Not sure the owners know how much business they are actually turning away since it's not apparent that once someone has been turned away over an hour before their end of day never bother to return. Also now that tips aren't technically taxed I would think employees would like a full day of work. Perhaps they need 2 shifts of wait staff and/or open for breakfast at 8:00am rather than 7:00. I moved to Manchester 3 yrs ago and have been baffled by the shortage of people willing to work full time or employers willing to add part-time workers on their busy days (Friday through Monday) There must be a way to keep staff and accommodate early afternoon brunch (10-2pm) diners. Manchester is an odd duck of a town - more New England than upstate NY or E. Pennsylvania. (Daughters of the American Revolution) I have friends here who had relatives come over on the Mayflower - it was obviously a VERY crowded boat.
