    In the heart of downtown Princeton, this is a Princeton landmark. Great service and yummy artisan coffee. Give it a try you won't be disappointed!

    I haven't read the other reviews -- and so I cannot imagine why it is only 4 stars -- but this is the nicest macchiato I've had a café in a while. It's kind of a European style Café, without a lot of seating room. But a nice little standing bar and a few seats. The nicely done woodwork and cabinetry was also not lost on me. Great place!

    Coffee is good, service is good, and the place is small but clean. A nice option when walking around downtown Princeton.

    I did not get to try that many places during my short weekend trip to Princeton, but out of the ones that I had, @rojosroastery was definitely my favorite! My cappuccino had an acidic flavor of the espresso shot and a good amount of frothy milk. So awesome!

    When thinking about a great cup of coffee, first I think of coffee itself, then I think of the people I am sharing it with. Coffee without company is peanut butter without jelly, SpongeBob without Patrick, Frosh Week without anybody getting McCosh'ed. That is to say: to me the warmth of coffee is in the company, and the warmth of company is in the coffee. Rojo's has delivered an experience superior in both regards to me, and that is why I hold it in such high regard. The coffee itself is my favorite that I have sampled amongst the local options. The roast is dark, bold, and fully of body without being too bitter. The cortado is my personal go to but the latte was also beautifully done. Also, I may be petty in holding a standard for this, but when ordering "for here" the coffee is served in a proper macchiato/cortado/latte cup properly suited for the drink, unlike the sad tubular cups I receive from a different, more notable local establishment. The pastries come from The Gingered Peach, which indeed are quite peachy. Finally, the employees are noticeably *passionate* about coffee. Coffee is not business to them, it is substance and it is beauty. On multiple visits now, I have heard the words "hey, you should try this cold brew I just made, it's really fantastic stuff" thrown around. Their passion raises the quality of their drinks a notch, filling my cup with passion as well as a heart-palpitating amount of caffeine. The company at Rojo's is what rounds out the shop to me. Though the seating is limited and the tables are small, the dark lighting and lack of loud chatter are what make the shop cozier to me than anywhere else. Rather than inspiring me to crack open my laptop and consult my Pocket Style Manual while considering the minefield that is my R2, the small tables remind me to rest my cup and enjoy a conversation with a friend, taking more time to talk than to think or drink. There have been multiple occasions in the past few weeks where I had been feeling gloomy, unmotivated, and lost. During this time, a simple question of "Want to go to Rojo's?" from two of my better friends (thanks Sabo and Pine Cones) helped turn my days around. As we chatted over a cortado, the worries of all else faded to laughs and I approached the days with new found motivation. These experiences are ones that I have lacked from other coffee shops, and hope to have more of at Rojo's when I return in the future.

    The more you know, the more you don't know. Rojo's is an atelier of coffee master roasters and baristas creating otherworldly blends that will titillate and satisfy the most discerning of aficionados. THE MORE YOU KNOW... As a kid I grew up thinking all coffee was Folgers crystals or Sanka. On special occasions, mom would "heat the water" on the stove in a special octagonal metal pitcher from the top shelf of the cupboard, and it smelled funny. They would still not let me taste it. Today I select roasted beans, blend them and then Breville and Mochamaster my way to a "good" cup. I thought I was doing it pretty well until I went to Rojo's. ...THE MORE YOU KNOW YOU DON'T KNOW Tasting the oil, bitter and sour notes of Rojo's Oaxaca blend in a "sidecar" -- that's two cups side by side, one with a milk, and one plain and strong so you can really get up and close to the complexity of its flavors -- and the perfection of its roast through the purity of this water, it makes me realize I'm just a novice, a beginner. I have absolutely no idea what I'm doing, and I need to come back here every day and learn. Join me. See you there.

    I used to enjoy Rojo's coffee and ambiance but our latte today tasted watered down. $5.25 for a large latte, it was rather disappointing.

    Starbucks is better, please do better. Even Dunkin is better. My Latte was so tasteless it was honestly a crime against humanity.
