The pulled duck was an absolute showstopper. It was incredibly moist and tender that it basically melted like butter when I ate it. And with the chicharrón, it was absolutely excellent. I actually cried. Don't judge me but I literally cried. - Sliced Brisket: Your run of the mill brisket with both moist and dry portions. Not a standout by any means but still great. - Pimento Mac and Cheese: MUST TRY! My favorite side and one that I am now recommending to anyone that will let me tap about it. The creaminess of the cheese sauce was perfectly balanced with an explosion of robust creole flavors. I actually think it might be the best in the city. - Cream Corn Maque Choux: A nice soulful blend of that creole based seasoning that is a nice answer/touch away from terry blacks sweet cream corn. Highly recommend. Other Things to Know - They have two sauces that you can try. I recommend their tabasco vinegar red sauce which they say they make with a strawberry purée. Service/Experince - Parish runs a food truck that runs outside of Austin Beerworks back area. - Something to consider is that it did not have an awning when we first came here and during the Austin summer that was a big deal. We could t stay outside for more than 4-5 minutes but luckily the buzzers they give you can reach the inside of the Beerworks. - The staff was extremely friendly and were willing to chat through all of the different ways they make their food, sauces and etc. I really appreciated their kindness as I talked their ear off about food in Austin haha. - The area where the trailer sits was under construction when we first went so it was a little dusty with construction signs everywhere, but that never deterred me from a good meal!!
