    A local food truck tucked in the back of the Coldfire Brewery that serves hand pulled noodles. There is an enclosed tent area so you can enjoy your food in a relatively indoor setting. The guys are super friendly and helpful with describing the noodle types. I am very impressed at the chef's pulled noodle talent and he told me where and how he learned this art of noodle pulling. Simply put, their biang-biang noodles are BANGING! I've had my fair share of hand pulled noodles having come from the SF Bay Area and these by far are EXCELLENT! Perfect texture, thickness, width, length and chewiness. They offer spicy or mildly spicy noodles. Note that the spiciness in the chili oil slowly builds up after the initial bite and at the halfway point it maintains a spicy level. It can be hot, depending on your tolerance to spiciness. We ordered the pork zha-jiang chili oil biang-biang and the pork zha-jiang tomato egg biang-biang noodles. Both our orders had ground pork and baby bok choy. I was expecting our bowl to be filled with the baby bok choy at the bottom of bowl as a filler, but I was wrong. There was a generous amount of noodles and was balanced to the vegetable and meat sauce. The flavor on both dishes were amazing. The tomato egg was not spicy at all. They offer vegetarian and vegan options. Definitely a must try and I can't wait to come back for more banging goodness!

    These noodles are giant! They are super long, thick, and chewy and you can tell they are made and stretched fresh. I ordered the Chili Oil and my fiancé went with the Cuman Beef. He said the beef was cooked and seasoned perfectly--sometimes cumin can be overpowering, but he didn't feel that was the case here. I thought the chili oil bowl was very flavorful. Definitely, be prepared for both of these options to have a kick to them. The two beers we ordered from ColdFire (Kolsch & Cumulus Tropicalus) complemented the meals well and helped cool us down on such a hot evening. Very thankful for Eric & Jason being out there in the heat cooking up delicious bowls of noodles! We will be back :)

    My friend and I were craving noodles and decided to try Stretched. We came on a Wednesday night and were able to order right away. They offer seating in the brewery nearby and there are outdoor picnic tables as well. The woman who took our order was extremely friendly. We got to watch the noodles be made and cooked right in front of us. The menu is pretty simple, there are vegetarian options as well as meat options. They also have toppings as well if you choose. I would recommend the sweet chili oil but if you're not into spicy food or chili flavors I would get the tomato based sauce instead. The noodles are some of the best I have ever had. They are very thick and flavorful. Overall, this was a great experience, definitely try it yourself if you haven't yet!

    This new truck is a really novel experience - Xi'an China's Biang Biang Mian - those delicious, hand-stretched noodles. You know those guys you've seen on TV who stretch and stretch and stretch the noodles until they're yards long between outstretched arms? That's this. It's a new eating experience for me. I would twirl around a foot or so of the noodles and then chomp it off the fork. Not pretty for sure, but fun nonetheless. I ordered them with ground pork and chili oil. Tasty and a little spicy. The handmade noodles are thick and chewy, which I liked very much. So all in all, this is a fun experience that is delicious.

    Yumm! Great stuff!! Jam packed full of flavor and heart! These brothers know what they are doing!! These noodles are comforting. They are salty, and greasy in the best sort of way. They have texture, are very filling and leave you stuffed!! These guys are located behind coldfire brewery. They offer sweet Chinese tea at their truck if you want something other than beer :) I highly recommend this place! I will definitely be back!

    First time here, I got the Pork Zha Jiang with a soft boiled egg. It was delicious and flavorful with some spice. Noodles were perfect in my opinion.

    Great customer service! The brothers are super friendly! Great food!! good portion size! Plenty Outside seating. Nice place to come try different food trucks and have a beer. This food truck is in a nice spot. The noodles were a little spicy but still tasty

    I love Xi'an Famous Foods in NYC, and I was hoping for a similar meal at Stretched. It did not disappoint! The noodles were plentiful and a perfect chewy (in a good way) texture. The Chili Oil Biang Biang with cumin beef was an amazing flavor explosion with a great balance of noodles, beef, and bok choy. The tomato egg helped balance out the heat/spiciness of the noodle dish. The service was super friendly too! Pro Tip: Everyone at our house agreed that the Chili Oil Biang Biang was very spicy/hot. If you're looking for a less spicy experience, request it. For comparison if you've been to Xi'an Famous Foods in NYC, I usually order the "regular" spice level. The Chili Oil Biang Biang at Stretched is considerably hotter/spicier, but with the same delicious flavors. You should definitely try it!

    I ordered the Pork Zha Jiang Chili Oil Biang Biang and it just wasn't what I was expecting at all and difficult to consume... I love all these ingredients but the ratios were off for my palate. If the chili oil had been cut with anything to make it more of a sauce or dressing then I think I could have jumped on board with this dish, but to have noodles and ground meat swimming in a bowl half filled with oil was too much. I was hoping the bock choy or bean sprouts could help balance the textures, but what little vegetable that was present was shredded so small it was more of a garnish to the oil and starch. I liked the profile of the hand crafted noodle; it was long, wide and thick with a soft chew. I wish I could have eaten more of the noodles but the excessive oil did not sit well with me so I have to pass early on this one. The food truck is in a nice location joining a pod with other trucks and a brewery. The outdoor seating of the pod is well covered and insulated making for a pleasant experience on a cold, winter day.

    Best noodles I have ever had in Eugene. The spices are great. I tried the Cumin Beef and it was awesome. I will be back with my friends!!!

But he agrees they were delicious! I had the taco trio which for $10 you get one of each of their tacos. My favorite was the pork belly taco followed by the tri tip and the alaskan cod. The pork belly was so tender and perfectly caramelized! The mango/peach salsa made my eyes roll back. The pickled onions gave the perfect acidic touch to the sweetness of the salsa and the savoriness of the pork belly. I loved that each taco was hefty. Each taco had a generous amount of toppings and sauces without overshadowing the protein. It makes you feel healthy while also indulging. It's truly well balanced. Each topping had a purpose. The chips and salsa were good, it didn't seem like the mango salsa was fresh. I honestly think we weren't ordering the favorites, or maybe caught them on an off day. We also got 2 baskets of fries and a bunch of sauces. I was definitely partial to the chipotle, but the others were nice too.
