A local food truck tucked in the back of the Coldfire Brewery that serves hand pulled noodles. There is an enclosed tent area so you can enjoy your food in a relatively indoor setting. The guys are super friendly and helpful with describing the noodle types. I am very impressed at the chef's pulled noodle talent and he told me where and how he learned this art of noodle pulling. Simply put, their biang-biang noodles are BANGING! I've had my fair share of hand pulled noodles having come from the SF Bay Area and these by far are EXCELLENT! Perfect texture, thickness, width, length and chewiness. They offer spicy or mildly spicy noodles. Note that the spiciness in the chili oil slowly builds up after the initial bite and at the halfway point it maintains a spicy level. It can be hot, depending on your tolerance to spiciness. We ordered the pork zha-jiang chili oil biang-biang and the pork zha-jiang tomato egg biang-biang noodles. Both our orders had ground pork and baby bok choy. I was expecting our bowl to be filled with the baby bok choy at the bottom of bowl as a filler, but I was wrong. There was a generous amount of noodles and was balanced to the vegetable and meat sauce. The flavor on both dishes were amazing. The tomato egg was not spicy at all. These noodles are giant! They are super long, thick, and chewy and you can tell they are made and stretched fresh. I ordered the Chili Oil and my fiancé went with the Cuman Beef. He said the beef was cooked and seasoned perfectly--sometimes cumin can be overpowering, but he didn't feel that was the case here. I thought the chili oil bowl was very flavorful. Definitely, be prepared for both of these options to have a kick to them. The two beers we ordered from ColdFire (Kolsch & Cumulus Tropicalus) complemented the meals well and helped cool us down on such a hot evening. My friend and I were craving noodles and decided to try Stretched. We came on a Wednesday night and were able to order right away. They offer seating in the brewery nearby and there are outdoor picnic tables as well. The woman who took our order was extremely friendly. We got to watch the noodles be made and cooked right in front of us. The menu is pretty simple, there are vegetarian options as well as meat options. They also have toppings as well if you choose. I would recommend the sweet chili oil but if you're not into spicy food or chili flavors I would get the tomato based sauce instead. The noodles are some of the best I have ever had. This new truck is a really novel experience - Xi'an China's Biang Biang Mian - those delicious, hand-stretched noodles. You know those guys you've seen on TV who stretch and stretch and stretch the noodles until they're yards long between outstretched arms? That's this. It's a new eating experience for me. I would twirl around a foot or so of the noodles and then chomp it off the fork. Not pretty for sure, but fun nonetheless. I ordered them with ground pork and chili oil. Tasty and a little spicy. I love Xi'an Famous Foods in NYC, and I was hoping for a similar meal at Stretched. It did not disappoint! The noodles were plentiful and a perfect chewy (in a good way) texture. The Chili Oil Biang Biang with cumin beef was an amazing flavor explosion with a great balance of noodles, beef, and bok choy. The tomato egg helped balance out the heat/spiciness of the noodle dish. The service was super friendly too! Pro Tip: Everyone at our house agreed that the Chili Oil Biang Biang was very spicy/hot. If you're looking for a less spicy experience, request it. For comparison if you've been to Xi'an Famous Foods in NYC, I usually order the "regular" spice level. I ordered the Pork Zha Jiang Chili Oil Biang Biang and it just wasn't what I was expecting at all and difficult to consume... I love all these ingredients but the ratios were off for my palate. If the chili oil had been cut with anything to make it more of a sauce or dressing then I think I could have jumped on board with this dish, but to have noodles and ground meat swimming in a bowl half filled with oil was too much. I was hoping the bock choy or bean sprouts could help balance the textures, but what little vegetable that was present was shredded so small it was more of a garnish to the oil and starch. I liked the profile of the hand crafted noodle; it was long, wide and thick with a soft chew. I wish I could have eaten more of the noodles but the excessive oil did not sit well with me so I have to pass early on this one. The food truck is in a nice location joining a pod with other trucks and a brewery. The outdoor seating of the pod is well covered and insulated making for a pleasant experience on a cold, winter day. read more

I tried this place out with my husband because of the elite event. Before that, I had never heard of it. I'm so glad I know about it now! My husband ordered the pork bowl, and I picked the beef one. I love that they have vegetarian and vegan options, so we can bring our vegan friends and all enjoy a meal together. There is something for everyone! The beef was incredibly tender and delicious. My husband's pork bowl was a bit spicier than mine, but still really good. What I love is the spice level was a medium, so it was warm all the way through the bowl, but wasn't overpowering to where I couldn't enjoy it. The noodles were obviously handmade. I know what goes into making noodles like that, so I was very excited to try these out, and they didn't disappoint. They were tender but chewy and had a great bite. The owners are very friendly and gracious to their customers that stop in, chatting and asking about our day as they explained the food, given this was our first visit. I can't really do spicy but I decided to tough it through because I needed a vegan option and both were spicy. Totally still worth it. Seemed like an issue at every turn with this place. Place is slightly hard to find, you'll need to go through Coldfire brewing to the back patio. The noodles themselves were just way too thick and thus doughy in the middle (not too wide, but too thick). Like it was a horizontal diamond or football shape. The "zhajiang pork with hot chili oil" that doesn't resemble traditional zhajiang sauce at all, more grainy and gritty, and the amount of oil was just too much and did not translate to more flavor. This food truck is located at Coldfire brewing. As the name suggests, they specialize in hand shaved noodles. We got the cumin beef and I added tomato and eggs to mine (I know, weird choice, but I really like tomato and eggs). I thought the texture of the noodles was really good and the flavors in the dish were very complex and rich. Especially for the price this is a great place to eat! Note that they sometimes seem to open a bit on the later side compared to some other food trucks at this location (posted opening is 5pm but at least one of the days we were here the sign on the truck said 6), but your patience will pay off! read more

Went here again last night and I will continue to go back. I got the pork chili oil noodles and in typical form they were awesome. These aren't for everyone as they're spicy, messy, and pack a punch of chili oil flavor but if you love spicy noodles I promise you'll love these. The best is part is they pair perfectly with an ice cold Coldfire as well. They're on the higher end at $15 per bowl but I must say the portion size is quite generous. I got to talking to the chef/owner on my first visit, and he explained how he learned to make hand pulled noodles, how he has been perfecting his craft over many years, and how he developed the recipes little by little. There is such a profound commitment. All of this has made for some incredible hand pulled noodles, but the secret sauce, I think, is his passion and love for the food and his appreciation for sharing it with us. He was so thankful for my business. Hand pulled noodles are an art (made them once and it wasn't easy), and these are some of the best I've had. Coming from NYC, I've had my share. These are so fresh, so flavorful, and so satisfying that I can't wait to go back. Salty Delicious Pork, perfectly cooked bouncy noodles, and a chili oil that cleared my sinus and warmed my soul on a cold winter day. The beloved bride was just not hungry on Tuesday night. While waiting for her to request what she wanted me to cook, the hour grew later and later. I needed something with spice and noodles. My memory went back to 221BCE in Eugene. They've been closed forever. Looking thru Yelp, I saw hand stretched biang biang noodles... with chili oil and cumin beef! The old 221 BCE had cumin lamb, and I went at least once a week. Woo Hoo! I called and talked to the chef's wife (whose name I can't recall) and she couldn't be nicer or more helpful. I ordered Biang Biang noodles with cumin beef and all the trimmings. I also got some pork wonton apps. 15 minutes I made it to Coldfire Brewry, and to the first food truck in the back on the left. Several notes on the food. The chili oil had kick, a fairly even balance of flavor, and enough chili in it to know it's there. There were 2 noodles, each about the size of legal pad paper. Great taste, great tooth and very filling. There were about 3 halfed baby bok choi. Just crisp enough to crunch and cooked enough for the flavor of the chili oil to be there. The beef was cut in moderate size irregular chunks. The cumin was obviously there, but somewhat faint. The beef was not on the same level as the noodles or veggies, it was cooked to the correct done-ness, but had a bit more salt than I like. In all, I look forward to going again, and working my way through the menu. I will eat on the premises so that my 15 minute drive allows the goodies to cool. I also plan on bringing a real glazed bowl, the cardboard bowl that dinner came in disintegrated as I consumed my dinner and I felt that I ate 1/3 of the bowl. Your mileage may vary. read more

In a tiny amount the dish seemed very flavorful and good. I ordered the cumin beef. It had some spice which I appreciate but was wayyyy too salty and greasy in bigger amounts.
