I find the food choices to be few bit each carefully thought out and prepared, with a good mix of styles. The on-site micro brewery produces a great variety of truly tasty craft beers! We drove past and there were a lot of cars there so we decided to get a bite there. We were able to get a good spot right in front (we were very excited)Joke was on us I guess because it was probably the weirdest 5 mins ever! We couldn't get into the dining room because all the doors were locked. Then when we finally walked to the side of the building everyone was sitting outside at picnic tables wasting and there was zero direction on where to sit or order! As we stood there looking around, it appeared that you ordered at a make shift counter and somehow you received your food in paper containers. Not sure.. but we stood there like idiots then left! The beer. Very good. The food. Also good. We ate a smattering of menu items like the disco fries (very tasty) and the prosciutto grilled cheese (also very tasty). The big pretzel baked with feta and sundried tomatoes was also a treat. Sit outside, bring friends and board games, and enjoy the amusing mix of alt 90s music and craft beers. The atmosphere is top notch and they even have antibacterial soap in the bathrooms. Yankees fans beware... the staff is excellent but they root for the Mets. read more

Don't get me wrong, their beer & atmosphere is great & the reason why there are so many good reviews. I've made an effort to support R.C in the last couple of years but I give up. As a transplant I know how hard it is to find good food locally. We all want a current type of place to gather with friends to eat & drink. It takes a pretty big sense of self to charge 17.00 for a burger & fries unless respectful effort is made to assure that each aspect of the burger & fries is well above what a diner serves. Granted, my experience is limited to the burger & fries at Rough Cut. The disappointment of being hungry at the end of the day; ordering to go & opening the order to find: A small handful of frozen, battered or double fried, limp fries. The Oscar burger... I photographed the order before tasting it to show the scale. The bun consisted of two, small triangular pieces of thin, White ciabatta bread. Cooked onions were heaped on top ( because they cost nothing.) Wouldn't one expect that a 17.00 burger would have decent bacon? A few stringy pieces of super thin, flabby, greasy bacon that had those little wavy patterns in it. The tomatoes were tiny, but tasted lovely & were thankfully unrefrigerated. To top it off; a smattering of baby spinach leaves. I would be fine with paying almost 20 dollars for an amazing burger & fries. The question is; how can that price be justified for a pub burger & fries that are presented & taste like an afterthought? One can go to some of the best rated breweries in NYC & Brooklyn & get a burger with a proper bun, plentiful, fresh lettuce & GOOD BACON & simple, fresh cut fries for the same or less. Thinking back, there was a time that I ate inside the restaurant vs ordering to go & they served beautifully thin, hand cut fries, but that was a few years ago. It's such a simple fix... Just a couple of great bun options because classic burgers are a perfectly respectable staple at a great pub. Hand cut fries, because not only do they become a favorite of customers, but potatoes are cheap so they should be no less than hand cut, fresh & plentiful. Lastly, I know it can't be easy to have the hoarders across the street. Maybe wood fences around the dumpsters would be a way to make the parking lot more tidy for customers. I am editing this today to say that I received an email notice that Rough Cut put the cost of the bill back on my card. I appreciate & respect that very much. Thank You. It doesn't feel good leaving a critical review, but in this case it is more of a plea because I can think of nothing better or more convenient than to be able to hang out w/ friends at a great brewery up the block, but on principle, if one asks a gourmet price, the only respectful thing left to do is make it justifiable. Rough-cut is yet another restaurant that has managed to do an effective pivot during the Covid pandemic. Although I have been going to this restaurant regularly for the last four years, I've been especially impressed with what they've had to offer lately in terms of outdoor dining. In addition to being a very successful nano-brewery that puts out excellent seasonal IPAs, stouts and other varieties of beer, they have a very capable kitchen crew to provide yummy meals for those looking out to have a rustic dining experience. Get the Oscar burger, which is an amazing house-blended beef patty plus bacon, caramelized onion, and a special sauce on their homemade brioche buns. Get the calamari with Godzilla sauce (featuring their homemade hot pepper sauce, also available to take home). And stick around for the unique ice cream flavors (tarragon!). Or have an ice cream float with their Holstein stout and a scoop homemade chocolate ice cream. This place was great before COVID-19, and remains an excellent choice for outdoor eats during the pandemic. read more

Luckily it was a beautiful day and they had a number of outside tables that were almost filled within 45 minutes of opening. Why any restaurant who is most likely using great local beef would absolutely refuse to cook it any other way than "burnt to a crisp" absolutely baffles me! Their home brewed beer was good, the Brussels sprouts are made us optimistic but the blackened buns, onions and incinerated beef and bacon means we will never be back. read more

Was in town for the Hudson Valley wine and food fest and staying at the Hudson valley resort and spa. The food here is absolutely incredible and local beers and delicious. We got an order of disco fries and wings for the table to share and they were amazing. Burgers are really good and the burritos are huge and delicious. Stopped into Rough Cut on Presidents Day at the suggestion of our AirBnB host, and the place was bumpin'. There were only a couple open seats, so we sat at the bar, amidst what were obviously local regulars. The guy next to me was showing everyone pictures of his pit bull puppies; there were two dudes playing an intense game of chess behind us; and a woman talking to an employee about Jean Grey in the X-Men film franchise. Definitely what one would and should expect from an Upstate NY neighborhood bar. It was burger night, meaning an array of burgers and in-house drafts to choose from. One of each was $20 - not outrageously expensive but not particularly cheap either. Fortunately, the burgers come with fries and are fairly massive. The beers were stellar; hopefully the offer bottled versions in the future. Note that the RC hot sauce is ludicrous and best used sparingly. We also got chocolate ice cream, opting for that instead of the tarragon flavor (???) Left feeling very slightly buzzed and in good spirits. read more

My husband are camping nearby and didn't have high expectations for dinner, but we were pretty hungry and this place popped up on my phone. Holy moly it blew us away!! Out in the middle of nowhere is a funky brewpub with excellent beer and reasonable wine and the food was great! We each had soup (tomato bisque and clam chowder) my husband had wings and I had a salad with steak in it. The steak was amazing and the salad was delicious. If we lived here we'd come every week. By NJ standards it was very reasonable. read more

Great place with local beers. Good beer variety. I got a Farm de Poivre Saison which was really good; hubby had some kind of local IPA. Our service was warm, prompt, friendly. I would say that the beer's better than the food. For food we shared: - house wings. Sauce was ok, didn't have much flavor. They were also not fried but rather grilled? Baked? They were a bit soggy. $6 -the country salad - blue cheese, apples, etc. Pretty good. $11? -the rib-eye dinner- the best thing we had. Yummy ribeye steak, yummy sauteed kale, and baked potato - the steak came with brandy cream sauce (not too flavorful atop). The ribeye was well cooked through and it was a large portion. $23 + plus our beers. The prices were very reasonable. The interior is very woody and inviting. Not the best for this area but there isn't also a ton right in Kerhonkson. read more

Holy mother of greatness.... I am GLAD this place exists!!! Delicious food, excellent and friendly staff, and VERY accommodating. Our good friends told us about this place so we decided to check it out. We had our infant son with us in a stroller, and the staff (I forget his name, but he has long long hair and is ultra kind) was sweet enough to let us know that we could wait or get a table that would be a little cramped. We decided to wait, as we didn't want to cramp up the area with our stroller and effect the staff trying to walk by. Their beers are super good, and their food is even better. The place is not big but not super small either, so that's just about the only downfall. Every time we've been there, the patrons all seemed respectable and not rowdy at all- great considering there is a bar and brewery too. Everyone should come here at least once, if not for the food, then the beer, and if not either- then to at least meet the great and kind staff. You rock, Rough Cut! read more

Great, small brewery not far from New Paltz. It's the perfect place to stop at after visiting Mohonk or Minnewaska. Inside was dark, cozy & low-key. This place has become our go-to restaurant when we just want to have an easy and fun night out. It's great food and beer and the wait staff is always super friendly and professional. For a table for 2, I don't think we've ever had to wait, but it's also always full enough to feel nice and sociable. The design is clearly considered but it just feels comfortable and sort of rustic. I love the Caesar salad (which I think is a 2 to 1 ratio of lettuce to Parmesan...) with steak, the steak burrito, the burger, and pretty much everything else I've tried. Thursday nights the wings are half off with a beer and I've had the house sauce and the Thai peanut and they were both great - although I'm a big fan of spicy food and always ask for the ridiculously hot habanero sauce that I have to dot on with the tines of my fork. I love the Hefeweizen beer (I think it's Saegerauhenweizen?) so have kept meaning to try the other ones but can never resist. Oh, and the lime custard tart is basically like a slightly creamier and fluffier key lime pie...so good!! read more

Last chance for Rough Cut, after a couple bad experiences at this place we tried again to eat there. It has new outside dining, seemed safer. When we got there the "host" told us there is no reserved seating, " it's just a free for all out there", and as far as ordering food he didn't recommend it. The wait was too long. The woman next to us said " your saying don't even order? Then he took it back. After all this time they are still restaurant amateurs. The atmosphere is great and the beer is even better. I have been to this place a few times and have never been disappointed. It is an excellent location for a casual meal/ drink or to go after a day of hiking whether it be at Minnawaska or The Catskills. The drive from the Catskills to this place is WELL worth it. The beer is varied and sharp. I would recommend getting a flight of the current beers on tap and then making a decision on which one to get a full pint of. The calamari is excellent. So is the Oscar Burger and the Steak Burrito. The staff is welcoming and friendly. I look forward to many new experiences at this place as the beer selection develops. A new plus is the addition of a wood stove. I can't wait to sip some of this great beer while enjoying the wood stove. read more

This place is great. The co-owner used to wait tables at the Country Inn, which used to have a burger worth a trip and still has a great beer selection. But Rough Cut is even better than that, because the burgers (and everything else) are excellent and the beer is brewed right there by the bartender. He tells me he brews in 31 gallon batches, which is why it's FRESH and he knows his brewing so well that even if the food weren't great, it would be worth going. He's especially good at Belgian and English styles. read more

Outstanding beer and food at a cozy, rustic newcomer. I've been a beer enthusiast for years and have brewed some of my own and I was very impressed with the two beers I tried, an IPA and a double IPA. My wife, who doesn't even care much for beer, loved it and said it was among the best she's tasted. My favorite was the 44/55 double IPA. Can't wait to return to try others. The food was equally laudable with many vegetarian and vegan options alongside meat and seafood. We tried the house-baked pretzel (delicious, piping hot with whole-grain mustard), jalapeño poppers (just the right amount of spice), and tofu sticks (coated with hemp seeds for a beguiling texture and topped with a rich herb sauce). Then we split the veggie burger which was excellent. It came with crispy fries and in a very fresh ciabatta bun with fresh avocados. The burger itself was wonderfully spiced; it tasted great on its own. But paired with everything, the burger was even better. When you walk in you're greeted by a large, stone fireplace that will be great for winter warming. The interior is tastefully decorated with reclaimed wood from the brewer's barn and antique lighting that gives the place a homey feel that isn't forced and reflects the surroundings. Go around the back of the fireplace to find the bar where we sat and enjoyed excellent, attentive, but not at all invasive service. Just a short drive outside of New Paltz and down the road from Lake Minnewaska and Mohonk Preserve, Rough Cut is a destination that's well worth the trip. The arugula & fig salad is to die for. I am going back tonight to try a different brew because the IPA I had last night was so delicious I kept ordering more. A GREAT brewpub and a much needed addition to the Ulster County beer scene. It's been very many years since I've visited a brewpub where so many of the beers were outstanding for their respective styles. So far over two visits I have tried the DESERTED ISLAND IPA, the 44/55 DOUBLE IPA, the MORTISE & TENON BELGIAN DOUBLE, the OIL BURNER BLACK IPA, and the BUMPKIN, and they were all fantastic. I believe that Kayne (part owner of Rough Cut and brewer) really makes the best beer in the Hudson Valley. I've been to a number of other local breweries and have found that while some were better than others, none were exceptional. It seems to me that generic taste bordering on bland is the norm. Rough Cut is a game changer. If you are like me and have gone years since the last time you visited an outstanding brewpub, make sure that you pay these guys a visit. I haven't really given the food a fair shake yet, but I did get a burger which was served on an in-house made roll and I really enjoyed it. The roll made a nice difference. I had been complaining lately to my wife how hard it is to find a good burger for some reason, but Rough Cut scratches that itch. I always enjoyed the food at Oscar's (The chef's previous restaurant at this same location) and I look forward to trying much more of the menu. There seems to be a good amount of pub and comfort food offered which is especially satisfying now that my other local staple - The Country Inn - has given up on serving that type of food in lieu of an Italian menu. If you're lucky enough, Kayne, the brewer, will be behind the bar - he's one talented dude (not only does he brew but he built the bar by hand) - The bar is incredible, most of it crafted by hand from reclaimed barn wood, rail ties, concrete etc. - Bart the chef, whips up gourmet concoctions like its nobody's business and turns bar food into something to write home about - the oscar burger is my absolute favorite.. but then there's the burrito.. and the stew... and oh yeah, the wings... - Jesse's always on point with the service. - I almost forgot to mention, there's a burger + 2 beers for $20 night... what more do you need!?? Charming brewpub my husband and I found on the way to our cabin getaway in the Catskills. It was relatively late and we were hungry. We seated ourselves in the back near the bar. Our waited appeared right away with menus. I'm normally a wine drinker but the selection they offered convinced me to try one. I'm so glad I did. I had the Oil Burner Black IPA and my husband had the Top Secret IPA. Both were excellent. My husband had a couple order of wings and I had the veggie patty. I really enjoyed the veggie patty - it was served crispy and warm on a toasted bun with avocado, lettuce, and tomato. I recommend it. My husband's wings were good but I think my veggie patty was better. If you find yourself in the Catskills and looking for a tasty treat and some delicious beers - I'd recommend Rough Cut Brewing Company. read more

Rough Cut has a nice rustic atmosphere with lots of rough cut wood decorating pretty much everything. Right near the entrance it's hard to miss the big cozy fireplace and sofas in front of it, great places to enjoy a beer and warmth on cold days. The beer is pretty good too and there's a nice mix of style and some interesting experiments. The food is also good with mostly bar food though the wings and jalapeno poppers were all very nice. It's a great place to rest up after hiking the nearby preserve. read more
