I recently attended a work event at Stillwell's and had a wonderful experience from start to finish. The service was exceptional, and our server, Carlos, was incredibly knowledgeable. He took the time to walk us through the menu and offered excellent recommendations. I started with the lobster bisque, followed by the salmon, and both dishes were outstanding. During our meal, David stopped by our table to check on us, making sure everything was to our liking while sharing some of his favorite menu recommendations. Melanie, the manager on duty, also came by to welcome us and ensure we were having a great experience, which was a thoughtful touch. For dessert, we indulged in a delightful duo of treats: the chocolate cake and the cheesecake! Both were divine, but the cheesecake stole the show--it's an absolute must-try that I can't recommend enough!  To top off this amazing dining experience, the restaurant was showcasing festive World of Soccer cocktails. Overall, it was a truly memorable dining experience. Between the outstanding food, attentive service, and welcoming atmosphere, Stillwell's exceeded my expectations. We were a party of 6 on Thursday night. I ordered the Delmonico, which was from their "special" breed of cattle. Was it good? Yes. Did it blow my socks off? Was it the best steak I've ever had? No. Sorry to say. there was no char on my steak. It could have been done in a grill pan for all I know. It was not a thick cut steak. Maybe that's my fault? All I know is that it was an 8/10...and that was disappointing to me. The sides were solid: corn, potato salad, onion rings. The appetizers were good as well: dumplings, tuna(?), salad, eggs. I would come back again, but to be honest, at these prices, you really need to be knocked off your feet. There are too many good steak houses that for less $$, deliver a greater food experience. My experience at Stillwell's Steakhouse was nothing short of amazing. From the moment we sat down, Jenna, Javier, and Carlos made us feel welcomed and genuinely cared for. Their service was outstanding throughout the entire evening. What impressed me most was how attentive they were. They seemed to anticipate our needs before we even had to ask. There were moments when we would casually mention something in conversation, and shortly afterward they would bring out something that complemented what we were discussing. That level of attentiveness and attention to detail is rare and made the experience feel incredibly personalized. The food was phenomenal from start to finish. The lobster bisque was absolutely delicious, and the portions were much more generous than I expected. Every dish that came to the table was beautifully prepared and full of flavor. I especially appreciated that they asked how I wanted the pork chop prepared--it was cooked exactly the way I requested and came out perfectly. Every bite was tender, flavorful, and memorable. The cocktails were equally impressive, expertly crafted and perfectly balanced. You can tell a lot of care goes into every aspect of the dining experience. Stillwell's has certainly earned its Michelin recommendation. Great food can bring people in, but exceptional service is what makes a meal unforgettable. We were getting ready to leave town and fly back to LA, but we could not leave Dallas without coming to Stillwell one more time. Called Derek, the GM, and he took care of us. Three visits, three outstanding experiences. Derek is a genuinely great guy with a great staff. It felt like we had our own private dining experience at this point. Brittany was our server this time and handled everything well. I went with the hanger steak and did not even need a steak knife to cut through it. My friend ordered the oxtail, and he is picky. He usually avoids it because he says he always ends up disappointed. He was not disappointed at Stillwell. We had the baby kale salad again and got the cheesecake to go. You absolutely have to start with Cowboy Hour, the atmosphere is unmatched and it's the best way to kick off the evening. The beef dumplings are a total revelation, succulent, rich, and packed with flavor, but the true stars of the show are the HWD beef cuts. The quality of the Akaushi steak is world-class and cooked to absolute perfection, especially when paired with their delicious sides like the decadent truffle mac and cheese or the perfectly charred Brussels sprouts. The bar area is separate from the formal dining room, where we were seated beside a massive, central fireplace with cowboy hats lining the walls. The vibe is pure upscale Texas cattle-ranch luxury. From the place settings to the linen tablecloths and napkins to the tuxedoed service, everything felt intentional and impeccably curated. Service was formal in the best way--they even served from the proper side each time. The attention to detail was next-level, down to removing the seeds from the lemon slices. This is truly a meat lover's paradise. No part of the cow goes to waste. Portions are generous, and even ordering only appetizers felt like a full four-course meal. The crab bake was a huge mound of fresh, buttery crab--absolutely delicious. The pork belly over grits was an excellent pairing; the grits were fluffy, creamy, and melted on the plate, while the pork belly was rich and flavorful. The bone marrow dish missed the mark for me--it arrived as a bone filled with shredded beef mixed with marrow and topped with scrambled eggs, but I was hoping for traditional marrow and bread. And the bread--fluffy, soft, and paired with incredible butter. Pace yourself. The true standout was the beef dumplings. The gravy was so good I shamelessly used the bread to soak up every last drop and nearly licked the bowl. Tomas took exceptional care of us. I stepped away for what turned into an impromptu restroom photo shoot and returned to find him waiting patiently at my seat (!!), my napkin perfectly refolded and placed back in my lap once I sat. That level of service says everything. The night ended perfectly with a decadent, moist chocolate cake for my daughter's birthday. When the check arrived, we were treated to chocolate-caramel candies that actually contain bone marrow--proof that no part of the cow goes to waste. We did the Chef's Tasting Menu and I'm so glad that we did. He was hospitable, professional, and extremely helpful and friendly! I had the Pork Chops, and they were moist, tender, juicy, and flavorful. They were the best pork chops I've ever eaten in my life!!! We had been talking about this place recently and decided to go back. When we were first here a couple years ago, we both remembered catching a glimpse of the bar room here and thought it looked so nice - we wanted to go sit at the bar. So we did last weekend. Bar seating is first-come first-served. We went around 7 pm on a Saturday and there were 4 open seats at the bar. All tables in the bar room were full. It is VERY loud! But - very swanky bar - one of the nicest we've sat at I think. What's really nice about this place is every single person will greet you and say thank you on your way out. This is a high level of attention that no one else does. It's nice! So why does my review drop a star? Well, the food was just all right. She had salmon, I had lamb. The lamb, and I know I should have just ordered their steak, was weird. There are 2 separate chops each with 2 chops fused together. I've never seen it served like this, and it made it terribly difficult to eat. Also, it was served with a dark sauce that was bitter to me - I never like or need sauce on lamb - it kind of killed it for me. My wife was not all that impressed with the salmon. The sides are great - their mac and cheese is super good and their brussel sprouts are good too. It's expensive. It was nice to come on my birthday but I think we can get more for our money at other places. Decided to try this place for the first time because of restaurant week. Initially I felt like we were made to feel as a second class citizens because I selected restaurant week on the OpenTable reservation. We arrived about 5 minutes before our reservation time and were told to go to the bar area to have a seat, which seems to be where they were telling everyone to do. A hostess took us there but there were no seats at the bar, but there were tables in the bar area so we go back up and end up speaking with a manger asking if we were able to sit at any of the tables since there were no seats and didn't want to stand awkwardly in the middle of the room or behind bar patrons in chairs like were at some college bar. He told us we could either stand in the bar area or go back to the first floor of the hotel to sit at the bar there, so we went back to Stillwell's bar area and just stood there for about 10 more minutes until a hostess called our name and then proceeded to sit us at one of the tables at the bar directly behind us. At this point, I asked why we had to wait since this table and several more of the tables in the bar were cleaned off and available since the moment we walked in. She immediately got the manager, same guy we talked to when we complained about the bar area, who continuously gave us excuses about why the table wasn't ready and why the original waiter only left one full restaurant menu at the table because we selected restaurant week on our reservation. Another example of us feeling like we were being treated less than others because we selected the restaurant week menu on Open Table. After all the excuses and other bs he had to offer, we had our waitress Val come. Honeslty, this was the only reason we didn't leave the restaurant. She was extremely nice and went over restaurant week menu items as well as top items on the regular menu with us, where we decided to order a mixture of both menus. The remainder of the service and the remainder of the food was great, except one thing. We ordered the following RW: Beef dumplings Cesar salad 6oz filet w/broccolini and potato puree Bone-in pork chop w/ crispy potato salad Chocolate cake Cheesecake Regular Menu: Deviled Eggs Lobster Bisque Only complaint I had was the crispy potato salad. It was so burned tasting that I couldn't eat it. Other than that, the food and service was excellent. The manager came by again towards the end of service but didn't feel like telling him the crispy potato salad was bad because he just had an extremely weird vibe at our table and felt like he would've just been defensive about my complaint. Even though the service and food were good, I probably wouldn't return because of the very strange experience at the beginning and with the manager. My opinion is that the whole point of restaurant week is to experience a tasting of restaurants you've never been to, as well as, support the North Texas Food Bank, not feel like you're less than at a nice restaurant for choosing this menu that the restaurant chose to participate in. read more

Stillwell's was absolutely amazing! We lived it from the moment we walked into the beautiful Swexan hotel. Tomas was a spectacular server. He was knowledgeable and very personable. Everyone on the staff was the conssumate professional and made us feel very welcome. We enjoyed tuna and tartare and the best steak tartare Ice ever had. The steaks, especially the dry aged filet, were cooked to perfection and we also had the oxtail stroganoff as a side. We tried the bananas foster and the pear tart and they were pretty good as well. I will also recommend trying all of the cocktails, especially the Summers End. This place is sexy, fun, and the keen attention to detail pushed it over the top. 20/10 read more

My wife and I celebrated my 31st birthday here last Thursday with the 7-course Chef's Tasting Menu, and I genuinely don't know where to begin; it was truly an evening we will never forget. The atmosphere was romantic and intimate. The dining room was completely full but did not feel that way in the slightest. Each table is set to feel like you are in your own private world. Our server Valeria (Val) deserves a special callout, she was exceptional from start to finish. She knew every course inside and out, taking a moment to explain each plate as they came out. She spoke with such genuine confidence and a warmth that made the whole evening that much better. The best kind of service is the kind you don't have to think about, and Val nailed it. Thank you, Val. Now, the food. Seven courses of Michelin-recommended excellence, and every single one delivered but two stood out above the rest. The amuse bouche -- a single east coast oyster -- was probably the most surprising plate of the night. My wife is not an oyster person, at all, but she absolutely loved it. The flavors were so layered and vibrant that the oyster itself almost became secondary. If you don't typically enjoy oysters I implore you to give this one a shot, we could have ordered a dozen more if we didn't have a full menu ahead of us. Course One, the Beef Tartare was equally stunning -- both in presentation and in flavor. Bold, balanced, and unlike anything either of us had tasted before. While these plates stood out, the entire menu was incredible from start to finish. This was our first tasting menu experience and Stillwell's has set the bar high for any that come after. Our waiter, Tomas went above and beyond to ensure our experience was one to remember. Andres was a phenomenal server, the food melts in your mouth, the flavors are expertly paired , the wine is decedent and delicious and Beef dumplings w sauce - this stuff melted IN MY MOUTH. The steak itself is well cooked. I got medium because that's how you should be eating your steaks. I ordered 3 sides: Brussel sprouts, loaded baked potato, and Mac n cheese. The brussel sprouts taste soooo good ! The flavor is amazing, my man doesn't even like Brussel sprouts and he said they tasted so good. The loaded baked potato was pretty typical , it tasted good but it's not heavily seasoned. The Mac n cheese was Suuuuper delicious and kinda thick. It's like 4 diff cheeses, has a real unique flavor profile that wasn't my favorite but i still give it high marks because of the actual taste and how well it was prepared. Our server, Andres, was very attentive, hospitable, helpful when i wanted to figure out what wine i wanted to pair with my steak. I chose the Bordeaux that Andres recommended and it paired perfectly with my steak. He was funny as well as prompt. My friend and I decided to celebrate Galentine's Day here and we were thoroughly disappointed. To point out the highlights - they offer valet (tips), the restaurant (bar side) is decorated with a Texas twist, and they offer a variety of cocktails, wine, and other liberations for you to enjoy. The customer service was very overwhelming as we had multiple individuals coming to our table throughout the night - drink/food orders, check ups, etc. Although, we did appreciate the attentiveness they offered it resulted in a confusing dining experience. We ordered multiple appetizers for the table - tuna crudo, beef dumplings, and lobster bisque. We did enjoy the dumplings and lobster bisque but the crudo was lacking. We were expecting more of a citrus flavoring instead of the sesame oil which was overpowering. For my dinner, I ordered seared scallops and sides for the table - creamed corn, roasted mushrooms - and my friend ordered brussel sprouts and crispy potato salad and for her dinner - ora king salmon. The tastiness of the side was expected but they could've came out a little hotter (temperature). The brussel sprouts had a good crispness and sauce layered on top and I was pleasantly surprised by the crispy potato salad as the flavoring was good. I was content with the creamed corn and mushrooms. The scallops had a crisp top layer (which is nice) but offered a salty aftertaste and I didn't enjoy the sweet potato purée it came it. Again, everything was lukewarm. My friend unfortunately didn't enjoy her salmon or the side it came with - bean salad - as she mentioned the mushiness of it. We finished with a strawberry cheesecake for dessert and my friend had to send it back due to not enjoying it. The night ended with my card being charged 4 times due to the waiter's confusion! One waiter brought our checks and we provided our cards but another waiter completed the transactions. Currently, I have $594.30 pending on my account and $265.21, of that, is from another customer's check that the waiter ran MY card on. This made for a TERRIBLE ending to already mediocre night. We tried this place for dinner and had a good time. We arrived about 30 min ahead of reservation, so we headed to the lounge area for a cocktail. They have a wide selection of cocktails, a great bourbon selection, and the bartenders were friendly. The main dining room is spacious and had romantic lighting. When we arrived at our table, we had a hand-signed card wishing us a happy anniversary. The complimentary bread and butter was tasty. I enjoyed my strip steak and my wife loved her filet. Nice outside black char and when they give you a knife with no jaggged edge, you know you are in for either a mistake by the waiter, or a great piece of meat. The rest was mediocre. I ordered my entree salmon medium rare and I was very specific about the way I ordered, however, it came out well done. They tried to correct it and it came out under done the second time. I didn't want to send it a third time so I switched to the scallops which were so AMAZING!!! We also ordered the lobster Mac and Brussel sprouts and both sides were very tasty. The reason why I would go back is because my server David, Derrick and Jordan managers were so AWESOME and my service was impeccable. I would definitely recommend this restaurant to anyone. This was my second time back celebrating a special occasion and I can't rave about this restaurant enough. The food is absolutely amazing, specially the Harwood filet mignon with black truffle butter. I quite literally couldn't stop thinking about it since my initial visit back in March. One of the best well balanced dinners we've had in Dallas. Unsure what to expect due to the ratings but I am so glad we went. The SERVICE was phenomenal-- some of the best in Dallas. Attentive, knowledgeable, kind, and I mean from the hostess, wait staff, hotel, no notes here. We felt welcomed and taken care of from everyone that touched our table. Here is what we ordered: Two sides: Mac and cheese (add the crab) it was shells with the right about of cheese and flavor. Great quality. Really good. Brussels sprouts were almost flash fried and crispy with great flavor. They're tossed in a sweet soy glaze with peppers and pork belly-- perfection. We aren't big Brussels sprout folks and this was probably our favorite we've had anywhere. Entrees: Pork Chop: THIS pork chop. Gosh it's the best I've had in Dallas. Came out HOT. We've gone to a lot of places and it was charred, but juicy, flavorful with just the right about of fat, thick, enough for two but you won't want to share. I love it MORE than the steak and that is saying something cause they have a special beef program with Harwood here. HWD Ribeye steak: a very classic ribeye. We didn't pair with any butter or toppings but it was good. What you'd expect from a steak at a Dallas steak house. Solid choice. The bread! It was also so good. Came out warm. It's like a brioche milk bread. So fluffy, pull apart, good quality butter. Could also have taken some home. The dessert. We never get a good peanut butter dessert at fine dining establishments and this the perfect way to end our dinner. Now, they do get ya on water haha which you know Evian and pellegrino, you'll be charged, but we had someone (not our waiter) replace our water without asking and we were charged almost $30 just for water. We had an excellent dinner at Stillwell's. Barbara did a wonderful job as our server. We started with The Deviled Eggs, They were excellent with the slices of Prosciutto on them. The Tuna Crudo was excellent was well. Their Wedge Salad and the Dill Cheddar Rolls were very tasty too. For our main course, we had The Sea Bass and 10 oz Filet with Vodoo Saice. The Onion Rings were a little off but they use a gluten free batter for it. The Creamed Corn was excellent as well. We finished with the Chocolate Cake for dessert. The atmosphere was pretty cool but we did eat in The Lounge instead of the main Dining Room. The Service was excellent. You should head down to the Bar in the basement called Babou's. My boyfriend and I love trying new steakhouses, and we decided this place would be perfect for my birthday -- and it absolutely was. From the moment we walked into the hotel, everyone was so kind and respectful. They even offer free valet parking, which made things so convenient. I also loved the personal touch of a handwritten birthday note waiting for me -- such a thoughtful surprise! Our server was incredibly attentive and accommodating. I mentioned being cold, and they brought me a blanket right away, which was perfect. Every time someone stopped by our table, they asked whose birthday it was, which made the evening feel extra special. The overall atmosphere was calm and elegant -- the music was a bit loud at first, but I think they noticed and turned it down. There's also a lovely outdoor balcony if you want a more relaxed vibe. The free bread at the start was amazing -- soft, warm, and flaky. Our server suggested dipping it into the sauce from the beef dumplings, and honestly, that might've been our favorite recommendation of the night. For appetizers, we had the beef dumplings and steak tartare. My boyfriend loved the tartare -- he's tried quite a few, and he said this might be his favorite now. The dumplings were savory and generously filled; my only small note is that I expected a richer, gravy-style sauce, but it leaned more creamy. Still, they were very enjoyable. For entrées, I ordered the 8 oz filet mignon (medium), and it was cooked perfectly -- tender, juicy, and rich in flavor, with a nice crisp sear on the outside. My boyfriend ordered the 16 oz Delmonico ribeye (medium rare) based on our server's recommendation. He said it was excellent quality, just a bit too fatty for his taste -- though he definitely enjoyed sneaking bites of my filet! We shared the fries as our side, and while they were good at first, the tallow flavor became a little overpowering after a while, so we'll probably try a different side next time. To end the night, they surprised me with a complimentary slice of chocolate cake, which was huge (even though our server swore it was the "smaller" size -- I'm not convinced!). It was dark chocolate -- my favorite -- and paired beautifully with a raspberry purée. Honestly, I wish they sold the purée on its own, it was that good. My husband and I went here based off the Michelin websites recommendation and it didnt disappoint. We did the Michelin tasting menu 125$ per person which was so reasonable for what it was, everything on it was so good. I was least excited about the carrot dish, until I tasted it. Small dishes that hold large impact and end up being extremely filling. The ambiance is luxurious in a smaller environment. It didnt feel huge but I didnt see the whole restaurant. It was obviously popular, there were a lot of people. We didnt feel that it was overly loud or problematic though. I recommend this restaurant. read more

This is a handsome restaurant outfitted in dark woods and romantic low lighting. Service was above and beyond. We started with the Crab Cake appetizer which was served on brioche. The crab cake had a lot of filler and not much flavor and I didn't love the combo of crab cake and brioche. But hey, our waiter recommended the Beef Dumplings and we didn't listen to him! For our entree hubby and I shared the 12 oz Akaushi filet. Akaushi beef is a specific Wagyu cattle breed known for being incredibly tender and flavorful . This cut was from the HWD selection which boasts regenerative ranching. I did look this up, but will pass on a description in this review. Let's just say it sounds eco-friendly. Back to the review... this steak was amazing. It had a spectacular crispy and charred crust and a perfect medium rare center. Honestly it may be the best steak I've eaten. We also had the roasted mushrooms and the potato purée. So good! The sommelier was extremely accommodating. He opened a bottle of Chablis for me, even though I only wanted a glass. This was my first time at Stillwell's over Valentine's weekend. The atmosphere was beautiful--very nice and upscale. The staff was extremely friendly, attentive, and accommodating. I would definitely give the ambiance, service, and drinks a 5 out of 5. However, the food was very disappointing. I would give it a 2. My husband spent $600 for three of us, and for that price, we expected much more. I ordered the double pork chop, and it was VERY bland--no real seasoning or spices at all. The sides were just average and nothing special to mention. To be completely honest, we had just come from Texas Roadhouse for a quick group dinner, and the flavor there was far better overall than what we experienced at Stillwell's. For a restaurant at this price point, the food simply did not meet expectations. read more

What an absolute joke. You would think a steakhouse with a Michelin star would be able to cook a medium well steak. Instead we got close to a rare steak. What an awful experience and the rest of the food was at best mediocre. Please do yourself a favor and avoid this place. read more

Perfect spot for an intimate dinner. One of my favorite parts about Stillwell's was not having to shout to be heard. I could easily hold conversation and enjoy the guests at the table. Service was top notch! Attentive but not pushy. Having felt like we were getting pushed out at other establishments, Stillwells made us feel welcome to sit, enjoy, and have a full evening without being rushed. Now, it is pricey, so don't come for me about that! But the price matches the service and experience level. My friend said her steak was the best one she's had in Dallas! The sea bass was well cooked but I probably should have ordered an additional side as an accompaniment. The Sommelier brought over a bottle of champagne and served us all a glass when he noticed we were celebrating a birthday. 10/10 experience. Next time I'm coming early before our dinner reservation so I can get a drink at the downstairs bar. It looked so cute and cozy. Can't wait to come back! read more

This was my second time coming and the service was even better before! The manager came over several times to check on us, and our waitress/bartender was very accommodating and sweet. I also recommend grabbing a table outside if you can! The view of downtown dallas is very pretty! Especially during sunset. Just got the caesar salad and fries. read more
