This is by far the best restaurant in Pullman. Their menu is small, and changes seasonally. I had a steak that was really good, and the side dish of potato salad with mustard seeds was outstanding. Their desserts are good as well. Their food is better than Swilly's, and is as good as Nectar (over in Moscow). read more

It isn't fair to say we went to the Palouse from Seattle just to eat at Black Cypress but that was what we were both looking forward to. It was Mother's weekend at WSU and the place was much busier than it had been the first time we visited. The noise level, however, was the only indicator of the crowd as the wait times, attention from the servers, quality of preparation and presentation were again outstanding. Serving here must be the plum job in Pullman and they can pick and choose their employees. We had all new servers this time and continued the trend of extensive knowledge base of the menu and wine list with not a hint of hesitancy about questions or willingness to give us special attention when asked for. Looking around, that seemed the norm, so 5 stars there. We started with the Daily Bread [that was a given] and got 4 x 1/4 inch thick, crisped, Italian bread slices with 1 oz. baked pumpkin paste and an ounce of tart but creamy goat cheese. I couldn't have come up with that combo with a 6 month head start but they complimented each other well. We paired those with wines by the glass after advice from our server. We followed with the clams again and nothing has changed including their excellence. Again we got 16 fresh steamers, with none that weren't open, in white wine with bacon and kale accents and soft bread wedges. Someone is paying attention to detail here. Next we got the daily fish, 6 oz. of a lightly poached halibut with fresh tomato and onion salsa and jasmine rice and the daily pork, a 14 oz. chop that was light pink at the bone and great flavor. It was plated with 1/2 cup creamy mash potatoes and a piquant fine sliced cabbage slaw. Desserts were a 2 inch cube of bread pudding with a single scoop of huckleberry ice-cream and a lemon pound cake that was dense enough to seem like a tort with a tart, fresh lemon, cream and fresh raspberries. The Bread pudding was also very compact in texture and was accompanied by a rich caramel sauce. Neither seemed too heavy and both would have been diminished without the pairings of the sauces. 5 stars for the food. As we reviewed our bill we noticed a "good customer discount" of the price of a glass of premium wine. Can I give 6 stars? read more

Who would of thought that in Pullman Washington there would be such a gem. I'm now sold on this small college town. The Black Cypress was spectacular! The service was amazing and the food unbelievable. I started with a simple salad of beets and radish accented with pistachios blue cheese and parsley , along with a nice Washington Cabernet. I sat at the bar and witnessed an amazing staff do work. Very professional and cordial. If only I could drink the cocktails the bartenders were producing. Then my perfectly simple lamb chops arrived with kale and garbanzo. The chops were tender and perfectly cooked, I like mine medium. Simplicity at its best! The bartender recommended the bread pudding for dessert, although I was already in gastro heaven I had to go for the total experience. The bread pudding itself was actually light not too sweet and the caramel sauce and the huckleberry ice cream did justice to the entire presentation. No americano/ espresso here but It didn't matter. Hands down the best place to eat and drink in Pullman. The drinks are on par with anything you can find in Seattle, the food is amazing and the atmosphere on point. But it gets even better. My wife did not enjoy her first drink (she tried something unusual) and not only did the bartender go above and beyond the call of duty but they did not charge her for the second drink. This was my and my husband's first time eating at the Black Cypress. We made a reservation for 7 pm and got there about 10 minutes before our reservation and they seated us, we really expected to have to wait until 7, especially since they were packed. The Hostess was very pleasant. The atmosphere seemed to be jubilant, the lighting was dim, but nice and the tea candles on the table added a nice ambiance. Our waitress, I believe her name was Sailee, was very professional and was so very nice. We ordered the Snake River Farms Kurobuta Pork Chop($32) and the Pastitsio($18). Quite spendy for us, but it being my husband's birthday, we splurged and we're so happy we did it here. The Pork chop was a very good size and was about 2 inches thick, it came with potatoes puree and a slaw. It was a nice sized dish. The Pastitsio came in an oblong ramekin, it was a Baked Penne with Greek-style meat sauce and topped with dollops of Bechamel. Both dishes were very, very delightful! The pork chop was very moist and seasoned very nicely, the pureed potatoes were tasty and the cabbage slaw with carrots was lightly tossed with some type of light vinegarette, even my husband who does not like or eat cabbage loved it. The dollops of bechamel were lightly golden brown and added a lovely creaminess to the penne and meat sauce, it was baked to perfection. Compliments to the chef, definitely! These words do not do these dishes justice, you certainly have to try them for yourself. Besides the food, the service was very outstanding! We both agreed that we have never had such great service at any other restaurant, ever (and that is no exaggeration), it was amazing how well all of these employees worked together, they moved with a purpose, they seemed to like their jobs and seemed to enjoy helping their customers, they didn't act fake and didn't act like they were trying hard for a tip. Also, they didn't act like they had a territory, at all other restaurants we've been to, if we asked for a refill or extra napkins etc. from someone other than our server they would tell us that they would let our server know and it took awhile for someone to get back to us. At the Black Cypress, we had other waiters/waitresses, bartenders, and busboys coming up to our table asking us how our food was tasting, if we needed a refill, if we needed anything else, or asking if we needed any dishes taken away, etc., none of them ever acted like it wasn't their job, they just did what they felt they needed to, to make our experience amazing and help their fellow employees, it was surely a breath of fresh air. The kitchen staff seemed very happy, they seemed to work like a well oiled machine and seemed to enjoy working together. As we were leaving, multiple (5-6) employees, including the bartenders, made eye contact with us, waved and thanked us for coming in, this crew was busy the whole time and they still made sure their customers felt appreciated. From the time we arrived to the time we left (about an hour and 12 minutes), we had an outstanding experience, I don't know if this is how they always are (I hope it is) or if this was just a good day, but this visit made us both wish we could afford to go there again soon. The one and only negative was how loud it was in the restaurant, a lot of customers talking, laughing, dishes clanging, etc. made it hard to talk to and hear one another and the people helping us, but that doesn't change anything about our first wonderful experience at this establishment. Loved the food, the drinks, and the server we had the first night so much we came back the second day for lunch! They had super yummy craft drinks that were original and delicious. They were very good at explaining them and what they would taste like, and what they would pair well with. The food comes in a great portion and I, and everyone I was with, were full each time we left, but did not leave with to-go bags. Second night was packed, and we hadn't made a reservation so they let us sit at the waiting table and order drinks and food there. Quirky and it worked! The one thing I would say is if the special on the chalkboard is out -Take it off the chalkboard or change it- this happened the second night and the part of the item we were most excited about (and reason we ordered it) was replaced by someone we didn't really like but was fine. Prices are high for the area but quality and attention to detail is there for all dishes (with the exception of the cheese plate). Additional comment- Wrote a review and initially gave 3 stars due to raised prices and a terrible excuse of a cheese place. However was contacted by the Owner/ Manager about all of the concerns voiced in original review and not only was he methodical and well spoken in his answer, he showed a great care and honest concern over the product he was delivering. After hearing about the James Beard nomination, we were looking forward to our time at The Black Cypress while visiting our son in Pullman. The atmosphere was lovely. The menu offered a good number of options with solid wine and spirit pairings. Our server, however, forced us to order everything at one time because "they know the right timing for the meal." We tried to clarify but were met with the insistence that "this is how we do it." The "right timing" brought the starters and salads to our table at the exact same time, with entrees following shortly after, resulting in a $400 dinner finished in just over an hour. What should have been a lovely experience with good company and excellent food in a thoughtful environment, was cheapened into feeling like we were rushed through a dining hall. Meanwhile, we watched as our fellow diners lingered over their meals, having arrived before us and remained after we left. Such a disappointment. read more

My partner and I came here for dinner one night while we scoped out Pullman. Fancy and relaxed all at the same time. We started with the clams which were DE-LISH. We ordered the carbonara and the ribeye. When our waitress (Acey, spellcheck?) asked how everything was, I mentioned my ribeye was burnt on one side, we told her and she told the cook. She returned to say we could have a dessert for free, which we didn't deem necessary since I had still planned to eat it. (It wasn't terrible, still edible and delicious) At this point we then started to barely see our waitress and my anxiety kicked in thinking it was because I slightly complained about the food. We then had a gal who is the host? From what we were told, bring our check to which we were very confused, because we had just seen her at the bar drinking, assumingely off of the clock, but none the less, very confusing. The bartender then picked up our check which threw us off even more. We asked him if we had done something wrong, as we hadn't been talked to by our waitress at all by this point. He explained they all help each other out and if they see a check sitting they grab to help, which is totally understandable, but again, we were confused. FINALLY, Acey came back to us. We explained our concerns with everything and she sat and talked to us about it which we respected so much for her to take the time to do so. The situation she explained we completely understood and my anxiety finally calmed. She was absolutely amazing and once we move to the area and go back, we would love her as our server again! read more

UPDATED - see update at end In order to be great a restaurant needs to hit the mark in 5 categories (food, beverages, service, atmosphere, and value). This place misses the mark in several critical ways. 1. The food was OK, but not great - half a star for the food. 2. Beverages: full bar, creative cocktails, good wine and beer selection (including one gluten free beer) - one star for beverages. 3. Service is slow and not particularly helpful. We sat for way too long before we were approached (over 10 mins), specials were not mentioned, no attempt to describe the food, or help us make good selections. My bill was padded with a beer I didn't order. No star for service. 4. The atmosphere is excellent - well designed with a great vibe, top notch interior design - star earned for this. 5. Value is not good. The prices don't reflect the quality of the experience - they are already steeply priced, and on top of that they add a 10% service charge and are very clear to repeatedly tell you that it is NOT gratuity; but rather a fair wage plus up. In other words, the owner wants to pay the staff fairly, but not as part of the prices she charges. Instead she passes that obligation to the customer. This comes across like they don't actually believe in paying fair wages - they feel that is your (the customer's) responsibility. So ... be prepared to tip an obligatory 25%-35% on top of the already steep prices. This feels like nickel and dime fees the airlines have recently fallen in love with. Feels dishonest/slimy. Negative 1/2 stars for value. Update: I have updated my review and added a star back for service. I was contacted by the manager and handled in an extremely professional way. She was not defensive and sincerely thanked me for my review. She explained in detail how they had failed on each count and what they were doing to correct or adjust on each count. I was blown away by how well it was handled. I truly believe they took it to heart and will adjust across the board. I look forward to my next visit to Pullman to give them another try. Best Restaurant in all of Pullman! Our waitress, Fiona, was an absolute dream and timed all of our courses perfectly! In addition, all of the servers checked up on us and brought food/refreshed waters/etc. (The waiter who brought our cheese board & dipping sauces was so knowledgeable about everything- I just wish I could have caught his name to give him a shoutout!) But all in all, the staff was amazing! Next, the food. We had three appetizers: the dipping sauces (beet, tahini, and hummus) which came with pita bread. All of them were delicious- even if you think you don't like beets, this will change your mind! We also had the cheese plate which came with crunchy bread/chips and the cheese was accompanied with walnuts, honey, apples and jam that my companion and I decided must have been homemade- again, a 10/10! Finally, the last app was the "daily bread" and if it's going away soon, I say get over there NOW because I can't believe I ever lived my life without having ever eaten something this scrumptious! It was slices of bread with a creamy white (dill?) sauce and topped with trout. To be honest, They could have charged even more and I would have been happy to pay for that quality. Our next course was the house salad- we got it as a "transition" from the bread-based apps to the main meal but it was not your ordinary salad. On the salad was this bacon that was sent straight from heaven. Im still not convinced that it was just simply bacon and they must have done something extra to it to make it that flavorful without loosing the crunchy aspect of the meat. The dressing was a vinaigrette, a dressing I don't usually pick but paired with the apples, walnuts and cheese (and bacon!) was perfect. Finally, as our main meal we got the pomodoro pasta with meatballs topped with Parmesano reggiano- all together a perfectly lovely way to end the most satisfying meal out! I could not recommend this place enough- it's also gratuity free and so you know all of the staff are well taken care of by the amazing owner who was able to encompass every element possible creating a "perfect" restaurant. read more

Called ahead and knew the restaurant was understaffed, so we expected slow service... but there was much more than slow service. One server joked that he was still adjusting to new sanitary regulations amidst the corona virus pandemic& that he has to remember not to lick his finger to flip the pages of the menu (why would he do that at any other time??) Our server was polite and informed us that there would be rotation of servers, when our new server arrived, he introduced himself by saying "I don't know where the other guy went, but I'm your server." Our pasta came out cold and watery. The waiter did not just check on us after receiving the food so we had to find him to inform him. He was apologetic and told us that "the kitchen staff must not have reheated the pasta before sending it out" The pork on the Pasta Carbonara was dry and was tasteless. Server tried to be nice by dropping some toasted almonds in the Togo bag, but unfortunately one of us had an allergy to them. It was a nice gesture, just not well thought out. read more
