This was our first experience eating out since the diagnosis, and I was nervous about how it would go, but Sushi Spot (and our very kind/helpful server) made this experience easy, and we are reassured that we won't have to completely give up eating out. Sushi rice should have some sweetness and a little tang. After all, it's meant to recreate the fermented rice from the old days before chefs learned how to make rice taste similar without taking so much time... Sushi is probably 90% about the rice and maybe 10% is the rest of what's on it. It is the main thing, really. It should not be bland. Also, their chefs had trouble forming the rice neatly, which is a skill issue. This was prepared in the back and might yield different results at the bar. For me, the real star (food-wise) was the plain sunomono. The cucumber was fresh and crispy and topped with thinly shredded carrot for a touch of color. I have eaten at many wonderful sushi spots since the 1980s when you had to order in Japanese because the only sushi chefs around in the U.S. were Japanese immigrants. This was one of the best sunomono I've had anywhere.
