After paying we took a seat and waited a few minutes for the food to arrive. When it came out we were given a choice of sauces and we elected to try a couple. Now for the reason we went. The brisket was tender, moist , and well smoked. They use a dry rub on both the brisket and the pork and it works well for both meats we tried. The ribs were also tender and tasty and done just the way I like them-bite off the bone. Ribs are overcooked in my opinion when they "fall off the bone" because they aren't ribs at that point! Being from Texas, we complemented them before we left and even gave another customer a quick opinion of how good the barbecue was. You may note that I'm not reviewing any sides because if the meat is as good as this was you don't need any sides. Their sauce is good, not too sweet and they have a sweeter option as well as a hot (habanero) sauce that is also good. If you need a good barbecue fix and you are in Ann Arbor you can't go wrong with Satchel's.

I went back to the sauce/food station to see what they had and by the time I came back, the waiter brought the water. After our tablet was unlocked, we started our order. Their marinated meats were way too sweet for me. The prime brisket had no fat, thus very chewy. Couldn't tell the difference between the beef bulgogi and spicy beef bulgogi. The person bringing out meat dropped a lot on the floor while pushing the cart or dropped them on the cart. As for the meat options, if you want the value for your money, I would recommend the following: - Hanger Steak - Angus Chuck Flap Tail - Finger Ribs - Pork Cheek - Short Ribs (marinated) - does have a lot of fat on them - KPOT Steak (we didn't get any) If its your first time with friends, it worth trying all the meat. You do have 2 hour limit, so if you have someone in your group that loves to talk, tell them to shut up and eat :) As for the sauce bar area, they had six hot food items, would skip them... the sauces, the ssam jang was not your typical ssam jang... would recommend you make your own sauce... kimchi was super sweet. I would recommend the pickled radish to be used with your lettuce for lettuce wrap. Wasn't a fan of the interior with their ambient lighting.. while it wasn't a huge hinderance to walk around, it was bit annoying lol. Overall, decent AYCE Kbbq, meat quality is decent, nothing special, but worth the experience once.

When it came time to pay, I asked the bartender for my check (she had been working like crazy all night) and she said the glass of wine was on the house since I had come for trivia and it was cancelled. Head to the counter to order, grab your silverware and drink, and take your number to a table to wait. The food comes out quickly. We ordered chips and guacamole to start. At first it's in your face with a combination of lime and salt, but after the second chip it's delicious. I do wish the guacamole and tomatoes were chopped into smaller pieces, but the flavor is stellar. The brisket on my taco was very fatty. Don't get me wrong, I know fat is flavor and the bark on their brisket is possibly heaven sent, but I can only take the texture of fat to a certain extent and I'm grossed out. I left some of the fat on my tray. It pairs well with the roasted tomato salsa. The pulled pork taco is excellent. The ingredients work well together, with the combination of crunchy and chewy textures and the pickled pepper relish with tangy lime slaw creating a wonderful flavor profile. When we return I'll only order one taco if we get chips and guacamole. Enjoy!

3, bordering on 4 stars as I know that they're brand new and hopefully will improve some things…read moreover time. I've gone 3 times now for happy hour. I'll start with what I would consider to be the areas to improve: 1. They have an email signup form promoted on the website that advertises a free taco when you sign up. Great! I tried to do it and when I asked about it there they were like, yeah we might send out discounts or coupons in the future. Just a wildly misleading promo. 2. The pricing for happy hour margs is odd. On the website it advertised 36 oz margs for $5, and when I went in I was asked what size I wanted. I said "whatever is on the happy hour menu" and I was told that both sizes were. What does that mean? Both of them are $5? 3. 2 out of the 3 times I went the margs were served on the rocks instead of frozen because the machine hadn't frozen them yet 4. It seems like there are some major kitchen issues with getting food out on time - I overheard a table waiting a really long time for their tacos Now for the positives: 1. Margs are great, and even though the pricing is very odd and unclear what is certain is that they're a good deal 2. Nice people working 3. Good hot sauces (hell yeah tapatio and Valentina!!!) 4. I like the system of ordering at a register and getting to choose your own table, makes it a more casual/fluid dining experience imo. 5. Guac is great and they are not stingy with the chips, that's for sure. Overall there are definitely some major kinks to work out, but I think it definitely has 4-5 star potential.
