I walked into SUP Noodle Bar not entirely sure what to expect from a Vietnamese-Peruvian fusion spot, but I am so glad I checked it out! To get a taste of both worlds, I ordered the popular shrimp and sausage garlic noodles and the rib bone pho. The shrimp and sausage garlic noodles were garlicky greatness. It came with a side of aji sauce, but the noodles were already so loaded with flavor on their own that I didn't even think they needed it! As for the rib bone pho, it absolutely lived up to the menu description. The meat came clean off the bone. Usually, rib bone pho can skew a bit too heavy and fatty, but this broth was incredibly balanced. Haven't been to Sup in a minute, but knew I had to visit again once I found out their $12 beef belly pho lunch special was back! I remember getting that wayyy too often the last time it was available and really enjoying it, and it's pretty much the same great taste! It's such a steal for the price already, and then you add on the fact that it's unlimited noodles, so coming here for this special is a no-brainer! We also ordered the chicken wing fried rice, which we enjoyed. I've tried the fried rice here before but with other proteins- I remember the ribeye one used to be my favorite but it seems to not be on the menu anymore sadly. I did enjoy the chicken wings and thought they were flavorful and crispy, but I'm not sure if I would choose this protein over cheaper options like the shrimp. Docked one star due to the service today :( We ordered two bowls of pho and fried rice and we only received the rice and one bowl of pho. We waited around 20 minutes for the second bowl of pho until we could ask our server about it, and it seems like they forgot about it entirely. It was hard to call our server to our table the entire visit because all of the employees were kind of huddled up chatting together with their backs to all the customers. Usually wouldn't complain about this as I've worked in customer service before and get it, but the worker who answered the phone when my mom had questions about our Yelp waitlist was pretty curt as well and she was upset about it. My daughter insisted us to take her here for her bday so we had to oblige. This is her fav pho place and i was anxious to see why. The waitlist was already over an hour at 5:15! Def join the waitlist if you're within proximity. We been to most of K-concept's restaurants and the service and ambiance was def on par. Nephews & niece loves this place! We've been here several times. We've had almost everything from the menu. It's all good actually! They do change the menu so items do change. I joined the waitlist, then went to grab a boba at Desouro, and soon enough we were seated. I've been here several times and the pho never disappoints. The noodles are always bouncy and chewy, though I prefer to not put the noodle broth into my soup as I feel that they are cooked differently as it has a different flavor than the pho broth. Also, the pickled onions that they serve here are perfectly thin and not over-pickled in the vinegar. Definitely one of my favorite places to have this side available. The pho was really good, and the bone in rib was the tastiest meat in the combination in my opinion. Service is quick and waiters are attentive and asked us numerous times if we had enough noodles. Really enjoyed our recent trip to SUP today! The wait was pretty long but overall was worth it. It's located in a large strip mall off the I-5. After seeing that insanely long line so many times, I've got to check it out. It serves mostly Vietnamese noodles and pho with a contemporary twist along with some Peruvian cuisines. Note that the pho options come with unlimited refills, so when you see that your initial portion is rather small, don't worry, you can just ask for refills. Each refill comes in a separate small bowl with another serving of broth. The broth is traditional Vietnamese and is quite good. Noodles are cooked well with a slightly chewy texture. It's good, but not something that I'll wait half an hour to an hour for. I think the wait is so long because of the free refills - it's almost like an all-you-can-eat noodle place. The last time I was there I enjoyed the filet mignon saltado, a classic Peruvian favorite of meat stir-fried in a white wine infused soy sauce with a sweet and tangy flavor. I can't help but to compare it to the exact same dish that I've had at VOX Kitchen. The quality of the meat and the execution of the dish are even between the two. SUP serves a larger portion size with more meat and also a more flavorful green sauce (aji verde) with a stronger kick. Really solid spot for vietnamese food! The couple of times I've been here, I've had the brisket pho. The meat is tender, and the noodles are cooked to a nice al dente such that throughout the course of the eating experience, it does soften a bit to a perfect texture in the hot broth. Speaking of the broth, it is clean, light, yet so flavorful. It needs no sriracha sauce or hoisin sauce. I've also tried the pho shaken style, which added even more depth and flavor to the broth. The charred vegetables and the oil that it's cooked in adds even more complexity to the broth. Naturally, it does make the broth a little heavier, but that's not a bad thing and it's definitely worth trying at least once. The truffle fries are also great. It comes with ketchup, a green sauce, and an orange sauce. All of these sauces are great, but the orange sauce is really special to me, probably my favorite out of the three sauces. The unlimited noodle refills did not make up for there only being about three sad pieces of meat in my bowl.
