Came here for a quick lunch after visiting a friend in the West side. Lots of seats available for you, small to larger groups. Also quite bright and decent decor, not too loud. Music is on the louder side though, but no problem. Quick review. You cannot sub ingredients/toppings, only noodles and if you're allergic to something. This is normal in Japan and I believe the owners are Japanese anyway. The staff girl is very kind, soft spoken and extremely patient, reminds me of staff in Japan. The broth itself was quite delicious. Only thing that put the whole dish down was the abundance of beansprouts, there were beansprouts on the top and bottom/side (?) but just a whole lot. The pork was almost paper thin and very small. Maybe if it came with more than just two thin meat, would be better. Otherwise everything else is okay. Flavor-wise it was okay, but nothing beyond expectations. The chicken karaage was even more overpriced. $9.2 for just 4 small pieces - so basically ~$2.5 a bite, not worth it. Very surprised with how good the broth tasted, it wasn't too salty and had a good flavour. The portion size was not bad for the price although it is a bit pricey. Spicy white sesame shio (4/5) - I thought the flavour was good except the meat was a little lacking. Black sesame tantan (3/5) - This was probably the weakest out of all the ramen we got, not bad but also not too good. Stone bowl shoyu (4/5) - This one had the best flavour and there were lots of toppings. There's less broth compared to noodles though so if prefer more soup, then this might not be for you. They did advertise the Black Sesame Tantan and Spicy White Sesame Shio Noodles as spicy but we did not find them spicy at all which was quite a let down. The noodles were bouncy and chewy which were the perfect textures in every bite. I recommend the tsukemen if you've never had it before. The depth of the flavours of the broth were so savoury and comforting. It had a hint of smokiness to it which we enjoyed. November 26, 2025 - What a wonderful event. Ramen Isshin treated me to a ramen of choice. I got the dragon ramen but had the sauce and jalapenos on the side just to make sure it wasn't too spicy for me (they said it would be spicy). The dish came with pork belly and a soft boiled marinated egg, topped with some garnish and the black fungus shreds. I tried without the spicy dragon sauce at first, but decided to put all the sauce in. It probably hit my upper spice tolerance. The jalapenos would have been too spicy for me. Any hotter and I would have just been chugging water . It had a bit of a Szechuan peppercorn taste (numbing sensation), among other spices mixed in with the red dragon chilli sauce. So flavorful. One heart... you can taste the love in the food. Love soup noodles on a cold day. It's a good sign when there are patrons in the off hours (mid afternoon). Honestly overall it's 3.5 stars as it's not amazing/excellent value (I'm the value hunter after all). Went here early with a group of 3 people plus 2 babies, the server was a bit frazzled trying to figure out the logistics of the high chairs and when we went to sit down, we noticed the high chair had not protective straps so I had to change to a booster chair which worked fine, my friend also used a booster chair for her daughter but that chair was also missing a part of the strap so it was not ideal for bringing a baby as their equipment isn't quite up to par. The restaurant is small and kinda dark inside, it's not particularly welcoming but it did seem clean. The menus are through QR code but their drinks menu is a physical menu. I ordered the spicy red miso ramen, it came with the usual toppings like pork belly and black fungus, and it also came with bean sprouts which added a nice crunchy contrast and ground beef for some extra meatiness. I thought for the price, they could have given me an egg, I didn't realize until after I got my order that I didn't get one, I guess my mistake for not reading it properly! I just don't understand ramen that doesn't come with an egg!! Anyways, the flavour was really good, the miso was evident yet mild, I enjoyed the toppings and the pork belly, it was really not particularly spicy so if you want spice I'd ask for more spice or go for a spicier option. Service was nice, at one point the babies were eating some food that I had brought from home and the server actually brought them some bowls to eat their food out of. I visited Ramen Isshin after hearing about it at a Yelp event. The restaurant is inconspicuously located in a corner in one of the plazas in front of Vaughn Mills Mall. The restaurant has multiple tables inside but also has a patio. You can always find seating. On this day, I decided to order the red dragon miso ramen. The wait staff was kind enough to recommend getting the spices on the side so that I can adjust the spice level. The spices include a red chili sauce and red and green chili peppers. The ramen broth is extremely hearty and reminds me of what I'm looking for in comfort food. There are so many ingredients that work well with the broth, including ground pork, wood ear mushrooms, bean sprouts, and green onions. The noodles are perfectly al dente. The soft boiled marinated egg is perfect. I love the way that the yolk is not too runny. Finally, the pork belly is tender and soft. The food is excellent and the service is superb. A Yelp experience introduced me to Ramen Isshin. The ramen was excellent. There was more to discover off this eatery's menu. This ramen place is in a plaza near Vaughan Mills shopping mall. Its Google Maps description says that it's across from Coco Fresh Fruit and Tea. It's also near Toro Toro Sushi. I had no problem finding an available parking spot. This restaurant has outdoor seating, which is unusual and cool for a ramen place. Staff have always been polite and attentive. It's a nice touch. I got the roasted garlic shoyu ramen during my Yelp experience. I asked that the bamboo shoots be omitted. It was yummy. My bowl of ramen had roasted garlic oil, nori, half a marinated soft-boiled egg, two slices of pork chashu, green onions, and thin, wavy noodles. I'll need to remember to get bean sprouts. This ramen didn't have it by default. The shoyu broth was rich, full of flavour, and delicious. It wasn't overly salty. It had a smooth, creaminess to it. The chashu was so tender. The ramen was chewy. I loved the jammy egg with the green onions and nori. The garlic oil made this ramen so special. I got water to start. Staff were attentive with refilling my glass with water and clearing my tray when I was done. I appreciated it. I got a cranberry umeshu, which seemed to be a limited-time offering. It was excellent. I loved the cranberry and plum flavours. The combination worked well, with a touch of citrus mixed in. It was a refreshing, enjoyable alcoholic cocktail. I also ordered sesame ice cream for dessert. It was so creamy. The black sesame flavour was so good. It had a roasted nutty flavour that was unique and perfect. I asked for the bill. I got to pay at the table with the machine. I paid with a credit card. I tipped and tapped. Done! I used the washroom before I left. There are two individual gender-neutral washroom stalls at the back of this restaurant. The one that I used was clean. This restaurant is a gem. I look forward to returning to go through more items on the menu. Came here on the weekend and the wait was minimal as the weather was nice and lot of people also sat outside which doubled the restaurants capacity. The staff were very friendly and attentive. They were able to allow me to modify the order to have the spicy white miso ramen with less salt and spicy chili oil on the side. I was initially worried that it'll be too spicy if it wasn't on the side, but having it all mixed in afterwards myself, it was a good kick. The sesame is provided in a separate small tray where you get to grind it yourself to your likely. As a result, it wasn't extremely busy but I prefer it this way. Excluding my table, there were about 3 other groups. We walked in, greeted by all the staff, and brought to a table meant for four but just the two of us. I liked that they tried to spread out the customers since it wasn't busy, which made the place feel spacious and more comfortable. The seating was quite comfy and the place looked very clean. We were instantly given menus - a physical drink menu but asked to scan a QR code for their ramen menu, then waters were served automatically as well. The server was quite attentive, coming back in a timely fashion to take out order but never made us feel bothers and/rushed. We were always asked if we wanted to order anything else, rather than just assuming we wanted the bill (i.e. we didn't feel rushed to leave even when finished our food). The highly slurpable broth floats perfectly made ChaSu and Onsen Egg on a bed of glistening noodles with spots of delicious oils and fats. Hungry YET??? If not, I would ask that you check your pulse - may have flatlined! For those who are less venturous on the spice level, they do have some great white and black sesame ramen. And if you like Tsukemen (dipping noodles), look no further than this place too! You really can't go wrong - and YES for those vegetarians, they have a ramen for you too! You cannot go wrong with the white sesame miso. I love the grinded white sesame. When smashed it's super fragrant and taste great in the broth. The noodles are perfect and the pork is super soft! Both times we've visited there has been barely any people, so this place is criminally underrated. Hosting some of the best ramen in the GTA, Isshin is still my favorite ramen place to date. Located in the plaza (Tuscany Place) just outside Vaughan Mills this location used to be a Thai restaurant. Renovations have made the interior very zen. It's not a big place with less then a dozen tables. Good selection of ramen with a couple of rice bowl options. Standard options of appetizers from edamame to gyoza to karaage. Ramen broth is good. The spicy white miso was spicy enough to have a kick but not be overpowering and the chicken shio was different (in a good way) from the broths we have tasted in other ramen places. Both bowls we ordered came with sesame on the side that you grind before adding to the ramen. The rice bowls come in two sizes, regular and large. We were told that the regular size is more of a appetizer size. Nothing remarkable about the rice bowls, the toppings are arranged very attractively on the top but you really have to mix to the bottom before eating, otherwise you just end up with plain white rice at the bottom of the bowl.
