I used to enjoy Rojo's coffee and ambiance but our latte today tasted watered down. $5.25 for a large latte, it was rather disappointing.

I love this roastery! I did complain about them not having a bathroom, but screw that complaint, they are awesome. A true craftsmanship of coffee and chocolate selection. This is my favorite coffee place to go in Princeton. Located perfectly in palmer square, it's a hidden gem for coffee lovers. It's quite small with only few sitting arrangements. I am yet to try their drip coffee, however, I'm in love with their Mocha (oatmeal instead of soy or almond- taste better than regular milk) and macchiato. I love the fact that the barista spends their time to make each drinks precisely. They never seem to rush your drinks despite of long wait. I've been mulling it over - was this the best espresso I've ever, ever had? YES. Rojo's is one of those coffee places that I walk by regularly on my way to my favorite ice cream place and always think, "I should try this place one of these days". Well, "one of these days" finally arrived and I'm very glad! Went in for an espresso so I could stay awake for the afternoon. Forget the caffeine, the taste itself woke me right up - from surprised happiness! The barrister was able to describe the flavor of the beans he would grind for my espresso (talk about fresh) and was completely accurate. The espresso was beautiful to look at and fruity and intense in both smell and taste. It was an experience to be savored, not gulped. How lovely, to be able to get such an excellent, enjoyable cuppa along with my caffeine fix for the afternoon. Don't make what was my mistake for so long and walk by thinking "one of these days". Rojo's is simply better. The other local coffee shop still gets my business, but when I want craft coffee, Rojo wins. They roast their own beans and They have every brewing method: syphon, v60, chemex, French press, drip. Also, their espresso is amazing. They have a custom machine that pulls perfect espressos. These are real baristas, not machine operators. If you want to hangout with a few friends or try to do HW, well it's kinda small, so go to small world. (Which is good) If you want really great coffee, go to Rojo's. read more

I'm not a coffee drinker in that I really don't NEED coffee. To tell the truth, I don't even like the taste of plain coffee, although I freely admit that it smells pretty good. However, depending on my mood, the time of day and what I've recently eaten (or how much I drank), I like to have the occasional cappuccino or mocha. Many places I've been to are so confusing, and the menus so daunting, that I'm reluctant to even step up to the counter to order. No problems with that at Rojo's. The menu is simple and the guys working the bar or register don't raise an eyebrow if you ask a question that shows you don't know crap about coffee. They're cool and happy to help. Everything is easy. I go to a Starbucks or other similar place, and the vibe I get is that they're just trying to get you out of the way to get to the next paying customer. I'm not feeling that at Rojo's. The place itself is small and comfortable, and there are usually good tunes playing, but there's no snobby coffee shop vibe (didn't you know that coffee shops are snobby?). Seating is limited, but you can always step out to the square across the street and sit on a bench. read more

AMAZING. AMAZING. A. MAZING. I love Rojos; both the roastery and this location are fantastic. David and his staff really care about coffee and the quality of their product. All of their roasts are light and highlight the quality of the crops they source directly. Their Ethiopian is one of the best cups I've ever had, and all of their espresso drinks are exceptional. The staff are friendly, knowledgable, and really approachable. They'll also make honest recommendations and help you find home brewing equipment; they sell some, but will also just help you find what to get. For their degree of passion and precision, the Rojos staff are the least pretentious or exclusive coffee enthusiasts I've met. Yes, their coffee is more expensive than a cup at Dunkin donuts, but the price is evidenced in their passion and meticulousness. I recommend heading in to the Princeton location to sit down and really enjoy a good cup, or to go to the Lambertville location and relish in the sound and smell of the roaster and to ask David all of your questions about coffee, roasting, and brewing. read more

Cool name. Sweet spot next to Bent spoon. They do offer pour over coffee all the time which sets them apart from competitors. Good coffee for sure! Not a coffee snob but I like a good cup. I had an 8oz mocha and my wife had a dirty chai latte. The baristas are nice, great sense of humor but professional and clearly know their craft. This place belongs in Princeton, I felt a bit out of place but didn't stop me from enjoying my coffee. $9 for 2 small drinks is a bit pricey, but is par for the area. There is very little searing inside, so get it to walk around the beautiful downtown Princeton area. It'll warm you up on a winter day and the taste doesn't disappoint. read more

I wish I didn't have to say this, but I have truly never had a worst drink in my entire life. My family and I decided to visit this established location but instead of drinking a delightful coffee, we were greeted with hogwash. I'm not even kidding, all our drinks tasted like tomato soup. I keep trying this place, because I love the decor and cozy feel, but I think I'm done. I tried the house roast & am just not a fan of molasses-tasting dark roast. It's more expensive than other similar coffee shops in town. The lattes are sour, which is not a matter of taste but means the espresso is under-extracted. Staff members are nice except for this one, tall guy with a sourpuss and lots of tattoos. He's just rude! One time, I went in there & I had to patiently repeat my order 3x & he still got it wrong. When I politely told him, he contradicted me & said "No, you ordered X." I just tried going there one last time & was surprised to see him still working there. Same grumpy countenance & didn't even bother to put the top on my to-go cup. I'm supporting business during this difficult time, but not this one. read more

It's a super small shop so there isn't much room for hanging around, and it's far from cheap ($3 for a large drip, $5 for a large cappuccino!) but if you're willing to pay for quality, it's worth it. Best coffee I've had in NJ, hands down. I particularly enjoy light roast and that is what they specialize in. I got the Papua New Guinea as a pour over and it was fresh and filled with fantastic bright notes making my mouth super happy. The barista was very knowledgeable and helped me choose one of three light roast options they had for pour over. I bought some decaf beans and have been loving it all week. You know, it kind of pains me to write this review because I've been going to Small World for years and have been so loyal but, here it goes... Rojo's espresso... is... better. There. I said it. And I meant it. Rojo's focuses on the lighter roasted coffees which end up having a lot more flavor than places that roast the crap out of their coffees (cough, cough). The seating here is limited. I thought Princeton was fortunate to have 2 independent coffee/tea shops (Small World and Infini T), and I guess with the recent addition of Rojo's, it got even luckier. This place screams hipster/artisan coffee shop, and it certainly has the prices to match. It's a splurge-only place for a college student, but a worthwhile one. I'm not a coffee drinker, so I got the chai latte instead. ($4 for a small, rather pricey for the size). It was real chai-- full of spices and only a touch of sweetness. None of the syrupy taste of Starbucks, yet not too spicy like Small World's. I got it with skim milk but it was wonderfully thick and creamy. What y'all's don't realize is that I am an extreme coffee snob. My friend Ellen and I once came within an inch of starting a blog called "bay area coffee snobs." I had registered the domain and everything. And there are a lot of coffee snobs in the Bay Area, but we were claiming a crack at representing them all. Admittedly, she is worse than I am---this is the woman who stalks barista competition champions. But I'm pretty bad. So believe me when I say this place is outrageously good. There's really just nothing else for it. Rojo's can compete with Blue Bottle, Intelligentsia, all the big west coast heavy-hitters. Espresso drinks: always delicious. They use a lighter-than-normal roast (on the light side of medium), which means you can actually taste something in the coffee other than ash and sadness and starbucks. Pour-over: I love their espresso drinks so much I've never even had their pour-over, but they always have a carefully curated selection of beans and everyone else seems to be happy. Baristas: incredibly good and also extremely friendly. This is not, however, a sit and write/study/whatever kind of place. Get you to small world for that. There is no wifi and almost no seating. The no wifi part is fine, but the no seating part is kind of sad: I can't tell you the number of times I've wanted to sit for a few minutes with a capp, gone to Rojo's, found that all seats were taken, and sadly trudged down to small world for a---still excellent, but not sublime and extraordinary---cup of coffee. read more

I visited this place yesterday bc of the good reviews. I was very disappointed with their coffee. The drip was very blend. They were doing them wrong also, he was pouring the water directly over center of filter, which shorten water and coffee contact time. Although the coffee smells great, but the coffee tasted pretty bad. I also had a cup of cafe latte, it was just ok. I don't like Starbucks but i do think this time, they may have better latte than Rojo's. I still tip them because drip is made to order, but i will not come back here again unless they have some more training. Also this place needs someone to come in and do some re-organization, gotta keep this place clean. The area around espresso is dusted with coffee grinds. A good place to visit to know what a great coffee place is, blue bottles. A good cup of coffee can make or ruin your day, being clean is very important. read more

The roast flavor of the coffee lingers on your tongue - which, imho is one of the best things about good coffee. I got a mocha, and it really had a lot of potential but since the my milk was poured after my friend's latte, she got the better of the thick foam. I feel like if I'm paying almost 5 dollars for a mocha latte, my 8 oz. coffee deserves that extra steaming effort. Whenever I am in or near Princeton, I make it a point to stop in to the Palmer Square Rojo's, and I am never disappointed. I have to disclose that I really hate coffee. With that being said, this coffee made me question my immense distain of coffee. It was actually really good. A number of my coffee snob friends raved about this place, saying it was some of the best coffee they have ever had! The environment was nice. Very European feel. Not the best place to study, but the staff members some of the nicest people I have met! They just want to make you some coffee, talk about things, etc. I really recommend that everyone try this place at least once. Even if you don't like coffee. Edit: I've got to be honest here. I didn't like coffee when I wrote this, but I've come around a lot thanks to this place. They set me up with all the supplies to do my own pour overs at home and I loved most of their Central American roasts, they tended to be much better than their African roasts. Excellent coffee; Princeton's only third wave coffee option. They could be a little bit more friendly at times, but generally the baristas are nice. Atmosphere is pretty good, stylish; small, but with Palmer Square right outside, you can often hang out on the green when the seats are full (unless it's raining etc). Probably wouldn't hurt them to offer home-made flavorings, but they're philosophically against flavors in coffee (except chocolate in mochas, which btw they do very well). Anyway, their coffee is good and their simple syrup is amazing, so there's no loss. In summary, if you have a high standard of coffee and find yourself in Princeton, this is where you want to be. read more

You have to give props to anyone daring enough to start a high-end coffee business in Palmer Square. The rents here must be like those on Rodeo Drive! Rojo's Roastery makes do with a relatively small number of square feet; it can't aspire to be a local hangout à la Small World. Its customers need to be genuine coffee lovers who are willing to pay top dollar for a perfect espresso shot and will then move on after their coffee has been consumed. It's a challenge, but these folks seem up to it. They pull excellent shots and have a great attitude. I ordered a cortado "for here" ($4) and was perfectly happy with the result. Honestly Rojos is one of the best places to get coffee in Princeton. It beats Small World's coffee by a trillion miles and the service has been consistently fantastic. The coffee is always, always made with care and LOVE. These people really know the craft of making a good cup of brew, and are really underrated.
