Stopped by for lunch and the staff is amazing and the vibe is cozy inside. The weather was a bit chilly so we opted for the Pho. Unfortunately, when we ordered, they didn't have the beef broth, but said they could just add beef to the vegan broth which they said was still delicious so we went with that. Luckily, a few minutes later the beef broth was ready and our waiter walked over to confirm we wanted to switch to the beef broth. They also recommended their seasonal chili Verde sandwich made with local hatch chilies. The sandwich wasn't bad but was a bit over salted and didn't really have a chili Verde flavor. The Pho on the other hand was delicious and filling! Exactly what we needed on that cold day. Definitely recommend this spot if you're in town! This place is busy. It took about 20 min to wait for our table. Our server was prompt. She already had two carafes of water waiting for us at the table. I ordered Hi C non alcoholic drink. It had hibiscus, yuzu, sparkling water and ginger. Very refreshing. Hubby and I ordered the Beef Pho. It had Wagyu thin slices and chunks of chuck roast. I got takeout from 98 Center in my second week living in Moab. I got the pork belly plate starter and the bánh mì plate. The pork belly was spectacular, and I'm always a fan of marinated soft-boiled eggs. Same with the meat in the bánh mì entree. The side vegetables were also good. The rice was a little tough. Overall, I think eating in restaurant would be much better with everything fresh. I was in Moab helping build houses with Community Rebuilds. They were both delicious. I never asked so maybe there is an option for it, but I would prefer to have this bahm mi bowl with some vermicelli noodles instead of stick rice. My friend had a beef pho and she said it was one of the best phos she has ever had.
