Simple, but done exceptionally well. The whipped mashed potatoes deserve their own moment too. They were so smooth and rich they basically melted in your mouth. And then dessert sealed the deal. Gonna…read moreadmit it up front: I was prepared for a tourist-trap in disguise, an overhyped restaurant with menu prices to match its hype, served with a big scoop of disappointment. I couldn't have been more wrong -- dinner here ranks among the best meals I've ever had. We had a reservation for 6:30 for my birthday, and got seated right away. We got an appetizer of their broiled oysters. I maintain that cooked oysters are an abomination before Poseidon, but these were actually very tasty. They were probably the weakest part of the meal, as I didn't think there was enough oyster to them, but ... again, I think the only proper way to serve an oyster is raw with a tiny dab of mignonette, if you're a savage. They've got a wide martini menu, and I ordered a martinez. I've somehow never tried this before. My first sip of it, I was still in "this is a martini" mode and didn't like it, but once I clicked out of that and tasted what I was actually having -- it was good! For dinner, I ordered a A5 Sunflower Butterfly 4oz and a 32oz dry aged Japanese ribeye. DO NOT JUDGE ME. Both came out perfectly well cooked. I thought the A5 was a touch oversalted, but I've also threatened to just bite a cow. The meat was amazing, and so flavourful. It's amazingly tender -- you can literally cut it with a spoon. Personally, I find it way too rich to eat but a small piece of it, which is why the 4 oz. That dry aged steak was just fantastic, and also tender. I've had steak so fresh you could still hear the cow mooing, but this aged stuff just ... an entirely different flavour, and so great. I can't describe it, just try it. For sides, I got the mashed potatoes -- loaded -- and a pile of black truffles on the steak. The mashed potatoes... oh my god. My wife and I are now in a polyamorous triad with them. The truffles -- unfortunately -- didn't add much to the steak, but I dumped them into the potatoes like a heathen and arrived in heaven faster than the cholesterol dump could send me. We finished with the carrotcake, and a piece of tallow caramel. Both were amazing. I didn't care for the green parts of the carrotcake shell, as they tasted a little vegetable-y to me, but everything else was good. Next time, I'll try the bananana sundae. I can never remember how many nas. A few areas of concern for those considering going: It's Georgetown, the area famous for having no parking, no metro, and somehow always being crowded (I think it's because people can't figure out how to leave). Be prepared for that. The restaurant is /expensive/. I don't think it was overpriced, but I can definitely see where it's going to exceed a budget quickly. This is a very-special-occasion restaurant, not a Friday date night. Seriously, save this place for milestones. The menu prices things a la carte, and the meat is sold per pound... Beware of that -- your bill is going to rack up. I was truly disappointed in only one thing: their wine menu has like 5 wines on it, and by the glass only. It's an incredibly upscale steak restaurant, and *this* is your wine list? I thought they were *stupidly* overpriced. Average glass of wine is $25-30. I like a good glass of red with a steak, but I couldn't stomach the idea of $3 sips of wine.

Service itself was detailed and almost a little too eager. My only suggestion would be to let people sit undisturbed for a bit before moving in to refill the one sip of water. Besides that, our waitress was very personable, knowledgeable about the menu, and helpful with suggestions. Multiple supplemental staff also came through for one reason or another during our dinner. My wife got 4oz of the Wagyu, while I got the flank steak. Both were cooked perfectly to order and were excellent w just a little sprinkle of flaky salt on top. The steak fries were also crispy and salty. A perfect side. The only dish we weren't huge fans of was the prawns. They come prepared w cocktail sauce, horse radish, and lemon zest already on top, which we would've preferred not be the case.
