We were hungry after hiking so we ordered a bunch of things off the menu, including the birria, huaraches, sopes, and a quesadilla. The huaraches were interesting and unique, we had never had that before, but the flavor of everything left something to be desired. The staff was friendly and helpful, and the atmosphere was very welcoming in the little patio area outside the food truck. And the fries... don't even get me started. I honestly don't think I've ever had fries quite like these. Crispy on the outside, fluffy inside, and incredibly addictive. This place just screams local in all the best ways. There's no indoor seating but there are plenty of shaded picnic tables outside that make for a great place to enjoy your meal. Summer hours are 11:00 a.m. to 8:00 p.m. If you're anywhere near Moab, do yourself a favor and stop here. This is the kind of burger you'll be thinking about long after you've left town.

It was packed with spinach, spicy roasted sweet potatoes, red bell peppers, black beans, and green chile all melted together with cheese.
