For someone who is trying to follow Dr orders and be gluten free this spot is a haven! The sourdough bread is full of flavor but also so easy on the belly of any with gluten sensitivity. And flaky and delicious to the point that you want to buy one of everything! We got some sourdough bread as well as a few croissants, cookies and then had a slice of focaccia pizza for lunch. It was so light and airy and yet tangy like a true sourdough. I couldn't stop eating! My husband inhaled his and then went to buy another piece to take with us (he ate it the next day for breakfast)! So amazing and I didn't have any side effects or belly ramifications. Truly a miracle. We would go here daily or start working here to get more of their flavors. Yum! I have been buying Proof Bread for a very long time, and have visited most of their locations over the years. I've enjoyed watching them grow and have been really impressed with their progress over the years. The switch to home ground Rouge de Bordeaux on their breads was nothing short of amazing! The baguettes easily are one of my all time favorite items, followed by several of their loaves. Croissants are hit or miss for me. They tend to run a little too flaky for me, and sometimes when they're extra brown it makes the flakiness even more pronounced. Seasonal dessert croissants tend to be the most enjoyable, though I personally gravitate towards savory items. I recently tried a couple of their pretzels, and unfortunately, they were a disappointment. At $7 each I was expecting something special - they were ok, but maybe should have been $5 a piece considering the staff did not pack the cheese sauce in my order. By comparison a whole baguette, a fruit and nut boule, or a green olive boule is also $7, making the pretzels without cheese sauce feel overpriced. I would have not ordered the pretzels at $7 a piece had I known there would be no cheese sauce. I reached out to Proof via DM to share my experience, but have not received any response, though the message shows as read. The service portion of the experience (in store and online) fell short. I wanted to rate this visit higher, but not acknowledging customer feedback is a dealbreaker for me. read more

I have been following Proof for years on social media. I learned how to make sourdough from videos that the owner Jon posted on YouTube. I have to say that once I finally got to experience the product in person I was not disappointed. We got a loaf of Khorasan bread and many assorted pastries including the rosemary twist and the morning bun which were my personal favorites. I can't recommend this bakery enough. I came here today to pick up some sourdough bread (apparently this bread is what a lot people in Blue Zones eat) and opted for the green olive boule ($7). This is a sourdough bread and I had it for breakfast this morning and it was delicious! I love olives and also sourdough. I did my happy breakfast dance this morning haha. I deducted one star as hours are very limited here and it closes at 2pm, makes it hard to always get here in time. I'll be back to pick up more sourdough bread when I get a chance. The prices are a bit high for bread, but you're paying for quality. read more

I love this bread but since they got rid of the in house slicer and depend on slicing the bread outside of the store - TRANSPORTING it in a vehicle with no temperature control - and then bringing it back to sell, I am having an issue with keeping my bread from molding. Usually it takes us 5-7 days to eat and it's never been a problem till this summer. Several loaves are moldy just 3-4 days after purchase. It's problematic. The solution of the little moisture control packets they put inside don't seem to solve the issue. They have replaced the loaf when I've brought it in. but I'm hoping to find a better solution. Until then. I will simply only buy unsliced bread moving forward. read more

Came in before they closed because I wanted a great cookie for the ice cream sandwich I was craving. Was helped by a nice employee who also lived in the ATL before. Anywho, I bought 2 cookies, he suggested I buy the last 3 left but I only bought two. Now I wished I had followed his advice lol. The cookie had the perfect balance of sweet and salty. I went to Bashas and bought some ice cream to make a sandwich. It was tre magnifique! I don't do dessert often but when I do.... anyways love this place. Never a bad experience. Dropped by because I started the sourdough trend and did not realize could not bake right away. I had a family dinner party and had to bring I no fresh baked bread with minimal ingredients. Decided to stop by was not disappointed. There used to be saw a glorious pan eu chocolate.. I how I adore the buttery golden flaky layers, with that almond and hazelnut scent, dark roasted cocoa and that gaze that is softer that gianduja cream, molten, bittersweet chocolate... I will certainly be back and can't wait to try the almond and strawberry cheesecake croissant! Saw they were at 99 reviews, figured I owed it to them. Anyways, I've been going here for a few years. First found them at the Flagstaff Farmers Market. Sourdough is top tier, pastries are delicious ( Especially them pumpkin curd danish around October / November! ) and the cookies are good as well. Staff, at both the farmers markets and the Shea location are nice, and always willing to give some samples. The Shea location is nice and clean. Only thing I'd say is that it's a touch echoey. Maybe a couple rugs would do well. All around, I really enjoy proof, five stars for sure. BUT.... MANAGAMENT IF YOU SEE THIS....PLEASE BRING BACK THE SEEDED MULTI GRAIN BREAD FROM A COUPLE OF YEARS AGO. My wife and I were super bummed to find out you'd gone a different direction with that. Wifey is mostly gluten free and only uses sourdough bread so I get sent to pick some up for her, usually on Sunday mornings over off Litchfield and Indian School. Not too terrible of a task as they also make bomb pastries as well and I ALWAYS make sure to get me some! The proof is in the bread. My brother is currently obsessed with all things baking, so visiting Proof while in Phoenix was a no-brainer. This sourdough bakery crafts gluten goodies on the daily. We arrived mid-day and Proof still had a variety of items available in the showcase: croissants, loafs, chunky cookies, and several pizzas. I grabbed a margarita pizza to-go and a iced vanilla latte with oat milk. The pizza was thicc, chewie, and topped with the juiciest tomatoes. Sourdough pizza is different than anything I've ever tasted and I can officially say I'm a fan. The latte was also tasty and packed the perfect caffeinated umph to the second half of my day. Proof Bread, what a treat. I've tried them before but haven't visited any of their bakeries until now. They are a featured business on TooGoodToGo, an app dedicated to reducing food waste. Be aware: their bags go fast. I was lucky enough to reserve one yesterday so I could pick it up today from 2-230, after they close. I arrived a few minutes early and went to the side window as instructed. Even though I was early, the employee was helpful and picked out a bag for me. I got home and saw it was a chocolate croissant and a chocolate & fruit loaf, score. I really enjoyed the loaf; it was filled with chocolate and fruit bits and it was crunchy on the outside, soft on the inside. Perfect texture. Always delicious, always fresh, always something new in the shop. Today I went to go pick up my online order and saw this yummy slice of pizza staring at me. So, I grabbed it, and then saw they had some Rye flour, and grabbed that as well. I like being able to order online and pick up in store so I can get what I want without worry it will sell out. And everything sells out, it's that good. I haven't tried anything I didn't like. It's so hard to find good, crusty bread, but, this place gets it right every time. I love this place !! The 2-3 times I've been in it's always clean and has a smiling welcoming person behind the counter which is exactly what you want at 7 in the morning haha ! For my order I had a morning bun , chocolate croissant and 2 chocolate chip cookies . The morning bun I've never had and WOW . It's as if a Cinnabon and a light flaky just right crisp croissant made a baby ($6) AMAZING. Best $6 you'll spend ! The chocolate chip cookie is a masterpiece soft , with a crisp good chocolate chunks and just soft enough ! One of my favorite in the valley if not the best one ! Sooo good! Grew up getting bread at this bakery :)). Prices have increased a lot which is def unfortunate and makes it harder to shop here, so now breads are up to $10-$12. Still got the Jalapeno and Cheddar Sourdough recently (and sliced on my professional bread slicer lol) which was sooo good and the Fruit and Nut Boule bread which is cool too. I'm so pleased to have found this gem of a bakery. We've been twice now, each time was perfection! I tried a slice of the veggie pesto pizza- it was divine! Today we had a pumpkin curd croissant square that was outstanding. We also got lattes and loved they were serving press coffee. Will return for a boule next weekend! The interior is spotless clean and has a cute little play area for kids as well as places to sit and enjoy your treats. Service was very attentive and friendly. I'm so happy the Proof has finally opened on our corner! How long do you think it will take for my husband to realize that all Proof baguettes don't automatically come with the ends torn off? I'm at my most Italian when I'm digging into that bag on the drive home. The sourdough loaves and baguettes are perfect - crunchy on the outside, deliciously smooshably on the inside. My favorite is the rosemary loaves, but we probably won't see them till the fall I'm guessing. We also love the seeded loaves. Unfortunately the vegan options are currently limited - none of the sweets, etc. can collect my money. But maybe they'll expand options with the new location! Proof uses the highest quality ingredients, everything made is sourdough based. I've been hooked ever since I've laid my eyes on a loaf of sourdough with a creative design seared on the side of it at the Uptown Farmers market. Love at first sight. It's so cool Proof opened up a location in the Sheaborhood (32nd at and Shea). Press Roastery on one corner, Proof on the other- all the essentials are covered at this intersection. I arrived near close, around 1:30pm on a Friday. The selection of breads and pastries looked a little anemic but I could not say no to a twice based chocolate peanut butter croissant.
