Wow, this was by far the worst experience I've ever had at a sushi restaurant. The service was horrid. Upon walking in, the hostess was extremely rude. I honestly wonder if she enjoys working there because her attitude, body language, and tone of voice says otherwise. She even rolled her eyes when i asked for a table near the window instead of in the back. Um, sorry I didn't want to sit near the toilets?! The waiter was slow. He also was very spaced out. Every time i asked a question about the menu he gave a very vague response. Which brings me to my biggest issue! I ordered something that i did not like, an i even inquired about with the waiter. I am fortunate to have been able to travel throughout the US and sometimes outside the US and have eaten at restaurants throughout. Sushi chef Andy is the guy I want to sit and eat with. I travel to Houston 2-3 times a year and usually stay in the Galleria area, near Sage 400. I have now been to Sage 400 about 4 times, over 2 years. Andy sees me when I walk in and always greets me with a smile, even though it may have been 6 months since my last visit. He always remembers my preferences and makes recommendations perfect for me. Although we have really enjoyed this restaurant in the last, last night changed our minds. We stopped in for several appetizer dishes. One of them was spicy edamame. We couldn't eat them they were so spicy hot. We asked the waiter what made them so hot and he said Serrano peppers. Nothing in the menu described the Serranos. These are very hot peppers. We cleaned every plate but the edamame. We politely asked if they could remove them from the bill. The waiter had to call a Mgr over. He argued with us that these were the most popular dish.i finally said fine I'll pay for them, but I wasn't happy with this. This place must be going out of business soon anyway if the OWNER has time to pick an argument with me on a Friday night at 6PM for not sitting in my "assigned seat" (outside in 100+ degree heat) while I was minding my own business while waiting a whole 5 mins at the EMPTY bar (empty bar on a Friday at 6pm Red flag right there) for an order of edamame Owner said 'theres paying customers and non-paying customers' Um, how do you say excuuuuuse me in Japanese? Sure, my order was *only $77* and it was for someone else. Should that matter? Especially when the place isn't busy I'm still the one schlepping it and swiping the card and spending the money! Shouldn't matter. You should treat all patrons equally. Doesn't matter elsewhere. Only when the owner is a nut job. Heck, sometimes other places have offered me a complimentary ice water, free lemonade, tea, a cookies, brownie. I would never expect that or demand it. Some people are just great at service and it comes naturally. Other people need to get the hell out out of the service industry. The girl at the front was rude and argumentative, too, like it's ok to be rude to patrons since your boss does it. The owner started up with me again and I told him your policy is stupid and I don't want to argue with you and I'm leaving so he yelled "GOOD, DON'T COME BACK!" Can you imagine how a restaurant can stay in business asking people to not come back over something so silly? I can't imagine how he'd treat you if you had a real complaint! Sorry to inconvenience you with my presence in your establishment! So I'm asking my friends to not patronize this place until perhaps they are under new management. Sushi restaurants are a dime a dozen nowadays and it is rare to find a Japanese restaurant that differentiates itself among an ocean of high-priced restaurants basically serving the same raw fish on rice. Besides the excellent traditional sushi repertoire Sage400 also offer a myriad of unique fusion dishes that makes it a standout. The beautiful and gracious owner and hostess, Angie, was super attentive and recommended a sample of their specialties. The spicy edamame served with a mixture of spices and thinly sliced jalapeño chili had a real kick to it. That was followed by a beautifully arranged hamachi with taro chips: citrus marinated yellowtail with diced yuzu (Japanese grapefruit), Asian pear, and crispy taro chips. The flavors are complex yet delicate and the taro chip's crunchiness gave the dish an extra dimension. The thinly sliced Japanese red snapper is arranged to imitate the infamous Fugu (the deadly Japanese pufferfish known as a supreme delicacy for the thrill-seeking gourmands). The thin slices dipped in a light ponzu sauce with the perfect acidity really reminded me of the real Fugu sans the slight tingling sensation in the fingers and toes one gets after a bite. The foie gras nigiri was simple yet sublime. The foie gras was gently seared then atop a small strip of sushi rice and glazed with a light teriyaki like sauce. The foie gras melted quickly in my mouth and the rice helped maintained a bit of remanence of the earthy flavor from the foie gras. The award-winning miso Chilean sea bass had to be best I've had. The miso Alaskan cod at Nobu couldn't even come close. Unlike most miso marinated cod or sea bass, there is no overpowering flavor of the fermented soybeans. Instead, there is just enough of a hint to remind me of its flavor. The generous piece of fish was masterfully baked with slightly charred and caramelized edges that gave the buttery fish a complimenting crunchy texture. The pièce de résistance of the evening was the Pork Belly Confit, which is a tower of tender and moist miso braised pork belly, sautéed mushrooms, sunny side up quail egg and crispy rice cake. The slight sweetness accentuated the fullness of pork belly. The pan fried rice cake had a crispy crunch on the outside without the tough chewiness one often finds with grilled or deep fried rice cakes. The flavors and textures made this my favorite dish. To complete the meal, Angie recommend the Ama Ebi Miso - miso soup with a large Santa Barbara spot prawn. Worst Sushi? Yes. Ok as far as decor, it's your typical upscale sushi joint. It's a bit small so it compensates via mirrors. The service is slow. We waited forever for our food. While we waited we noticed that sushi chef was drinking a beer. At first, I was laughing cause I thought that was interesting that it's a chilled working environment. But when I tasted my rolls I was like maybe he needs to drink less and work more. First off, the rolls were not packed tight. Thus fell apart as you picked it up. We have some good sushi joints in Austin, all of which I frequent as often as possible, but day-umn. Sage 400 makes me say "damn" as a two-syllable word. It's that good. I got to sample a pretty good cross-section of the menu, although I found myself fervently wishing I could attach a temporary second (and third) stomach so I could try everything. The Fire Dragon Roll (fried crawfish tails with wasabi'd roe) was wonderful. We also tried the raw beef roll, which sounded amazing in theory, but was probably my least favorite part of the meal. The nigiri was all terrific - exceedingly fresh and beautifully prepared. Scallops, tamago (sweet egg), salmon, yellow tail, uni (sea urchin), ikura (salmon roe), and a Japanese snapper were all sampled; all remarkable. Perhaps the highlight of the meal, however, was the monkfish liver. Served only as sashimi, it came with four large pieces and was absolutely heavenly. It's like mixing the lightness and flavor of sushi with the texture of liver...impossible to describe, but so worth a trip across your tongue. Pork Belly Confit (5/5) mushroom, quail egg, fried rice cake, and thin slices of perfectly cooked pork belly. ALL MY FAVORITE THINGS IN ONE. Miso Chilean Seabass (4/5) I had this at peska seafood and I must say that sage does it much better. The Seabass is fluffy and glazed with sweetness, portion size is tapas style. Usually wonderful place to dine at as my mother is a regular at this establishment however, this past mother's day was an extremely disappointing and downright awful experience. Initially, everything was going fine our server was new yet kind and tried her best to make it an enjoyable experience. It wasn't until towards the end where "Ann Ann" (apparently the owner's daughter) began to DEMAND us to leave as they had started to close. Mind you, I have worked in fine dining establishments and never experienced or even thought about rushing any guests to finish their meal and leave just so I could get home quickly. Usually my family and I are quite understanding and accommodate industry people as much as possible however, "Ann Ann" decided to stand at the door and kept insisting it's time for us to leave (before they even got our to-go orders and all we had left were our drinks to finish which they so rudely decided to make us take to-go with in SOUP containers) It was an extremely extremely rude experience and to top it off we were barely finished signing the bill and as we got up to leave (with "Ann Ann" STILL standing and staring at us 2ft away) she decides to scream into the restaurant "Now we can finally leave guys!!" ... Honestly I have never experienced SUCH horrible service and as someone who works in fine dining I am incredibly disheartened as well as appalled by this girl's behavior towards her customers. I came here late on a weeknight and this place was pretty busy. I guess I shouldn't be surprised with all of the out of town visitors looking for a fancy sushi restaurant to visit near the galleria. Although this wouldn't have initially been my first choice, I'm now glad I came to see the type of atmosphere and how good the food was here. We ordered escolar and mackerel nigiri, Hamachi carpaccio and soft shell crab tempura as appetizer, and the Sage and Ruby rolls. The Hamachi is truly thin sliced as the menu indicates and is a great appetizer. The soft shell crab was average sized and fairly priced for a fancy establishment such as this. The weakest items I tried were the nigiri, they didn't wow me by any means. Both rolls were very flavorful since they had so many fish and sauces to go with them. Either if you try the Chef's Sushi or Sashimi special, or just some of the innovative and interesting rolls, you will want to go back for more. My current "thing" at Sage400 is to taste all the staff's "special rolls", they all have them, and they're on par with what's already on the menu. Aaah, and I almost forgot, the people there are just great. Whether you sit at the sushi bar and talk to the Chefs, at the bar-bar with Tara and Rocco, or anywhere else, you get served by attentive and personal staff. As an appetizer, I would highly recommend trying out the Crawfish tails in a light mayo/citrus sauce. You can never go wrong with ordering the Tiger Eye, Scorpion, and of course, their Miso Soup. But, it's a great place to come for date night and it's dimly lit, trendy and has intimate table setups. It tasted fishy so I wondered whether it was the yellowtail or salmon that was not fresh. Sashimi cuts of escolar and red snapper were excellent. We had the mochi ice cream for dessert. Checked this place out with a few friends on Christmas Day to grab a holiday drink and some light bites. We plopped ourselves down to the bar and ordered a Sapporo beer and the Scorpion Roll. Our bartender was very friendly. She knew our party liked to talk so she told us she wouldn't interrupt and for us to just holler if we needed anything. The sushi was pretty good but then again I've never been to Japan to know the difference between good and bad sushi. I'm grateful that they were open on Christmas Day but my mind wasn't blown away. We come here mainly for the miso Chilean sea bass (appetizer) and hamachi carpaccio. Third time here in total of 3 years and they're still consistent. The sea bass is marinated in miso and baked to golden brown. It's so soft and buttery. There's also a entree version that's bigger and comes with vegetable and soup or salad. The hamachi carpaccio is a thinly sliced yellow tail with jalapeños and cilantro in yuzu soy sauce. Pros: service was good. Atmosphere was nice and well set up. Cons: the menus had a slight odor. Immediately upon our arrival (bigger party of nine 22 year olds) the manager was giving us extremely rude looks and assuming we were underage, not smiling at anyone, which made everyone uncomfortable. The menu contains rolls that have no description and while the service was OK, the waiter wasn't fully familiar with what was in the rolls which was odd for a restaurant charging $25 for a roll. We done at Sage at least twice a month. We love the SP and Roxy rolls! The food is consistently delicious and the service is almost always really good. Only complaint, the prices are high and the restaurant is so cold, our entire family always wears a jacket in the restaurant. Even with a jacket, we are frequently uncomfortably cold. read more
