinach with a Bernaise sauce on top. Only to find out it also came with English muffins so we were pleasantly full again. For dinner my husband tried the salt & vinegar martini. He liked it but only enough for one drink and then switched over to a traditional martini. Kind of like eating salt and vinegar chips-you can't have too many. For dinner we started with the Vermont cheese board which I was surprised did not have more selections of cheeses. It seemed very basic in this charcuterie era that we are in right now. The only accompaniment was whole grain mustard. There was no 'wow' to the board. For entrees, my husband had an amazing pork chop with Brussel sprouts It was sooo good and so Vermont! I had the blackened sea bass with tomato and fennel broth. However, they brought me out the cod in the coconut broth by mistake. They told me I could enjoy the cod until they brought out my correct dish, which of course, i did! It was delicious and I was almost sad to see it go when my sea bass came out. But the sea bass was equally good although $10 more in price. For dessert we had a blueberry cobbler that was just ok-kind of dry. Overall we had a great experience at the Copper Grouse and will return if back in Manchester! read more

Staying at the TACONIC Hotel and had breakfast here. Huge portions -- French toast with berries and whipped cream for my partner and yogurt with berries and granola for me. Returned to Manchester Center and of course returned to the Copper Grouse. It's amazing as usual. Chef Michael is doing some great things. We had the Spring menu featuring old favorites and some great seafood options. In a couple of weeks the Summer menu starts which is a big incentive to return soon. I'm addicted to wings they are big , fresh, moist and delicious. The fluke ceviche was outstanding ! The Cod was so good my is going to have it again tonight. Overall, rather disappointing for the price. We started with the brussells sprouts, many of which were cut too large, undercooked and not particularly crispy. The bacon mixed in with them was very tasty, but there was not a lot of it. I had the short ribs, which were well prepared, and the sauce was tasty. But the potatoes and carrots were undercooked and the carrots were woody and tasteless. The wagyu burger was reasonably tasty, but the truffle fries were overdosed with acrid truffle oil. Our server was mechanically chirpy and rattled off a well-rehearsed bit about the menu, so quickly I could barely follow her. She then disappeared altogether for about 10 minues as we were finishing and so we waited an unreasonable amount of time for the check. There was nothing special about the dining area - clean, not too loud, reasonably comfortable. We were super hungry, and nothing was so bad as to be inedible. Traveling through the area and meeting up with friends for dinner. Thanks to yelp, we stumbled upon this restaurant. I'm so glad we did. Our dining experience here was amazing. For starters we had the charcuterie board which comes with everything a beautiful smattering of cheeses, cut meats, artisanal crackers little pot of honey, dipping mustard, an assortment of pickled items. I ordered the PEI mussels - omg, the sauce was amazing, do get a basket of bread to dip into the sauce! The dish is perfect with a separate basket on the side for 2 pieces of toast. Luckily my friend taught me how to eat these mussels using the empty shell. The waitress recommended the soup of the day which was carrot soup, roasted brussel sprouts, and fried cauliflower. We ordered all of them and they were beautifully presented and delicious. We also ordered the mac n cheese, additional basket of gluten free bread, and for dessert, the maple creme brulee. Chef Dan killed it tonight with our plant based meal. He literally went foraging with his son that morning. This establishments reads the reservation comments which is where we notated our plant-based diet). Copper Grouse has really made a special effort for us this past year. We have dined here since they opened years ago and staff has always graciously accommodated our vegan diets. I do feel like they have stepped up their game by working together as a team and wowing customers. This cozy spot is located inside the Kimpton Taconic hotel and has ample parking. You definitely want to make a reservation. The bar is well curated and has many local beers, wines, and spirits. The food is fresh and plentiful. There truly is something for everyone. This review is only for the food at Copper Grouse. We are Vermonters and have on and off been coming to the Taconic since it opened before pandemic. The Grouse has had its ups and downs--it was really great before the pandemic and then fell far down during and when it was fully back up in 2022, it was somewhat improved. Then they hired a new chef from France. After hearing many folks' experience and our own direct experience of several meals there, it's sad to say the food is WAY below standards for the area. The Silver Fork, The Reluctant Panther, the Dorset Inn have dinner offerings far above this restaurant. We've tried most of the items on their current (2025) menu. The short ribs and pork were over-cooked and dry. The pasta offerings like Risotto just tasted too weird to eat. The chicken was horrible-tasteless and we sent it back. The Garganelli--squash and brusselsprouts were undercooked and we couldnt even eat it. SIde dishes like the vegitables and potatoes were undercooked. The "To Share" items were outrageously expensive (a "cheese board for almost $30!!) and the salmon tartare was horrible and crispy chicken wings were dry and overcooked. Honestly, the only decent things on the menu were the Wagyu burger for $26!, the fries, the soups, and the a couple of fish dishes. The salmon was decent. It's difficult to understand how a restaurant in one of Manchester's great hotels such as the Taconic can be so poor. If you look at the review ratings for all the other restaurants, this one really sags below. That said, the service is great, the bartenders wonderful and the drink offerings good. But the food is expensive and really poor...I have heard this all from many people I know locally as well as those staying at the Taconic. We just hope the new chef coming in revamps the entire menu and starts offering a far better menu!! read more

Went for thanksgiving dinner, $95 a person for a three course pre fix menu. First course between beet salad, kale salad or butternut squash soup (soup was delicious). Second was either prime rib (tasty) w mashed potatoes (bland) demi glace and green beans (tasty) OR turkey (just meh) mashed potatoes/stuffing/carrots (all needed seasoning) and cranberry sauce (ok). Final was pecan pie or apple cobbler (which no one told us there were nuts in the crumble...could've been bad for someone if they had allergies) Not worth the price. Also, had 2 kids with us that had no other options (so, $95 per person for them too) Server was nice but slow. We went for drinks and sat at the bar. We were immediately greeted by a young, but very friendly bartender. We mentioned we were new to the area and were wondering what VT local beers/ciders to try. He wasted no time and began talking to us enthusiastically about the beers and ciders that he liked. He helped us choose some and we were not disappointed. This guy was exactly what a good bartender is about. He was friendly and fun. We ended up chatting the whole night with him and it felt like talking to a friend. A great first impression. We decided to put him cocktail making to the test as we ordered a Mo hedo (name of the cocktail) and their signature drink (had bourbon among other ingredients). He did not disappoint. You could tell he knew his craft. We also decided to try the sticky toffee cake and it was sublime. Perfectly done. After all that, we decided to go back the next night for some more food and to hangout. We sat at the bar again and the same bartender was there. We chatted with him and the other bartender and had just as good of a time the night before. We tried some new beers. All amazing local stuff. We also tried the Mac and cheese which seemed to be a speciality. After tasting it, it definitely was. Perfectly done with local VT cheese. We also had the Tabbouleh which was made with locally sourced food. It was refreshing and delicious. We got the sticky toffee pudding again and loved it just as much. My husband and I stayed in the Taconic for a mini anniversary getaway, and The Cooper Grouse became our "end the evening" spot, not just for the convenience of it being in our hotel, but also for the amazing cocktail menu. The vibe and decor of The Copper Grouse matches that of the Taconic - warm, inviting, with plenty of nooks and places to sit. We had our eyes on the highly coveted couch in front of the fireplace each night of our stay, because it was coziness vibes like none other. The cocktail and wine menu is vast, and if you're staying on the hotel, you can grab a glass and take it back to your room or somewhere on the property to enjoy, which is a nice touch and benefit, especially if the bar is crowded. As far as drinks go - I had a few glasses of rose, that was delicious, and then moved on to cocktails once I discovered the Death in the Afternoon (absinthe and Prosecco). I didn't see the green fairy, but did get drunk enough that I took a picture of our receipt, as if I was on a work trip and needed to catalog my expenses. On our last night in Manchester, we secured that coveted fireplace spot, so I was about holding that spot down... and consuming three absinthe/Prosecco cocktails. Seriously though, if you're a licorice fan, get the cocktail - it's absolutely delicious. My husband stayed tried and true to the Old Fashioned, which was made beautifully (and the Old Fashioned consumption prompted him to order the pretzel bites, which are cooked in duck fat - he was in absolute bliss). We also hit The Copper Grouse for brunch before hiking to Lye Brook Falls. It was a great decision, and we fueled up on coffees, then I had the Carrot Ginger juice with avocado toast (without the poached egg), and my husband ordered the breakfast plate (two eggs any style, choice of meat and toast, and breakfast potatoes). The food was great and came out quickly, and the service was also awesome. All in all, having an awesome in-hotel restaurant/bar is always an added bonus to either start or end a day. And until we return to Manchester, I will be dreaming of Death in the Afternoon (insert emoji with heart eyes). read more

Better than average hotel restaurant fare for prices you would expect at a four star hotel. The roast chicken with gnocchi was cooked perfectly, with house made gnocchi in a delicious jus. Food temperature was perfect. My wife's crab risotto was delicious. Excellent beverages as well, utilizing local ingredients. Service was also great. Nice ambiance too. read more

(Side note, ordering an $80 entree must be the norm at this restaurant since the chef showered the table next to us with attention & desserts and didn't once look in our direction to ask us how our dinner was...we were the ones who ordered the $80 dinner). While on our Vermont President's week vacation, I made reservations through OpenTable for this spot on a Wednesday evening for a party of 5. Was a bit nervous due to some shaky reviews, but thankfully, all my fears were put to rest very, very quickly upon arrival. This restaurant is inside the very nice and dog friendly Taconic Hotel. We weren't guests of the hotel, but rather had rented a house a block away. It was so cool walking up to the front entrance of the hotel and seeing that awesome firepit all lit up. After my kids petted a few dogs that we're hanging out in the beautiful hotel lobby / fireplace area, we checked in with the front desk and let them know we had a reservation. We did have to fill out some contact tracing information, but so what...rules are rules and it's no big deal. We got seated at a large high top table in the middle left of the restaurant. The table was nice & spacious for our group. Shortly thereafter, our server, John came up and introduced himself. John was a great server. He's one of those types of servers who knows pretty much everything about the restaurant, the food, etc, and provides a plethora of recommendations, and can almost finish your sentences when placing an order. He was a superb server and his service was well above average. In terms of the food, everything we ordered was delicious. I went crazy and go the Vermont Waygu Burger with bacon. It certainly ranked up there with one of the best burgers I've ever had. The rest of my family had no complaints with their meals. My sister got the salmon, which she thoroughly enjoyed. My wife got the Copper Grouse Burger, and while hers was delicious, my Waygu burger blew it away!! My kids got some things off the kids menu and they were delicious as well. They also have the famous Heady Topper beer here, so I enjoyed a couple of those with dinner. The manager came over and checked on us to make sure we were being well taken care of and that the food was as expected. I like that. For dessert my kids got the delicious chocolate chip cookies. We also go the chocolate trifle, which was awesome. So in my book, terrific service paired with delicious food translates to a wonderful dining experience. A great time was had by all. What an utter disappointment!!! Website looked good, the person on the phone sounded professional. Even the actual space looked nice. But the food? Wow. How can you charge 30$ for a small steak sandwich where the meat is 40% fat and gristle and has zero flavor? Mac and cheese that is clumpy. Kids menu chicken fingers was disgusting processed chicken which my daughter spat out(and so did I after trying some). I've eaten in worse hotel restaurants. But this is not more than an overpriced 2 star eatery. read more

Called the restaurant to inquire then made complaint to the manager who seemed to lack any concern of making future accommodations to diversify the menu. Considering that most restaurants in this day and age manage to have menus that have at least one meal that is vegan friendly - especially for a restaurant that is located in a hotel it is truly disappointing. This hotel restaurant has some very tasty dishes. The pork shank is very good (& large!). The kale salad is also quite nice, refreshing with just the right amount of cheese & dressing. Adding shrimp to it was perfection. The salmon came a little crisp on the outside but somewhat sushi-like in the center, but it was good nonetheless. We do recommend the beat salad, which we sampled (not pictured). The environment was dress casual and somewhere between family friendly and cottage romantic. This was my 3rd/4th time at copper grouse and while the food is always excellent and the atmosphere is lovely, we were disappointed with our service. Now I get during covid things could be slower or off but it was beyond that. I decided on 3/5 stars bc our other experiences were good here. If this was my only experience it would have been 1 or 2/5. My mom ordered tea and her hot water was forgotten, not a big deal but when she remembered to bring it she said "I hope this is still hot" then walked away. It was not still hot and so my mom was left there with no drink. She decided to just switch to coffee to make things easier but it was awhile before the waitress came back. The waitress didn't write anything down which is fine except there were a lot of mistakes. My mom asked for Canadian bacon and got regular bacon; she asked for no whipped cream on her French toast and it came with it (bothers her stomach otherwise she would have taken it off and we had a long car drive ahead of us); toast for one of our friends was forgotten; my sister's omelet didn't come with what she asked for so she had it remade and it still was incorrect. Lastly, and the waitress wouldn't have known this but my dad passed away a few months ago and this was a trip to get away for all of us with the kids and a family friend. She kept referring to our family friend as "dad" which again isn't a big deal but he wasn't our dad and it was a bit odd to assume that. And again no way for her to know that but just a little odd to be saying that as well. In the end, nothing was taken off our bill. In fact she showed us the bill then said oh I forgot to add the drinks on, so she went back and added them. Just a bit disappointed in the experience and the end to our weekend. read more

Everything from the service to the food was stellar! Molly, our server, was personable, provided great recommendations and was so appropriately attentive. The cauliflower appetizer was incredible. The 3 of us couldn't decide on an entree because they all came so highly recommended. We picked the brick chicken, the scallops and the venison- and shared! It was heaven! The scallops had a vanilla parsnip sauce that was spectacular. The venison had a blueberry sauce and the brick chicken was full of spices and so juicy and perfect.
