We got the steak sampler. One was prime rib, another dry aged, another was grass fed. I kind of wish they had made the samples by cut of the cow. For example rib eye vs NY strip, etc. Nonetheless the most tender was definitely the prime rib, with a second being the dry aged. I was expecting the single plate to not be enough food for us but apparently it was plenty. It was the first time I ever took home left over steak. However that might be because we got filled up on coffee shop drinks and ice cream from that Cow place. I recommend getting a seat on the balcony so you can see the Mountain View's. I really like Chuck's and I've recommended it to people visiting Banff. I will note, however, that the restaurant had suffered a notable step down from 2020 pre-covid to when I visited most recently for NYE in 2024. Had an amazing dinner at Chuck Steakhouse in Banff. We started with garlic bread and two espresso martinis, which were a great way to kick off the meal. For the appetizer, we had steak tartare paired with a beautiful Pinot Noir, everything was delicious. Best ceaser salads here! Authentic alberta beef. This place is a staple chain from Calgary. It specializes in alberta beef and it does it perfectly. The steak here is the best and it's always a treat because steak in alberta is the best in the world (except for japan). My must order is the ceaser salad because they make it uniquely with anchovies and it's so delicious and not overwhelming at all! Of course I love the steak but the seafood is delicious as well. We ordered the Taste of Alberta to share, which came with 3 7 oz striploins. Wagyu, Benchmark, 45 Day House Dry Aged were the 3 methods of preparation. The meat was served with a side of potato gratin and a side of broccolini. The wagyu cut was our favorite, followed by the 45 dry aged and then the benchmark was our least favorite. The potato gratin was really delicious and I'm glad they served the broccolini to break up the heaviness of the meal. The service was excellent and the ambiance reminded me of being at a steakhouse in Texas. We ordered some cocktails and they were both very well made. One of the popular spots for Steak in Banff, noted by our tour guides. So we looked on their website and was able to make a reservation for 4 day of on a Thursday night, made the reservation around 5pm for 845pm. After a long day of touring around Banff we were definitely hungry. They say that the Taste of Alberta (3 cuts of meat) are good for 2 people, since we have a party of 4, instead of ordering 2, we just ordered more sides and appetizers, which our server also suggested. I was the only one that ordered the most popular cocktail, I forgot what it was called but I think it had courvassier/cognac in jt, was pretty good! We started with the Caesar's salad that they make right at your table, probably one of the best Caesar salads that I've ever had. So many ingredients all made table side, it was impressive! We then had our baked scallops, oysters Rockefeller (baked oysters), and crab cake. All so good! Then we got our Taste of Alberta, which came with the bench cut, wagyu, and dry aged. We cut them up into 4 pieces each, and there was some au jus sauce, broccolini, scalloped potatoes, and mashed potatoes. We ate each of them in the order of bench, wagyu, and dry aged. And we thought the taste got better and better each time. So the all time favorite was the dry aged, then wagyu, then bench. We ordered them medium rare and it came out perfect. I personally also liked the wagyu, and also I prefer my steak without sauce because it changes the taste. There was a piece of lemon that is to be put on the fat to tenderize it and give it a different flavor. Finally we finished with their most popular dessert; the mud pie bomb which is on top of ice cream, so good! Like any steak house, it's a little dim inside and this restaurant is located on the second floor. Service was awesome, the bathrooms are located out on the front. Located downtown so street parking is limited and there are parking lots close by. I'd totally recommend this place if you're looking for steak while visiting Banff. read more

We found Chuck's Steakhouse through both Yelp and Google searches in preparation for our recent trip to Banff. When they claim to have the best beef in Alberta... we believe it! Located on an upper level, in a very cozy space, and near public transit, Chuck's Steakhouse was some of the best food we had in Banff. We ordered the ribeye, potatoes gratin, and asparagus. And the star of the show (besides the ribeye, duh) was the tableside caesar salad! The flavors were incredibly balanced and so, so fresh and delicious. During our 2 visits we ordered Canadian wagyu ribeye, the regular rib eye, beef ribs, scallop potatoes, mash potatoes, mud pie, broccolini. - The wagyu isn't as fatty as the Japanese wagyu but still was very tender and sweet. - The rib eye steak was also excellent and tender. - The beef ribs were fall off the bone good. We had a reservation for a celebratory dinner at Chuck's Steakhouse after the Banff Marathon/Half Marathon/10K. Chuck's is part of the Banff Hospitality Collective (tons of great restaurants and breweries/bars) and located on the second floor. Our server, Julia, was great and explained the menu in full. We ultimately opted for the Beef Dumplings for our appetizer and split the savory the Alberta Beef Tasting for our entree. The Beef Dumplings were ok but not memorable despite being served with shrimp, mushrooms, truffle oil, and sake jus. If I return to Chuck's, I would try another appetizer selection such as the steak tartare, oysters, or crab cake. Now, the Alberta Beef Tasting - yum, yum, yum. The Taste of Alberta came with a Benchmark steak, 45 day house Dry Aged steak, and my favorite - the Wagyu - plus two sides. We got the mushrooms and mashed potatoes. I loved the mashed potatoes! We ordered all of the beef to be prepared rare. The presentation was marvelous and the taste was exceptional, particularly the wagyu and dry aged steak. While we passed on dessert, all in all the meal was fit for a runner ;) I loved the atmosphere, the food, and our server was attentive and informative. 1 star for subpar (service) experience with this place; another star for the food. My parents were visiting Banff and I wanted their anniversary to be extra special so I made a reservation for them a week in advance over the phone. I mentioned that my parents will be celebrating their anniversary there and he kindly let me know that they would seat them at a nice table and send out a dessert at the end of the meal. I also called the day of to make sure the reservation was all set and to provide them with my credit card information so that they could charge the bill to my cc. Post-meal, my parents received the bill and were confused because I let them know that the meal would be taken care of. Long story short, I had to call the restaurant and found out that they mistyped a number in and let me know that they would call me again if anything went wrong. I also confirmed on that same call if dessert would be coming out (as my parents were planning to just leave). The gentleman (who I believe was the manager) confirmed that they would be bringing it out for them. Anyways, I found out later that my card was declined (because I forgot to set up international approvals which was totally my fault) and that dessert never came out. I chose this place specifically wanting it to be a special night for my parents but oh well. I think the miscommunication regarding the dessert was kind of embarrassing bc I had kept telling my parents to sit and wait as something else was going to be coming out vs the waitress telling them they needed to order it separately lol As for food, they said 2 out of the 3 steaks from the Taste of Alberta sampling were good. On our last night in Banff, my wife and I decided to embrace our inner carnivore and check out Chuck's for some Alberta beef. We looked through previous reviews and after some debate, decided against the taste of Alberta and went for 2 different cuts: ribeye and t-bone. But before that, we settled on tartare, beef dumplings and the table side caeser. All 3 starters were good but the stand out was definitely the caeser. Our server, Julia was quick to assemble the dressing and added the perfect amount of each ingredient to make it not only a delicious but unique caeser salad with a bit of tanginess that really shown through the richness of the cheese. Moving onto the entrees each steak was cooked perfectly as requested. The benchmark was rare but although it had every bit of the sweet and savory flavor akin to Alberta beef, it was a bit more chewy than expected, resulting in a extensive jaw workout. However, the dry aged T bone was epic in flavor and better in texture. 45 days of aging brought a nice, mellow flavor unlike the nutty sometimes bleu cheesey flavors you would normally get in a 30+ day dry aged steak. I would've eaten the whole thing if I was not purposely saving room for the dessert. As I mentioned earlier, we made an effort to save room for dessert after reading about the cheddar crumble apple a la mode. Unlike most diners or places that make apple pie this example was perfectly seasoned and not drenched in syrupy sauce that would overwhelm the dessert. Having the cheddar crumble also gave a nice contrast in flavor and texture to the baked apple while the ice cream rounded everything out nicely. In between the joyful bites of food and sips of wine, we were thoroughly enjoying not only the service but the views as well. Our timing was lucky to say the least as our dinner started out with our view being completely obstructed by rain clouds which later parted as the night wore on. Even then, the space at chucks was well kept and very classy, while still maintaining a rustic steakhouse vibe as well. Although we were a little bummed we did not get seated at a table on the immediate side of the window there's really no bad seat as the view can be easily experienced by all seats in the restaurant.
