This was our last restaurant that we had the pleasure of visiting in Canmore, and we definitely ended up saving the best for last. I chose this restaurant as the spot to celebrate my boyfriend's 30th birthday because I wanted it to be special and it definitely delivered! First off, the service at this spot is impeccable. They truly hire professional, genuine, skilled, and crafty people here who really care about food and the experience. It was very telling and we wanted to highlight that observation. Secondly, the cocktails. During our trip, we were lucky to have Josh as our bartender and not only did he truly know the ins and outs of the liquor and the ingredients that he used, you can tell that he has really perfected the craft at creating a beautifully presented cocktail, and this was already noticed by the way he cuts an orange. The cocktails here were basically like an art piece and had some of the most creative presentations I've ever seen. My cantaloupe island cocktail even had an herb popsicle in it and the after noon cocktail had mint sorbet incorporated into the presentation too, which was none like I've had before. Food-wise, they start you with a complimentary palette cleanser, which was a mini donut topped with fennel and caviar, which was exquisite and enhanced the experience. We then chose the foie gras, root salad, and mackerel as our smaller dishes and the duck and cod as our main course dishes. I swear to you.. each dish that we tried, we looked at each other in awe because we were baffled that something could taste that wonderful and look so aesthetically pleasing at the same time. Our favorite was the cod main course, which happened to be the newest menu item at the time. We also got the baked alaska for dessert since we wanted to complete the entire course, and that was beautifully presented and flavorful as well. The main chef/owner, Danny Beaulieu, and his team absolutely killed everything on this menu, and we were even able to meet with the owner and to speak with him during our visit here. It was a truly lovely experience and we are big time rooting for the restaurant's success. We are really thankful that we were able to experience Ankor and appreciate the love, care, and effort put into this spot. We will definitely see you again and hope to be back soon! :)

The food quality, consistency, and service were exceptional every single visit. Our server, Hera, delivered service that genuinely surpassed what we've experienced at multiple Michelin-starred restaurants. Attentive without hovering, warm, knowledgeable, and effortlessly professional, she made each meal feel special and memorable. On a honeymoon, that level of care matters, and she nailed it. The food deserves its own spotlight. The Eggs Benedict is the best we've ever had. Perfectly executed, balanced, rich without being heavy, and clearly made with intention. The Churro French Toast is unforgettable: indulgent, crisp, soft, and expertly seasoned. Every dish felt thoughtfully crafted, not just "good for a hotel restaurant," but genuinely outstanding by any standard. We regularly dine at Michelin-recognized restaurants, and while Juniper Bistro is not Michelin-listed, the food quality here was better than many Michelin meals we've had. That's not hyperbole, it's an honest comparison.

We then shared a Waldorf salad, which was refreshing and nice. Then we both selected red wine varietals grown in Canada. I had a Cabernet/Merlot blend which was super great. Would've never guessed it was from Canada. Next, My wife enjoyed a Pinot Noir that was light and complimented our entrée perfectly. Our entrée was the fillet and prawns served over a garlic mashed potato. This is an absolutely extraordinary dish. We shared it and it was just enough for two people. It is a full meal for one person. The filet temperature preparation was perfect. The prawns were extraordinary, and the garlic mashed potato made you curl your toes! Then we closed the evening with the melted chocolate soufflé, which was divine. Here's the one thing that they missed and to me it's an important miss. They use an automated system for taking reservations. And it kept asking for my name to which I said "Chris" and the automated system kept asking me what's your name!? So it asked hey fourth time and in my frustration I got playful and I said "Big Daddy." And it happily received my name and took my reservation. And then asked if there was any special occasion and I said yes my wife and I are celebrating our anniversary. I get that it may not seem normal to say "Big Daddy party for two". So I'll kind of let that pass because neither front door or upstairs Host was willing to ask. But what I don't like that was missed was our anniversary wasn't acknowledged. I was a server for years, and every host gave the server some type of chit or note to let them know if there is a special occasion. We specifically selected a higher end restaurant for anniversary. So somewhere in there, even if you weren't brave enough to say "Big Daddy for two." Someone still should've checked if you were celebrating any special occasion to which we were. Our anniversary. We started the evening with a Maple Old Fashioned, which was perfectly balanced and set the tone for the night. For starters, we ordered the Fior Loaf Buttered Cheese Bread, which was warm, well-seasoned, and absolutely delicious.
