I can't believe it. Our party of four went to Ramie on a Friday night and it wasn't sold out. We all feel badly that the rest of Seattle doesn't know how amazing this place is. So, where do we begin? First, let's stop critiquing their pricing for entrees and apps. It's some of the most reasonable pricing we have seen in Seattle at any fine dining restaurant. And we couldn't make any of their amazing dishes at home, so why quibble? Second, can we focus on quality? All 4 of us, at some point, agreed that something we were having was the first time we'd ever experienced that combination of flavors. Wow! Imagine leaving dinner and feeling ashamed that your palate wasn't sophisticated enough! Ok, let's talk service. Wow. We had Kevyn "Yvn" as our server. Unlike your typical restaurant, he actually knew all of the details of every dish off the top of his head. He was able to discuss every single ingredient as if he'd made the dish himself. First time I've ever had vietnamese fine dining. It was great! The servers were super friendly and explained all of their dishes. The restaurant had a nice vibe and lots of space, I think there was an upstairs area but it wasn't open when I went. Food wise, I loved the shrimp paste rice rolls, those had the most impactful flavour of the night. The duck egg served in the shell was an interesting dish, though it was quite small. The pork floss crispy rice pancake was full of umami from the pork and the rice was really very crispy, maybe even a little too crisp. The branzino was maybe overcooked for my taste, but the charred flavour paired well with the sides that it came with, especially the onsen egg. One of the bestttt best meals I've had in Seattle - and not an exaggeration either! Granted, my sample size is from my visits every few months. But that doesn't take away from how blown away we were with the food, drinks, service, ambiance and the whole experience we had here. It was hard to pick a favorite out of everything we tried, but the hollow bread with butter was SO GOOD and the branzino really sealed the deal and stole the show for us. Both were reminiscent of meals I've had with my family or with relatives in Asia even as someone with a non-viet background, but really just elevated and made into their own. It gave the whole meal a family-style feel and really just brought a level of comfortability into a sit down restaurant experience. The drinks were great too, couldn't go wrong with the options, just noted that they weren't as sweet as other restaurant drinks I've had. Altogether such a great experience, worth a try for a special treat and I was already looking forward to being able to try a different seasonal menu here next time I visit! read more

I was super excited to come here because I love when Viet food shines, even when it hurts a little to pay double or triple the prices that I'd expect to pay in the ID. Reservations were totally unnecessary and paying to reserve a seat on Tock just means forfeiting a service fee. First, our server just dngaf at ALL about us. He walked over and immediately asked us if we wanted to order when we'd barely been seated. He asked us nothing else, explained nothing, and then was gone for almost ten minutes, looking at his phone, back turned, impossible to get his attention. There was no one else serving tables so it felt a little annoying that the one server (there was a busser and hostess) was impossible to get ahold of. I was also annoyed when I later heard him patiently explain the menu and make suggestions to another couple. I guess some internal bias made him just care less about us? His service was cold for our entire dinner (which we had reserved for the special occasion of a birthday). The online menu doesn't list drinks, and I can't recall what we ordered first, but it was something I had seen on instagram that I expected to have a pretty distinct taste. Instead, it came out tasting like an uninspired old fashioned, which was not what we were expecting at all. We commented on it to the waiter because we were so sure that he had mixed up our order, and he basically shrugged it off. It wasn't until we'd had our third plate dropped off and he saw that we weren't drinking the dtink and my partner asked if we could change it that he [reluctantly, we felt], allowed us to swap to something else. I'm not used to having someone care so little about whether or not I'm enjoying what I order. The food was the highlight. - The banh tieu is expensive when you know what they normally cost, but I guess it's nice experience for those who haven't had it before and never will eat it anywhere else (since no one serves them with butter). - The duck custard / riff on the Viet hot vit lon was good and flavorful, although could have benefited from some kind of crunchy texture. It's not at all like true fertilized duck eggs (which I love), but emulation is very good. - The vit chao / duck with taro and mushroom sauce was *incredible.* I'd order this again in a heartbeat, even though it was pricy. The savory complexity in this dish was a true elevation to Vietnamrse cuisine. All in all, I don't know that I would come back because it was a pricy meal with poor service, but I do think if we had a different server, we would have felt very differently. I've dined at Ba Sa on Bainbridge Island three times before, and with all the recent press on Ramie, I was looking forward to another innovative culinary experience. I secured a solo reservation via Tock for its grand opening on 5/22/24. I gave myself plenty of time driving from Shoreline to Capitol Hill due to traffic and to find street parking. Just an fyi - 75 minutes and 90 minute street parking for $8 two blocks away. Once I was able to open the heavy front door on that blustery evening, I was warmly greeted and seated at a nice two top where I was able to take in views of the main dining room, vast bar, and open kitchen. There's also second floor mezzanine for additional seating. High ceilings and windows allowed natural light to contrast against the modern aesthetic Ramie created at the site of the former Omega Ouzeri. The bright arrangement of orchids by the reception stand was beautiful. I was given the choice of water while perusing the beverage and food menus. My waitperson also was very polished and offered to go through the menu and answer any questions. I decided to splurge on a cocktail and focused on the fish offerings. *Ngot - Sweetheart ($19) was their spin on an Old Fashioned. Bourbon, Diep Ca demerara, corn liqueur, aromatic & orange bitters, orange peel twist and baby corn. Appreciated its strength and presentation with the large ice cube. *Goi Ca - Hamachi Crudo ($27) Fresh slices of hamachi with stinging nettle oil, thinh, pickled ramps, lime leaf, rau ram, and kumquat nuoc cham sorbet. Loved the seasonal spring ingredients of stinging nettle and ramps! Notable was the thinh (powdered grilled rice paired) with the sorbet and the herby rau ram. Amazing foil with the hamachi. *Ca Nuong - Branzino ($37) Perfectly grilled and topped with scallions and shallots and accompanied with four dipping components. These included an onsen egg with fish sauce, perilla chimichuri, chili sambal, and red pepper cucumber. Standouts for me were the perilla chimichuri and the thinly sliced red pepper cucumber. I appreciated being provided additional flatware with this entree. I had passed on the bread, other apps, and dessert. But I was very satisfied with the choices made, definitely checked the boxes for dazzling flavors and combinations. It was a hefty splurge for just me, total with tax and tip, it was $110. Cơm cháy/charred rice was nice and crispy. Lionsmane fritters left something to be desired. Wish there was more of the potato espuma, fritters and mushrooms themselves weren't too flavorful, all the flavor was in the sauce which was too strong for my taste and really overpowered the espuma and fritters. Coffee rubbed ribs were so tender the bone slid right out. Very juicy and very worth it at the happy hour price. Curry chicken croquette were the best bites, packed with flavor and chicken. Highlight of the evening for us. The drinks were meh. This is a great affordable HH in Cap Hill and me and my party ended up ordering one of everything on the HH menu. I thought that everything was reasonably priced and it was a clever fusion/ twist on traditional Vietnamese flavors and this is a great spot to come with friends and share items. I love oysters so definitely appreciated the creative accruements and then other highlights also included turmeric rockfish and the coffee rubbed ribs (I thought this dish was easily the best value item on the menu). The fries were also good although I wish the laughing cow béchamel had more of that flavor. The service was friendly and when my receipt came, I was charged extra for items that I didn't order but when I pointed that out to the server, they rectified that pretty quickly. This was my first time having elevated Vietnamese food and I have to say the flavors were captured so well. You get the modern twists but still staying true to the flavors of vietnamese cooking. It is a bit on the pricier side for what you get but it's also about the experience of the food. My favorite items were the Hamachi Crudo with the kumquat sorbet, Bánh Tiêu with the honey butter and Rice Rolls with Tiger shrimp head purée. Seriously packed with so much flavor! Our server was very knowledgeable about the food & drinks and explained the components of everything for us making it a nice dining experience. The only downside was how slow our food hit the table. We mentioned we'd like the food as it comes when being asked if we wanted it coursed out. But each dish came out one by one with about 15 minute gaps in between. We were excited to try this new Vietnamese fusion restaurant after trying BaSa. We made a reservation at 5:30 PM on Saturday and the place wasn't too busy then. Interior is pretty modern and aesthetic. Food (4/5): Overall, pretty good but too salty and overpriced... - Hollow bread: this is basically fried bread with smooth butter and honey. Pretty tasty and basic as an appetizer, slightly oily though. - King oyster mushroom: this was very flavorful, buttery, and juicy. But for basically 2 large mushrooms, $23 is a bit too steep... - Sweet corn: this was our favorite dish here. The corn is sauteed with beef jus and comes with an onsen egg. Very different from what it looks like - so umami and flavorful, although it started to get a bit too salty. Initially $19 for corn seemed like a lot too, but because of the unique and complex flavor, I think this was definitely worth it. - Rice roll with tiger shrimp paste and pork: strong shrimp flavor and nice texture from the rice roll. A lot of flavor from the pork as well! -Branzino: whole Branzino fish that comes with 3 sauces (perilla, chili soy sauce, fish sauce with onsen egg), rice, and cucumber kimchi. We liked the perilla sauce but the other sauces were too salty. The fish was ok... we liked the green onion and fried shallot toppings, but the fish was a bit dry and thin with lots of tiny bones that made it hard to eat. We normally love Branzino and regularly eat it at home, so not sure if we would get this. Service: When we first arrived, we saw a lot of staff and plenty of empty tables but the service was super slow. Took awhile for our waiter to come by and we were all ready to order and starving, but he started explaining the menu in a lot of detail... would've been nicer if we got this info earlier because we had already made up our mind. Other than the hollow bread, it took awhile for each dish to come out one by one. Worst of all, our server splashed some sauce on my dress while clearing some plates and ignored it. Overall, not impressed with the service, which is why I am dropping a star. Overall, we had pretty high expectation after seeing really positive reviews so it was a little disappointing. Disappointing Frog Legs Experience I recently tried the frog legs here and was quite disappointed. The legs were extremely dry, and the accompanying sauce seemed to be there just to mask the bland taste. While the sauce was flavorful at first, it quickly wore off, legs were difficult to chew and swallow. I've had frog legs before, and I don't remember them ever being this dry. I hope they didn't serve food that had been sitting out for too long. read more

We went to Ramie for our wedding anniversary dinner last night. I came in a bit skeptical ad a Vietnamese person and one who didn't have a great experience at Anchovies and Salt in Renton so I was curious how Ramie would do in the higher end of Vietnamese cuisine. It was an enjoyable experience! The food was quite delicious overall. The service was top notch. Ambiance was ok but it could use some paintings on the walls to bring the restaurant all together. We were pretty excited as high end and experimental Vietnamese restaurants are not super common. We really enjoyed their take on some Vietnamese dishes. However we did notice that most of the current summer menu was very fish sauce based. It was very good but throughout the night the flavor profile was a bit stagnant. We would've liked a bit of variety overall. The frog legs were good but the weak point of the night. The fish definitely was the highlight, the sauces really complimented each other and was top notch. Their bánh cuốn take was interesting as it was a bit of a deconstructed version, but still very good overall. It felt like Ramie made different dishes that paid respects to Vietnamese flavors, which I respect. They pulled it off for the most part. Overall it was a great experience. I would rate Ramie overall a 4.2/5 for the most part, it would score higher as I thought a couple of the dishes we got were just a bit overpriced for what we got. Wow. This meal was absolutely delicious. Came here during the soft opening. They don't officially open till 5/22 so their menu is limited but still delicious. They are the same owners as Basa on Bainbridge Island which is my go to place when I like to do a day trip to BI. Their cocktails are super unique. Don't expect it to be simple but like a journey. I got the pandan rice (I absolutely like anything pandan) and it has flavors of gin and calamansi as well. It was delicious. Started off with the calamansi taste then finished with pandan. For our food we got the mushroom, chicken and trotter (asked my friend Trinh which is one of the owners what we should get and she suggested those). All amazing. the mushrooms had a meaty texture and flavors were so good. Chicken was moist and flavorful and the trotters (pigs feet) had so much flavor and you wouldn't even know it was feet unless someone told you. You eat it like a ssam (wrapped in lettuce) and the pickled daikon and garlic cuts through the heaviness of the pork). For dessert I couldn't decide out of the two so we got both! The black bean mousse tastes very similar to black sesame with the nuttiness. You can taste the hibiscus foam. My favorite had to be the fruit cup which is made with fruit milk ice cream (i need this in a tub) with fruit on top with a pavlova crust (like a meringue). SO GOOD. My first time at Ramie was May 2024 right around when they first opened. I had a good experience overall then and wanted to revisit for valentines dinner. They had a Valentines set 5 course menu with 2 options for courses 4 (main) and 5 (dessert). Unfortunately it was a very chaotic and disorganized night for them. Pros: - Food was overall tasty save for a few issues - Drinks were tasty and creative - Ambiance was romantic, flower petals and candles on the table - They printed out our customized menus with our names on them - Staff were kind and professional Cons: - Arrived on time for 7pm reso. Not seated until 7:40 (table still occupied) but could wait at the bar. Not everyone was able to, numerous parties were standing by the door for over half an hour. - Bartender accidentally splashed us in the face with water. He apologized but also played it off as us being in the "splash zone" and didn't offer a napkin - Personalized menus were incorrect, didn't match what we pre-selected when making reservation. Was fixed promptly though after asking. - First course (ravioli) was served undercooked to my partner. - Second course (mango salad) was watery and lacked flavor as a result. - Service was slow. Originally was gonna go to Spinasse and even made a quick reservation when I got there but changed my mind because I rather get a reservation for a different day and just plan it out. I had walked past Ramie before going into Spinasse and right off the bat noticed the interior and the overall look of the restaurant so I head on over to dine in. Right as they open, first person in and ready to eat. The interior was so modern but had such a distinct aesthetic to it. Big windows for great natural light, open kitchen so you can see the line in action, servers extremely knowledgeable on the menu and made great recommendations. Let's get into what I got; BANH TIEU | WHIPPED BUTTER, LOCAL HONEY, FLEUR DE SEL. ROASTED BLACK SESAME CAN GA DON FOIE GRAS | FOIE GRAS STUFFED WING FREE RANGE WING, TEMPURA, GROUND PORK, SHITAKE MUSHROOM, CABBAGE, GINGER, FOIE GRAS. ADDED CAVIAR CANH KHOAI MÖ | RISOTTO PURPLE YAM PUREE, NGO OM AND NGO GAI PESTO, PICKLED FENNEL, HERB OIL, LOTUS CHIPS, HAZELNUT DUST NAM CHIÊN NUÓC MAM | MUSHROOM KINGARYSTER MUSHROOM, BEURRE MONTE, LIME FISH SAUCE REDUCTION, VEGAN CAVIAR Drinks I had; HOA QUA | FRUIT DRAGON FRUIT, ROSE, SEEDLIP GROVE, CITRUS, BUBBLES NUÓC ÉP | FRESH MELATI FRESH, PASSIONFRUIT, CALAMANSI, LIME, CITRUS CORDIAL I can say that I genuinely loved the hollow bread and the risotto the most. CAN GA FOIE GRAS was very interesting, I have never had foie gras before but what they put together with it was really interesting but played off each other pretty well. HOA QUA was my favorite drink from the two I got. CANH KHOAI MÖ risotto was savory and delicious. Had been craving a good risotto and it did not disappoint that's for sure. My overall experience was very great and I will absolutely be coming back to try to rest of the menu. read more

What a great happy hour menu that runs from 5-8pm!!! Delicious cocktails and food at fantastic price. I am definitely coming back again. Had a girl's night out and we were surprised to see the unexpected happy hour menu. You need to let the host know you want happy hour menu so that you can be seated at the bar area to get the deal. The main area doesn't get the happy hour deal. The space was modern and clean. The staff were very friendly and nice. The drinks came out right away but a little more wait for the food. Food ribs were so great! The fried fish was a bit fishy - expected more turmeric since it is called turmeric fish. The burger was great. My favorite was the shrimp cocktail with the zesty and slight hint of spice in the beet sauce. The rest of the main menu looks delicious too. The sesame ice cream - it was too soft and sweet. Not worth getting the ice cream. I gave a 4 instead of 5 star because we were disappointed with the ice cream. The main menu - gotta try next time. I didn't need to make a reservation when I got there on Wednesday at 6pm-ish. I didn't like the online reservation that required $25/person deposit so we just took a chance and walked in. read more

I will preface this review by saying that my husband and I had a great time at Ramie, but we usually have a great time together. .I did however expect a better food experience, given that Ramie has received very good reviews from Seatlle food critics. The amuse bouche was yummy and the duck custard was amazing . But the other menu items that we had were ok but not great. At times the execution was sloppy. My trout had a crust on it so thick that I couldn't cut through it. Sauces added to plates in slapdash manner. It's true that our timing was probably bad. It was the end of a busy night. Our reservation was for 8 pm - which is when we arrived. They close at 10 , but went into major restaurant clean up mode at 9:30 and any semblance of ambience was completely destroyed. The service was thin on the ground. read more
