Came here close to closing on a Tuesday night. It was very clean inside and they have so many table options. the fried egg rolls and the pork fried rice was amazing! Very plentiful big portions, we left with lots of leftovers. The servers were very kind and made sure the food came out at a decent time and our water cups were full. It was my first time here and my friend ordered us the spring rolls that we wrap ourselves with a whole grilled fish and it was one of the best spring rolls I've had in Colorado, you have to call an hour ahead for them to cook the fish just FYI. I ordered the extra large number one Pho, the meat was also disappointing specially the tendon, I only got 1 piece and and did not see the rare steak, the only thing that impressed me is the size of the bowl, they were huge, my wife ordered the pork chop and he got pork loin slices. In San Diego my wife always ordered that if she don't find the vermicelli that she likes, it comes with the pork cake. The server that helps us is nice but we never see her again after we got our food, she is serving food to almost everybody. Very busy for one waitress. Did not seem to have much time to spare. That was just getting my seat and placing my order. The meal came from I would guess the chef in back. He actually checked in with me a couple times during my meal to ensure everything was good. Everything was good, the food was really good. I got the small beef meatball pho and the spring rolls to start. I had click to add Siracha and hoisin sauce which was extra. I got two small containers already set with a ratio of each. My ratio would've been less Siracha and more hoisin. Not sure why they just didn't get them separated. The Small size was plenty for me especially since i had the spring rolls first. Saigon Bistro is a delicious option when you're craving Vietnamese food. I saw pictures of their bun bo hue online and had the biggest craving for it. The restaurant is clean and bright. They play videos of scenic Vietnam in the background and it's lovely to watch while you wait for your food. Husband and I ordered their soft shell crab. It was fresh and fried perfectly. Deep fried foods + refreshing veggies are a wonderful combination! Husband got the combination rice plate and finished it clean. All the proteins were seasoned well. I got the bun bo hue I was craving. I wish the broth was more flavorful and the pork knuckle not so tough, but it hit the spot overall. Staff is friendly and attentive. I was really hoping to love Saigon Bistro based on the Yelp reviews but it just didn't hit the spot for me. I work near the Anchutz campus at the VA hospital and whenever I'm in a pinch I am always on the lookout for good delivery/takeout. Sadly Saigon Bistro just didn't meet that mark for me. Granted, it may have been because it was a take out order versus dine-in. My coworker and I were starving so decided to splurge on our delivery order. I ordered the Shrimp Spring Rolls and Grilled Pork Noodle Bowl while he ordered the Coconut Periwinkle Snails and BBQ Pork Mein (#86b). I thought the shrimp spring rolls were lacking flavor as they were almost bland. The shrimp itself was cut in half so it wasn't very filling either. The grilled pork noodle bowl was pretty large so I could save half to eat later. I'm glad I paid for the extra $1.25 for the sriracha/hoisin sauce (especially because it turns out we had none at work). My coworker had similar reactions to his meal, mostly saying it was just alright. Given the prices of almost $20 per entree, I was hoping it would be more of a flavorful dish. It came in a hot iron plate and the sauce on the snail taste and smell really good. We order a pho combination and the broth was actually good. It wasnt too water down. Adding the onion oil to the dish made it taste much better. The bun bu hue was actually not that delicious. It was very water down and it just taste like spicy water down broth. I do like the fact that it comes with a good amount of meat. We also got the rice with grill meat (shrimp, pork, chicken and beef) it was so yummy. I would definitely get that. The portion for that is amazing! The meat was sweet but it still tasted savory as well. The last one we got was the lo mein and it didnt taste that good. The wife had some fried pork egg rolls. Nice touch on the tempura batter on the egg rolls instead of wrappers .Nice and crunchy on the outside and warm inside. And we had some crab wontons. Sweet and creamy. My Pho Bowl had a nice portion of rice noodles , a nice portion of meat. The broth had a good taste,slightly salty, not greasy. Noticed this restaurant since Pacific Ocean Marketplace opened more than 10 years ago when it was called Kim Ba, but for some reason, have not eaten here until recently. Comparing to many Vietnamese restaurants offering primarily pho and rice plates, was pleasantly surprised by the wide selection of other Vietnamese staples normally only expected to find on South Federal. I have found my spot for Bun Bo Hue, and after 3 years in Colorado, I have found authentic and great tasting Banh Canh. It's a hearty seafood soup filled with crab meat and a variety of shrimp and fish cakes. The thick tapioca noodles were a great vessel for the toppings and soup. The broth is filled with garlic and dried onions which adds so much to the umami profile! I had those delivered the day we experienced negative 0 temps and it was to die for, well needed for Colorado's winter! This unassuming spot tucked in the strip mall next Pacific Ocean Marketplace has some of the best (if not the best) Vietnamese food I've ever had! The restaurant is clean, open, and we have never had to wait for a table (despite the occasional rush of customers during prime dinner hours). They have an authentic menu with all of the Vietnamese classics, including some rare dishes I typically don't see. My go-to is always the Combination Rice Plate and my husband always enjoys their Vermicelli noodle bowls. But their Combination Rice Plate - OMG - is outstanding. All of the meats are perfectly seasoned and grilled (with grill marks and perfect char), and exploding with flavor! Specifically the shrimp and pork. And the grilled pork is a bone-in pork chop!! I'll go back just for that bone-in pork chop. It's the best Vietnamese grilled pork I have ever had. The Vietnamese egg rolls are also probably the best I've ever had. The staff is always very friendly, hospitable, and attentive. And for anyone reading, I must add this - please be patient and graceful with the waitstaff, especially during these difficult times we are still climbing out of. The staff may be short-handed and they are doing the very best that they can!
