    Such a wonderful experience!!! Loved the aged concept of the dishes, really brings a whole new layer to fish! Chef Sean has such a wonderful personality and the his craftsmanship is apparent from the interior to the ceramics to the alcohol choices and especially his omakase. He does not skimp on any step of his meals. He is very thoughtful about how his dashi is made, how the soy sauce pairs with the fishes, and especially his fish!! (Very luxurious choices!) He has a wonderful successful future ahead!

    I know chef Sean from his time leading omakase counters at Shiro's Sushi. He always brings the best service and has a great sense of humor. Fish quality at Yoin is excellent, on par with all the top spots. We saw some preparations we had never seen before. My wife was allergic to the fruit in the dessert, and Chef was skilled and kind enough to whip up a delicious dessert on the spot. It is exciting to try a new restaurant as they are still establishing their identity. You can tell the team is passionate about making Yoin a special experience.

    Hojicha flan

    Chef Sean finally getting to open his own Omakase and it was a hit! The courses were diverse and offered a fresh take on some traditional sushi. The small dishes were incredible, highlighted by the Chawanmushi which was more broth than custard perfectly complemented by the black truffle. He does a different take than most omakase here in that he is dry aging some of the fish. The dry aged akami was my favorite as the aging process brought out a lot of flavor from the fish. Chef Sean continues to set the standard with his enthusiasm for great food and providing an unforgettable dining experience. We are lucky to have so many great omakase here in Seattle and luckier that Sean gets to add his own to that list.

    The best Omakase outside of Japan. The list of Sakis -- all great. Truly the best sushi bar in Seattle and beyond.

The subtlety of flavors and the texture of the nigiri selection never ceases to satisfy. The owner literally stands by his product of the other side of the counter, calmly Manufacturing Bliss. I recommend the Omakase selection, but if you want to start out with just a simple roll, try the Stone Way roll and splurge on the Cucumber Unagi appetizer. Table seating is generous, and the atmosphere is Chill. I look forward to seeing you there so we can talk about our favorites at the bar.
