    Very hefty quesadilla! They don't skimp on the finely shredded chicken in the Enchanted Chicken. Two people could easily split it for lunch. Great flavors and lots of gooey cheese. The salsa and sour cream were a great addition.

    The most INCREDIBLE quesadillas you will eat. Never expected to find such a delicious food truck in the middle of Moab, but I will definitely not complain - except for the fact I don't live close enough to come back anytime soon! They don't serve your average quesadilla - these quesadillas are gourmet and positively packed with lots of cheese and fresh, delicious inclusions. I don't think I've ever had such a massive quesadilla. The Southern Belle was INCREDIBLE with savory beef, onions, corn, potatoes... Just thinking about it makes me want another one. Only downside was the chipotle lime sour cream on the side did not have as much chipotle flavor as I would've liked. Small little outdoor seating area, but super nice and has misters - it was so hot outside while we were here, and this made our meal so much better! Hands down, highly recommend stopping by for lunch or dinner.

    Awesome vegetarian food, also they can customize quesadilla for Jain (no onion, no garlic, and no potatoes). Just ask them for a cheese quesadilla and add as many veggies as you want. The taste was amazing, must try the place if you are vegetarian. They took their time to understand what we were asking for and prepared nice quesadilla. Kids and adults both ate whole quesadillas.

    Service was friendly and food came out quick. It was nice they had their own dedicated seating outside the Moab Food Truck area. Quesadillas are definitely loaded, but the meat (both chicken and pork) lacked that "pop" of flavor without dipping in the salsa or sour cream.

    A food truck just short of 5 stars?!?!?!? Had to see and taste it for myself. We came here pretty hungry after sunrise hiking at Arches and decided to split the Southern Belle quesadilla that was toasted to crispy perfection. It's HUGE! Plenty to share since there's no way I could eat one of these on my own. It's so THICK too! Came stuffed with red chile shredded pork that's ultra tender and very flavorful, sweet potatoes which I happen to love and an interesting addition, and sautéed corn & onions for extra flavor as if it wasn't already flavorful enough. Each bite was fantastic. Our quesadilla also came with salsa, sour cream, guacamole, and chipotle lime sour cream. We ate it all up and left totally satisfied. Appreciate all the outdoor seating that's shaded and the friendly service with a smile. This place should definitely be on your Moab list.

    My husband and I had the Cubano's Cousin which had red chili pork, black beans, sautéed jalapeños and onions, banana peppers, and of course, cheese. It was one of the best quesadillas we have had. They didn't skimp on the ingredients. Great bang for your buck. Definitely give this little yellow food truck a try!

    We had read excellent reviews of this food truck and stopped by for dinner on our second night in Moab. It was also very convenient to our hotel and adjacent to a larger food truck park. I would agree with the reviews that the quesadillas were delicious. We split a New Mexico Identity Crisis enchilada, plus chips and guac. I believe this is a woman-owned truck based on the staff. They got busy right after we ordered, and definitely seem like a popular spot. Highly recommended.

    Didn't find this place by reviews, google, Yelp, or anything online. Stopped one day when we were out here 4 wheeling. 1. It gets busy, so plan for some time. 2. Just eat there. It's very very good. 10/10. No further explanation needed. If you know my reviews you know what #2 means. Just go there. Thank me later.

    My husband loves quesadillas, so as soon as he found this place in Moab, he told me we were going. We tried the Southern Belle. I loved that it wasn't your traditional quesadilla. The addition of sweet potatoes was my favorite part. There were many other options I would have been happy to try, but we went next door to check out the food truck park. I'd happily come back next time I'm in Moab.
