I think they took deep fried puffed tofu, flattened it down and fried it with the noodles, where it resembled sliced pork. There was a lot of nice color to it, as well as a slight char, and the texture was amazing. Keep it mind, it was a tad greasy as well. I didn't care for the Singapore noodles. My hubby loves this dish, but said he's had it made better else where, so its all personal preference. I do like that you can customize a lot of the meals into vegetarian meals, so major kudos to that. Their meat bowls run $18.99-$19.99 and their vegetarian bowls are $14.99. They have smaller lunch portions that run $12.99 which includes a drink. Staff were courteous. It was ok but a little plain. Next, we had the dan dan noodles. Dan dan noodles are traditionally very chewy have a nice bite to them but these noodles are a bit on the softer side. The flavour profile was good though. Lastly, we had the beast ramen. The smoked pork belly was nice and crisp and the soft boiled egg was nicely cooked. The noodles seem to be the same ones used in the dan dan noodles. It was enjoyable but the broth wasn't exactly ramen broth that I am used to. I would say that overall it was enjoyable, and prices were reasonable. Service was great. But there is definitely some room for improvement on the dishes. The General Tsao's chicken made us select between mild, spicy and very spicy....so being our first order from them we picked spicy. If that was spicy I never want to test their mild selection. Even the General Tsao himself would have been disappointed! Big disappointment! Although the crust on the egg rolls was crusty and dry the inside was delicious! The mixed vegetable dish was also very good. The large amount of chicken fried rice was also tasty! Overall we were very disappointed and with all these types of restaurants in Orleans we will certainly try a different one next time!
