I was very impressed with how perfectly crispy they managed to get the tortillas given they were packed with so many ingredients, because sometimes quesadillas become limp as you eat them because the water/steam from the stuffing softens the tortilla...but not here! And the salsas? AMAZING! They had the perfect amount of heat that paired really nicely with the quesadilla. Simply amazing. We came here after a day of hiking the Canyonlands, around 4:30. There wasn't much open on Main Street, food wise at this point (most places close between 2/3pm- 5pm, unfortunately). We had passed it before and figured we would give it a shot. OMG, So glad that we did! The quesadilla is amazing, the flavors they put together are sublime, but what really elevates it, are the sauces. We opted for the southern belle (red chile beef, roasted sweet potatoes, corn, & onions), and loved it! As for the sauces, we opted for mild salsa (so good, tastes really fresh and sharp!), guacamole (of course), and the jalapeño lime sour cream (get this!). Together, all these flavors are perfection! Grab a seat outside on the cool outdoor area (thankfully, covered by an awning!) after a hike, a ride, or a particular long afternoon, and enjoy! I came here on a Saturday afternoon and it was quite busy but the line moved very fast. The lady taking orders was very kind and helpful--and it was her first day!! Oh my goodness, the quesadillas here are heavenly! My friend and I came after a long day of hiking and were so thankful they took our orders since it was a few minutes past their closing time. The service was fast, and it was hard to believe how they were able to make such delicious quesadillas in such a short amount of time. We shared the Enchanted Chicken and the Sweet N' Spicy and loved both! The portions were huge, tortillas nice and crispy, and the flavors perfect. The salsas they came with were amazing as well. Wow what a gem! Adorable food truck in the middle of downtown Moab. Service was friendly and sweet, they have a lovely little patio, and the food is absolutely delicious. We were here for a quick grab and go and the food didn't disappoint. Vibrant and beautiful to look at and the most flavor packed quesadillas I've ever enjoyed! My family loved their enchanted chicken and I had the sweet and spicy vegetarian one. Place is super clean with outdoor tables and chairs with adequate protection from the hot summer sun and lotsa room for patrons to safely practice social distancing. I needed food and I needed it quick. That's where Quesadilla Mobilla came into the picture. Arriving to a chill setting. The truck is up against a building while the outdoor seating is covered by several tarps. The perfect setting for a relaxing afternoon. The menu was simple as it was posted for everyone to see on the side of the truck. I immediately gravitated toward the "Enchanted Chicken." There were a few people in line before me (no big deal) and, soon enough, the kind woman was taking my order. I sat down and camped as they prepared my quesadilla. Exciting, right? In about 5-10 minutes they called my name and glorious quesadillaness was in front of me. The portion size was perfect, the salsa and sour cream were perfect sides. They have simple menu with 6-7 different types of quesadilla with great tastes and yummy stuffing inside. We had enchanted chicken and sweet and spicy both were really good! The portion is served with four slices and they are in huge proportion. They don't give you chips and salsa like other restaurants does, you need to pay for it. I simply loved their sitting area with the minster spray on you, its amazing. We had just parked in our hotel and had walked down so i don't know how the parking manages but i didn't notice any specific parking area, may be you can park down on roadside. This is like a party on wheels. For those of who haven't been to Moab, Moab has a good truck park in kind of a fairground. And miss Quesadilla Mobil's stands right outside that park happy and glorious feeding the hungry hikers and the romantic Moab lovers. I was in Moab for 3 days, I made sure I located this place my very first day and got brunch here before heading to Arches for a 7-8 hours of hiking. On day 3, we went to the Arches early in the day and we started driving back from there at 4:30, at that point we were literally racing against time to ensure that we get to Thai place before it closes because I was craving for these so bad I could not have settled for anything else. And we made it there at 4:57 and They took their last order of the day from Aditi. The menu is anything but traditional and for those of you willing to experiment, this will be your favorite place. They had made quesadillas healthy and much more tasty. You can actually hold the quesadilla with one hand without needing to support its sagging end with a finger. The crust is nice and crunchy and filling is yummilicious. I got the vegetarian "sweet and spicy" one both times and I strongly suggest it. I loved their salsa and chipotle sour cream dips on the side. They have a huge hand sanitizer bottle right next to the take out window and that just makes your complaint opportunity go negative.
