First time in Pullman and came here for a wonderful meal. Creative cocktail lists, good variety on the menu with a nice Mediterranean flare. The carbonara is rich and decadent. Lots of bacon lardons to give more depth to the pasta. Very tasty. The lamb is delicious, though the crust was a little salty for my taste. Ask for it to be medium rare + so you get the nice cool red. There are 6 lambchops served with a couscous salad and tzakiti. If you like lamb, get this. The roasted chicken is amazing. So so so good. Perfectly done with a side of kale and nice size croutons, crunchy and buttery. Ordered the dip appetizer and the pita is soft as a vessel to try 3 different dips - one is garlicky with breadcrumbs (it's more addicting than you think), feta with a roasted pepper and tzakiti. My tongue still tastes like charcoal. Food and execution AWFUL! Food had no flavor, except for the lemon that i squeezed on my charcoal fish, & my daughter's "cauliflower steak."Grocery store pasta that was clumped together, AND unedible. First, the food was good, but not terrific. Lamb chops scored highest with us; the pasta not so much. Beet salad tasty, as were the pork skewers and 3 dips. Dinner rolls as usual outstanding. It was the service that kind of ruined the evening. Our server failed to tell us until we tried to order them that they were out of two chief things on the entree menu. "I'm so sorry" was a frequent refrain. Then, she just pretty much ignored us, disappearing into the kitchen . Black Cypress is known as the nicest restaurant in town so many people come here for celebration meals, but I typically stop by for their Monday happy hour (half price appetizers 5-7pm) and the goat cheese panna cotta. My favorite item on their appetizer menu is the cheese plate. I don't like crackers so I've started ordering it with some extra apple slices instead of the crackers. The goat cheese panna cotta itself is delicious but the best part is that the seasonal sides are amazing and change very frequently. It's a positive example of a dish never being exactly the same. I've always had great service at the bar. The only complaint I've heard was from a grad student we know who ordered multiple items and didn't realize they forgot his entree until everyone at the table was almost done eating. Thankfully the group had plenty to talk about so they didn't mind it being a long dinner. Finally... the drinks. The only regret I've had was ordering a beer when they have such a fantastic cocktail menu. Cool atmosphere, good service, tasty entrees - Our first family trip to Pullman and was excited to experience the Black Cypress. Although the GPS brought us right to the door, for some reason, we still had a hard time finding the storefront. The vibe is inviting and cool, the bar is beautiful and the menu offerings speak to everyone. Hubs loved the pork chop and I enjoyed the grilled portabella. The mashed potatoes were a creamy delicious treat! The appetizer dips were ok and the cocktails were just ok, too. The service was friendly and accommodating. Had reservations for 6pm. Arrived and was promptly seated. We were 2 couples. We had 2 starters. The soy beans were so good and a huge amount to share. My husband and I shared the lamb chops, which were great. The other couple shared a steak. We all had plenty of leftovers. Staff was also very good! Would definitely recommend. read more

The cutest place in Pullman Washington! Perfect date night spot. We ordered olives for the table, and everyone enjoyed it. We devoured the pita dip in minutes, my favorite was the garlic dip! Im only in Pullman a few times a year but I always stop by Black Cypress. Food selection is phenomenal and service is amazing. The menu is pretty varied so you can get anything from steak to pasta to salad. I've had the pork chop multiple times and have no complaints. Definitely get the cheeseboard appetizer. The food at The Black Cypress continues to impress. I lived in Pullman when it first opened, and it's been wonderful to see the restaurant not only endure but grow into what it is today. It has maintained its high standards, and that's no small feat over the years. The service is consistently excellent--attentive, professional, and warm without being overbearing. Both the food and the drinks were outstanding on my most recent visit. Everything is clearly made with care and a deep understanding of flavor. It is definitely on the more expensive side, but that feels appropriate for what you're getting. This isn't the kind of place you just drop into for a casual bite. It's meant for a thoughtful, memorable meal--something you plan for and savor. One small note, and it really is a minor one: I noticed that their house-made bacon, which I've always loved, was used in larger chunks in several dishes, especially the pastas. While I'm thrilled that it's still a central ingredient, I think the flavor would come through more evenly if the bacon were chopped into smaller pieces. Same quantity, just smaller cuts. Years ago, I remember it being handled that way, and I think it gave the dishes a more balanced feel. That said, it's a personal preference, and it didn't detract much from the overall experience. All things considered, The Black Cypress remains Pullman's finest restaurant. Its commitment to quality, consistency, and creativity sets it apart, and I'm grateful it's still going strong. read more

I ordered the lasagna and it was a layered masterpiece. The meat sauce was flavorful and not overly greasy. I could taste the herbs in the tomato sauce and the ricotta was creamy and warm. We were sure the James Beard nomination The Black Cypress received just three days before would make a reservation impossible; we were wrong and SO glad we went. The team was as warm, lovely and gracious as the Hospitality nomination would indicate. We were especially impressed at how well versed everyone was on practically every detail of each menu item. Warm and inviting, we started at the bar to wait for our table and had great conversations with several of the bar team who proactively offered us three separate tastes of three wines to ensure my eventual selection was to my liking. The atmosphere is busy but relaxed and lovely--the very vibe we love that supports a nice experience. We were seated in a nice table for two and at the recommendation of the bar team, we started with the clams. Surprisingly, the clams were good sized clams and flavorful. They were nestled with huge chunks of house smoked bacon and swimming in a wine, garlic and kale broth that complimented without overwhelming the clams. Living in Seattle, we eat a LOT of clams; theses are ones to be remembered. Wow. For dinner, Hubby had the carbonara which was luscious and tasty. I had the petit filet mignon topped with foie gras, with an amazing red wine reduction, whipped potatoes and broccolini. Amazing. Rolls were freshly baked and tasted every crumb of it. We split the brownie and ice cream for dessert which is all locally sourced. The tab was surprisingly low for the level of the quality and experience. The high quality of the ingredients is evident. We observed other diners who were obviously enjoying their evening as much as we were. The food was excellent and together with a staff that clearly knows just how to make a guest feel welcome, The Black Cypress just jumped to the top of our list when we go to Pullman. Great service elevates a food experience but it's the result of a lot of hard work and a staff working together as a team. We were in pullman for Graduation ceremony and stopped at Black Cypress w/o having a reservation. We were seated within a few minutes. We LOVED the food. Our waiter was sweet. We finished the pita but had left over dips, so he got extra pita bread. He also got us an order of fresh, hot bread rolls. We ordered Gimlet Cosmo Moon Sprite Pita and dip Lamb chops Seasonal Soup Goat cheese Panna cotta ( it came with orange slices, mint n orange curd) Everything was delicious. The roasted chicken was the best I've ever had. It was juicy, flavorful and the skin was crisp. The carbonara was good a little salty for me but it wasn't for for my daughter. Our dinner plans changed last minute in Moscow so we went online and made reservations here on a whim. What a great place! We were warmly welcomed by Stuart, who got my husband a drink and let us choose where we sat. Will was our waiter and he was professional and attentive. We both ordered ribeyes and they were delicious and well seasoned, as were the vegetables. The ambience is very moody, with pretty lighting and upscale decor. It is small and cozy, it was easy to have a quiet conversation. Ordered pasta carbonara and rolls to go. The restaurant itself also had great ambiance, very fancy. The staff who took my order was super friendly. GET THE ROLLS, they were so so fluffy. My order also came with this platter of skewers, hummus and broccolini which was a surprise. I loved the skewers, beef was soo tender. Broccolini was a great addition because I love veggies in my meals. The pasta was tasty with the bacon, a little heavy but hey it's a carbonara. Next time I'm definitely going to try and dine in. The food here is pretty good but the thing to write home about The Black Cypress is their service. I went twice at the end of April and again at the beginning of May to visit my boyfriend and both times, service was just exceptional. I know tipping has been getting out of hand but this is a place you will not feel bad about giving a large tip to for service. All the servers are very attentive, easy to speak to, and kind. It almost feels like a warm hug. For instance, while I was there I heard servers offer to take photos for customers when they saw them struggle to take photos themselves, our server kept an eye on my boyfriend's drink to know when to re-approach when he mentioned he wasn't sure if he wanted to order another one, and another server who helped our table out remembered a passing comment I made about us wanting to share our orders so he had the food split into 2 plates (I thought my boyfriend and I would just manually split everything ourselves!). Honestly, I thought the service exceeded even the food, but, onto the food! They have a rotating menu that focuses on only a few items at a time. The carbonara and spaghetti was delicious and the pasta was perfectly al dente. The wagyu special came with broccolini and I don't know what they did with it but I couldn't stop eating it. It was a little smoky but so tender yet still crisp. They didn't ask how we wanted our meat cooked but it came out as medium. The wagyu came from a local farm by the Snake River. There was a grilled halloumi cheese toast that had fig spread on it that I couldn't stop thinking about. The salad was good but I do regret getting that in favor of something more substantial. I recommend the stronger cocktails at the bottom of the third page of the menu. read more

Wow, I was very impressed with the food quality and taste at this gem of a restaurant. Our cocktails were expertly made, our service was friendly and attentive, and our food was delicious. The carbonara, pomodoro, and grilled portabella entrees were all a hit at our table. The garlic mashed potatoes were so decadently buttery and smooth. All the dishes that passed by our table looked truly delicious. Dessert was an amazingly delicious bread pudding. Loved the dark wood, moody atmosphere of our "Captain's table" booth with views of the room, bar, and kitchen. Very polite service. Waitstaff knew the menu. Only complaint is that the beverages didn't come right away. I would have ordered more drinks if the rotation went around quicker but there was only time for two glasses. I get kind a nervous when I don't have a drink in my hand but seriously... one of my favorite things in a restaurant like this is to quickly get drinks and sip while considering the menu. Anyway, the red from France I got, the Cab/Bordeaux was phenomenal. For my second glass I sampled the Syrah and the evening special but I had do a second glass of the same. My son got this on-tap root beer, Crater Lake that was everything he said he's always wanted root beer to be. I tasted it- it was perfect. Low on the fizz factor and the server said that was intentional. The soup was knock-our-socks off good. They would have been my dinner had I known! I was in the mood for pasta which was a funny choice since it's hard to judge how good a place is by that type of dish but the pasta is made in-house so I went for it. It scratched my itch. Our friends said the Snake River Waygu was decent and they say they bc they were at John Howie last week for the premium stuff and we do that, so my husband went with the ribeye to sample a menu staple. He wasn't disappointed. It looked great. It was cooked perfectly. I tasted the mashed potatoes and they had a perfect texture and flavoring. I might have added a little salt but that's just me. Oh, funny tidbit- when we sat down my husband mentioned they were very confident not having salt and pepper on the table and nary a steak knife was brought to the table either. And none were needed. For the salad... eh. The bacon was smoky which was nice but it was a little dry and woody. For the soup. I wish there was a daily specials menu so I could have photographed it for memories and for posting here, but there wasn't. All I can say is that there was lamb, there was lime, there were beans, there was cilantro and I would eat it every day of my life. It's hard to put beans in soup; I always feel it suckers with the consistency and this was done right all around. Delicious! We did get to keep the menus during dining which I like to do bc we sometimes order more and I like to read the descriptions as I'm eating. Without the specials written down, I didn't have that reference. With that said, with their sustainability goals, I understand why there aren't daily special print-outs. Maybe as a QR code in the future? Also with the sustainability subject... we noticed the inconsistent, thrifty silverware and really appreciated a place dedicated to respecting such flavor balance and holding true to their ideals in all areas. The brownie desert- I barely tasted it, my son wouldn't share! When is put my fork towards it he'd smack it with his own fork! Funny but not bc I barely got a nibble. Very tasty. Brownie was cooked perfectly. The ice cream wasn't gummy, it was very pure. Now... there talk about the burnt crème. What in tarrrnation was this creation? My only regret was not being able to fit a second order of this in my stomach. I loved the light consistency and flavor. The topping, could have been more burnt for that crispy topping but with the honey I acknowledge they could have been impossible. The salty pistachios... for heavens sakes... my perfect scenario is coming back, alone, eating this desert in the dark slowly, no other input, and savoring each and every bite. What sticks with me the most is my appreciation for their subtle flavors and appropriate textures in some of their dishes. Example- If I see another overdone caramelized brussels sprout dish with so much maple and sugar and bacon and sauce on it, I'm going to scream. The mashed potatoes here were hit home by the texture- no need to pile in too much garlic. The best food isn't only what's added but just as much about about what's reserved. Largest complaint I could give would be that this place is always sold out and I want to come back again and again. It's an obvious first choice of where to dine in Pullman. What a gem! read more
