Nicely crispy, juicy and flavorful filling. 5 stars! I ordered the bún bò huế, which was amazing. Fat, tender blood cubes, flavorful broth and a lot of fresh veggies. It was very good. My partner got a stir fried dish, which he also liked. It was very busy when we were there, and I really felt for the one person who was serving everyone. We came in around 7 and it was pretty quiet with ample seating! The staff was sweet and chatted with us how today was strangely empty, usually around 7/dinner time she'd be running around and the place would be packed, haha. We were given water and menus, and chatted some more with the two staff members and ordered the pho dac biet larges. I thought the broth was nicely umami with a nice comforting sweetness from the onions in the broth. There was also a good variety of meat given in the bowl. The ratio of meat to noodle to broth was pretty spot on here. I ordered Egg Rolls (Cha Gio) which were nice and crispy, the Potstickers (Banh Xep) which were fried and had a pretty decent filling and OMG the Pho! I ordered a large Pho (Pho Tai) which was loaded with meat and was large enough to split. The broth was very flavorful and I ordered the pickled carrots (Carot Chua Ngot) which I dumped into the Pho. To top it all off I ordered the Strawberry Lemonade (Chanh Dau) with rainbow Cong Jelly and it was delicious! Not too sweet, very refreshing and had chunks of strawberry in it! Ruby Pho is in an area I seldom frequent, but it was a very cold day and the mood was right... and well, I just kind of stumbled in this interesting place located near the intersection of Fourth Plain Road and 117th Ave. There's loads of parking in the giant shared parking lot of the shopping center. There's not much to look at inside. It's a pretty sparse interior lacking in any real design influence. There's some modern looking 3D paneling on one of the walls, and aside from some tables and chairs, not much else is going on. This isn't a leisurely meal with friends kind of place; I wouldn't feel comfortable just hanging out. Get your food and get out. In fact, the stoic grandfatherly waiter helps set the tone. I actually think he grunted a vague response once when I asked for chopsticks and a refill on my water. The guy is busy though, so I'm not complaining. I watched him as he flurried around the restaurant and he seemed to do an excellent job serving the patrons. My bowl of Pho Tai was flavorful, not too fatty or salty, and the noodles were served just a tad underdone... just how I like them! I'd give Ruby Pho high marks for their soup and reliable service, and a so-so on the mood and ambiance. The soup hit the spot and that's all I cared about. read more

Stoppedvin for pho tai and was rewarded with clean broth, fresh ingredients, and great flavor. The only thing lacking was the beef. The portion was quite small and had cooked quite a bit in the bowl by the time they brought it out. I do prefer the beef to be a bit rare and sometimes order it rare on the side. Despite it being pretty full at the time, and there only being one hostess / waitress, service was friendly and fast. The menu is wide, and customizations or special requests are happily accommodated. The food was very tasty, fresh, and portion sizes were on the generous side, especially considering the low-ish prices. I was also very happy to see that beverages with chia seeds were on the menu. Before going, I looked at the menu & saw they had the salted plum lemonade. I was so excited as not too many places serve it as it is a process to make. Ordered it & it did not disappoint. This is a small little place. We ordered vegi salad rolls and a chicken sandwich. The salad roll cakes with peanut sauce it was ok although the peanut sauce was a bit thin. The sandwich was good beware the they have jalapeño pepper on them. They also have picked carrots on the table. I looked over to see a customer eating right off the spoon in the jar. What a menu! "Pho and Deli" doesn't sum up what this restaurant has to offer. They have a large menu and offer many different dishes beyond Pho and Banh Mi. The Pho is rich and the cloves shine through in the broth. It is not a very sugary broth. Everyone has their own preference on how they like their pho broth (usually they like how their mom makes it) and this one is just my type. They have all different types of pho and they offer tendon and tripe - which I notice some of the new pho restaurants don't offer anymore. We were glad to see it on the menu. I have never seen Mì Quảng on a menu around here before and was excited to try it. The shrimp was large and tasted like it was cooked from fresh; not frozen. There was a large rice cracker, two quail eggs, and lots of meat! If you are looking to trying a new Vietnamese soup, this is an excellent choice! The pho noodles are colored with tumeric, and it's traditionally not a very brothy soup. The broth is delicious though and I was glad to see this bowl came with more broth than expected. My parents said it was better than the Mì Quảng they had the last time they were in Vietnam. My brother's favorite thing to order is the Bun Bo Hue. My family says this restaurant makes it very well, but I haven't tried it yet. The service was a little slow, but very friendly and welcoming. The atmosphere is relaxed and casual. This review is solely for the tofu fresh rolls. First time here last night. I ordered tofu fresh rolls for take away. They were ok; not outstanding and not terrible. On A 1 to 10 scale I'd say a 3.5. You get two and all that is inside is a huge piece of lettuce, rice noodles and a good size slice of tofu. Nothing to write home about. When it comes to fresh rolls I'm always looking for fresh herbs and more fresh veggies like basil, mint, carrots, daikon, cabbage or even bean sprouts. But these ones were just lettuce and rice noodles. The peanut dipping sauce was ok..it really did not have much flavor. But any road I doctored it up at home with some fresh chilli pepper. The menu does not list tofu fresh rolls only shrimp ones. But the attendant informed me they could make tofu ones.. which brings me to service... It was one gentleman at the till and he was attentive. For what I was needing didn't require much attention. He was pleasant and courteous... Also I asked him as I was leaving if they offered vegan pho and he said yes they do. Next I asked if they use the dreaded MSG and he informed me that yes they do.. but he hastened to add that "they have to" and that "it's just a small amount" so their you have it. I wish they didn't use msg but seems like all Vietnamese restaurants use it. I promise to update if I decide to return to try they're vegan pho. This restaurant is in a strip mall so lots of large open windows, not bad at all and things looked clean. If your craving fresh tofu rolls. I wouldn't drive out of my way for these ones.
