Great dinner for our group of 4! We shared the tableside Caesar salad, dry aged T-bone, ribeye, and a few sides. Everything was delicious. Reserved on Good Friday for a birthday dinner. Ordered two of the $79 fix price combo that included an appetizer of French onion soup, beef tar tar or beef dumpling. The main was a 6 or 10oz steak or upgraded ribs. Appetizers were mash potato, carrots and cabbage. And dessert was crème brule or a chocolate mud pie that was a chocolate ice cream. I dunno if this is a Banff thing but most restaurants celebrate bdays in some way- I didn't see it really celebrated here. We were travelling celebrating a joint birthday my partner and I. It's a bit difficult to right this review. We had high expectations based on all the glowing reviews on all platforms and we really wanted to love the place. We traveled to Banff from Texas. I'm not a foodie by any means, but we have a lot of great steakhouses in Texas, so I know this food category. Unfortunately, this is not a great steakhouse. Tastes vary, of course, so I understand why plenty of people really like Chuck's. To me, you have to judge restaurants against their peers. Outback or Saltgrass are not competing directly with prime steakhouses. They serve solid steaks at an appropriately lower price point. I've been plenty happy with the steaks I've had at such restaurants and found the quality right in line with what they charge. However, the food and experience are not close to a true prime experience which you certainly pay for. To me, it's worth it when you really want a high-end steak. The problem with Chuck's is they say they're prime. They look, and definitely charge, accordingly. But in quality, they fell short of an Outback or Saltgrass in our experience. It's a really nice, fashionable restaurant. The martinis were really good as was the Caesar salad. I really liked our waiter. We were off to a great start. Unfortunately, it fell apart from there. We ordered different steaks, but both requested medium rare. Both arrived at our table quite overcooked. Our waiter immediately agreed and took them away to be replaced. In the meantime, our mac n cheese came. I'm at an utter loss here. Partially overcooked pasta that looked like it was in chicken broth with a little cheese and...is that a square of feta? What's happening? It's like an unfinished, experimental take on mac n cheese that should've never left the test kitchen. Also, don't try to reinvent mac n cheese. We know what we're doing with this dish. Just make a really good one. Chuck's mac n cheese wasn't worthy of the name. Given the kitchen's mistake, you'd think our re-fired steaks would be out soon. Nope. It takes 20 minutes. My steak was cooked far better if a bit uneven. It was a decent steak. Like one I could get at Outback for 60% less. My friend wasn't so lucky. He got a different cut and it looked like they tried to represent the full cook temp spectrum on one piece of meat. I've never seen this before. Now we're not even at Outback. I don't know where we are. My guess is a lot of the high ratings are from tourists that are traveling from regions without high end steak restaurants and, to them, this is a great steak amidst a beautiful environment and nice vacation. Likely others are from diners getting something other than steak. Chuck's may serve a tasty burger or piece of fish. That's great. I want people to have such good experiences. Please feel free to disregard this review if you're confident your taste and preferences don't match mine. This is a warning to prime steakhouse fans. Bypass Chuck's when visiting Banff. We had plenty of great food after this first night disaster. I felt bad for our waiter. I felt bad for us. I felt bad for the mac n cheese. Chuck's, you got some work to do. read more

We got the steak sampler. One was prime rib, another dry aged, another was grass fed. I kind of wish they had made the samples by cut of the cow. For example rib eye vs NY strip, etc. Nonetheless the most tender was definitely the prime rib, with a second being the dry aged. I was expecting the single plate to not be enough food for us but apparently it was plenty. It was the first time I ever took home left over steak. However that might be because we got filled up on coffee shop drinks and ice cream from that Cow place. I recommend getting a seat on the balcony so you can see the Mountain View's. I really like Chuck's and I've recommended it to people visiting Banff. I will note, however, that the restaurant had suffered a notable step down from 2020 pre-covid to when I visited most recently for NYE in 2024. This change/dumbing down was apparent at all of the restaurants in Banff. It definitely meant that some of the higher-end stuff previously found at Chuck's was no longer there. Had an amazing dinner at Chuck Steakhouse in Banff. We started with garlic bread and two espresso martinis, which were a great way to kick off the meal. For the appetizer, we had steak tartare paired with a beautiful Pinot Noir, everything was delicious. Best ceaser salads here! Authentic alberta beef. This place is a staple chain from Calgary. It specializes in alberta beef and it does it perfectly. The steak here is the best and it's always a treat because steak in alberta is the best in the world (except for japan). My must order is the ceaser salad because they make it uniquely with anchovies and it's so delicious and not overwhelming at all! Of course I love the steak but the seafood is delicious as well. Salmon here is pretty stellar if you want a healthier lighter choice. My faves also are the platters and the special 3 course they have seasonally. Always a treat. We came here for a nice dinner before driving back to Calgary, but we def wanted to have a good piece of steak before leaving. We ordered the Taste of Alberta to share, which came with 3 7 oz striploins. Wagyu, Benchmark, 45 Day House Dry Aged were the 3 methods of preparation. The meat was served with a side of potato gratin and a side of broccolini. The wagyu cut was our favorite, followed by the 45 dry aged and then the benchmark was our least favorite. The potato gratin was really delicious and I'm glad they served the broccolini to break up the heaviness of the meal. The service was excellent and the ambiance reminded me of being at a steakhouse in Texas. We ordered some cocktails and they were both very well made. One of the popular spots for Steak in Banff, noted by our tour guides. So we looked on their website and was able to make a reservation for 4 day of on a Thursday night, made the reservation around 5pm for 845pm. After a long day of touring around Banff we were definitely hungry. They say that the Taste of Alberta (3 cuts of meat) are good for 2 people, since we have a party of 4, instead of ordering 2, we just ordered more sides and appetizers, which our server also suggested. I was the only one that ordered the most popular cocktail, I forgot what it was called but I think it had courvassier/cognac in jt, was pretty good! We started with the Caesar's salad that they make right at your table, probably one of the best Caesar salads that I've ever had. So many ingredients all made table side, it was impressive! We then had our baked scallops, oysters Rockefeller (baked oysters), and crab cake. All so good! Then we got our Taste of Alberta, which came with the bench cut, wagyu, and dry aged. We cut them up into 4 pieces each, and there was some au jus sauce, broccolini, scalloped potatoes, and mashed potatoes. We ate each of them in the order of bench, wagyu, and dry aged. And we thought the taste got better and better each time. So the all time favorite was the dry aged, then wagyu, then bench. We ordered them medium rare and it came out perfect. I personally also liked the wagyu, and also I prefer my steak without sauce because it changes the taste. There was a piece of lemon that is to be put on the fat to tenderize it and give it a different flavor. Finally we finished with their most popular dessert; the mud pie bomb which is on top of ice cream, so good! Like any steak house, it's a little dim inside and this restaurant is located on the second floor. Service was awesome, the bathrooms are located out on the front. Located downtown so street parking is limited and there are parking lots close by. I'd totally recommend this place if you're looking for steak while visiting Banff. read more

We were seated by the window overlooking the street and it was really cozy. The steakhouse gave some western cowboy vibes and I loved it! The staff wore cowboy hats and that made us want one too. We found Chuck's Steakhouse through both Yelp and Google searches in preparation for our recent trip to Banff. When they claim to have the best beef in Alberta... we believe it! Located on an upper level, in a very cozy space, and near public transit, Chuck's Steakhouse was some of the best food we had in Banff. We ordered the ribeye, potatoes gratin, and asparagus. And the star of the show (besides the ribeye, duh) was the tableside caesar salad! The flavors were incredibly balanced and so, so fresh and delicious. We had a reservation for a celebratory dinner at Chuck's Steakhouse after the Banff Marathon/Half Marathon/10K. Chuck's is part of the Banff Hospitality Collective (tons of great restaurants and breweries/bars) and located on the second floor. Our server, Julia, was great and explained the menu in full. We ultimately opted for the Beef Dumplings for our appetizer and split the savory the Alberta Beef Tasting for our entree. The Beef Dumplings were ok but not memorable despite being served with shrimp, mushrooms, truffle oil, and sake jus. If I return to Chuck's, I would try another appetizer selection such as the steak tartare, oysters, or crab cake. Now, the Alberta Beef Tasting - yum, yum, yum. The Taste of Alberta came with a Benchmark steak, 45 day house Dry Aged steak, and my favorite - the Wagyu - plus two sides. We got the mushrooms and mashed potatoes. I loved the mashed potatoes! We ordered all of the beef to be prepared rare. The presentation was marvelous and the taste was exceptional, particularly the wagyu and dry aged steak. While we passed on dessert, all in all the meal was fit for a runner ;) I loved the atmosphere, the food, and our server was attentive and informative. We came here to try the Canadian wagyu. It was so good we went back 2 days later while in Banff. During our 2 visits we ordered Canadian wagyu ribeye, the regular rib eye, beef ribs, scallop potatoes, mash potatoes, mud pie, broccolini. - The wagyu isn't as fatty as the Japanese wagyu but still was very tender and sweet. - The rib eye steak was also excellent and tender. - The beef ribs were fall off the bone good. The entree had 3 big beef ribs and fries. The hand cut fries were delish! - The mash potatoes were so addicting. 1 star for subpar (service) experience with this place; another star for the food. My parents were visiting Banff and I wanted their anniversary to be extra special so I made a reservation for them a week in advance over the phone. I mentioned that my parents will be celebrating their anniversary there and he kindly let me know that they would seat them at a nice table and send out a dessert at the end of the meal. I also called the day of to make sure the reservation was all set and to provide them with my credit card information so that they could charge the bill to my cc. Post-meal, my parents received the bill and were confused because I let them know that the meal would be taken care of. Long story short, I had to call the restaurant and found out that they mistyped a number in and let me know that they would call me again if anything went wrong. I also confirmed on that same call if dessert would be coming out (as my parents were planning to just leave). The gentleman (who I believe was the manager) confirmed that they would be bringing it out for them. Anyways, I found out later that my card was declined (because I forgot to set up international approvals which was totally my fault) and that dessert never came out. I chose this place specifically wanting it to be a special night for my parents but oh well. I think the miscommunication regarding the dessert was kind of embarrassing bc I had kept telling my parents to sit and wait as something else was going to be coming out vs the waitress telling them they needed to order it separately lol As for food, they said 2 out of the 3 steaks from the Taste of Alberta sampling were good. They noted that the Benchmark was a little too tough and chewy for their liking but overall it was a good meal. My parents don't eat much to begin with so this was definitely enough portions for 2.
