My husband is a great fan of eggs. Of sandwiches, banh mi, baguette, paninis... He said this was the most perfect breakfast sandwich he'd ever eaten and he's not prone to hyperbole (unlike my tendency towards it). He asked to go back the next day to get one for breakfast and one to go for lunch. Two perfectly plush Texas toast pieces surrounding a nice warm yolky goodness of mashed avocado, cheese, thick pieces of crispy bacon.
