I loooooveeee their almond croissants!!! So flaky, so buttery, so creamy. I make it a point to stop by and see what they have left every time I find parking in the block. I've also had their white passion fruit cake and kabocha bread. Both soft so creamy in every bite. The kabocha bread is vegan so it made me feel a little less guilty when I swallowed the loaf in full. Love that it was glazed on top and it had some pepitas to contrast textures. The passion fruit cake is not buttercream frosting so I won't get that again but it was still delicious. The passion fruit filling in the middle complements the plain white cake well because it's so tart. Definitely satisfied my sweet tooth. I was really looking forward to this bakery! And it didn't disappoint. I would've liked a bit more selection with the pastries but can understand they have to rotate items seasonally with how small they are. Pastries and sandwiches were pretty good! Nothing mind blowing but could easily drop by again for some pastries and coffee. Good coffee too! Friendly staff made sure the line kept moving and it wasn't too long of a wait. It could be hard to get a table around lunch and the baguette sandwiches were unreasonably small haha (probably the smallest baguette sandwich I've ever had- it was similar to a Ficelle but unsure what they called it). I went and grabbed a sandwich and it was the most disappointing meal I have ever had. The sandwich is extremely narrow and barely had a thin slice of ham and one small layer of cheese with a pathetic 1/2 a pickle. For over $10 it was a big waste of money. My local friend loves this place and we hit it up for breakfast one morning. It's easy to get to, has some outside seating and a cool vibe. The pasties are amazing. This place is excellent for a variety of baked goods and for your caffeine fix. A couple of friends and I we're about to hit the road for a 3 hours, so we wanted something quick and convenient, but also very delicious. My friend recommended this place. There was quite a bit of a line which I was told is normal. The way it was only about 20 minutes before we were able to get inside and start looking over what we were going to order. For myself, I got the ham and cheese croissant. I thought this was very buttery and flakey and was what I would expect from a great bakery! I hope to come back and try some of their other goods. We ordered some of the small cookies as well and I thought those were great also. I actually didn't order the coffee either as I was already drinking coffee that I made at home that morning. Our friend had a nectarine layered chiffon cake with  buttercream at her house gathering and we were hooked! We knew we had to come back...we decided to stock up on a bunch of pastries the very next day for a family gathering so we could try everything. We got croissants, almond croissants, jam croissants, ham & cheese croissants, cookies, scones, cream puffs, corn cake.  Did I say croissants? Just get anything with croissants! It's good this bakery is nowhere near where I live or else my waistline would be in even more trouble. Our family was oooohhh and aahhhh taking a bite of everything. Delicious, decadent pastries! A bit pricey, but after tasting what there is to offer, I'd say it takes a lot to make them! The Croissants are what sold me. I love the crispy, textured bites that come along. The subtle flaky, butteryness is balanced with a hint of sweet and dougheyness. It was moist, not bland, and retained it texture even throughout the hour that I've taken it home. They have really good and interesting-tasting pastries here at Proof Bakery. We ordered the cardamom morning bun, the pain au chocolate, and the hazelnut croissant. The cardamom morning bun was really good. These were some of the flakiest croissants I've ever had. The cardamom is very strong and noticeable in the pastry. It had a very nice filling, with an aromatic taste. The chocolate croissant was basic tasting, but again it was incredibly flaky. The hazelnut croissant was also very good. Again the exterior was flaky. The hazelnut flavor was very noticeable and added a nice taste. The quality of the pastries is good. You can tell they bake them fresh every day. The presentation was pretty standard. The portion to price is fair. The pastries were pretty big and at a fair price. The pastries were well worth the price. The staff was very friendly. They were helping us choose what pastries to get. She got our pastries from the display case fairly quickly. The ambiance is really nice. The inside is a little cramped, but the decoration makes up for it. It has a very modern vibe. The place was overall very clean. The parking is a little difficult because it is only street parking. This was probably the best ham sandwich ($8) I've ever had. In. My. Life. I serendipitously happened upon Proof. I was in the neighborhood and it was lunchtime. I picked up a ham sandwich and an almond croissant for good measure. Fast forward ten minutes later, I bit into the sandwich and an explosion of flavor hit my palette. Mind you, there's nothing fancy looking about this sandwich - it's a small, skinny baguette packed full of high qual ingredients: ham, cheese, cornichons, and butter (I think). It was creamy, briny, and savory all in one bite. Before I finished my bite, I made my way back to buy two more sandwiches. That's how much I liked it. Came on a Saturday morning and was prepared to wait at least 20-30 minutes. I was pleasantly surprised that I only waited about 10! The line snaking outside makes sense when you realize just how tiny the place is. Service was friendly and efficient. I came in excited to try the almond and ham/Gruyère croissants and was disappointed to not see them in the case. I get it's a popular place, but I was there two hours after they opened, and knowing what their full selection is vs what was in the case, it's frustrating they were already out of so many things so early in the day. I ended up getting the pain au chocolat and the spinach roll. Total came to about $11.50, which is not cheap, but on par with other artisanal bakeries in LA. I was starving so I didn't take the time to warm them up when I got home. Despite this, they were both very good even when cold. They are on the smaller side, especially considering what you pay for them. I think this place is a liiiiiiitle overhyped (there are better and cheaper bakeries in town), but I would come back to try the two croissants I wanted to try. If I haven't bailed on their dependably long lines at the weekend, I savor the superior craft of their european style patisserie productions. No predictable rehash of muffins, brownies, and cookies --american mush bakes-- here. If you're a fan of the Great British Baking Show, this bakery holds a candle to some of the particular recipes that require process and finesse. My favorite is the almond financier, which has the just right crunchy exterior and the delectable interior. Their olive oil cake with a thin citrus glaze is wonderful to wash down with coffee. I recently had two unique tarts: the hibiscus lemon tart (punchy citrus with a soft meringue style cream topping) and the fresh fruit tart (a nutmegy-vanilla custard base with strawberries, cherries, other stone fruit, also unusual). It's obvious their quality is in another class to the standard fare. The niche of speciality patisseries in the not-showy strip of shops along this walkable stretch of Atwater Village feels vintage and unpretentious. It's no Louis Bottega in downtown LA with its extravagant restaurant style, chandaliered interior. I get my pastries to go, and because LA offers no socialist shady parks with shared public bench seating, am left with the American capitalist affectation of roadside dining along three lanes of cars roaring by and homeless people collapsed in the pitiless heat just nearby. This is the colonizer American dream after all! read more

I walk here literally every weekend for a salami sandwich, like it seriously will be a factor against ever moving away. The famously long line isn't actually always there but we usually get there around 11. It's quite small inside so it's easy for the line to stretch out the door. Anyway, the salami sandwich: it's a cute sandwich you could picture Madeline eating for sure. The bread is fresh, crunchy, and lathered in tons of chive butter. The salami and manchego is nice & salty. I actually hate arugula but somehow this sandwich has me licking my lips as I eat it. When it's over, I get so sad that I have to wait another week. As far as anything else, everything is great and it really just comes down to personal preference. My other favorite is the canele--perfectly crispy outer crust with a subtle, sweet caramelized flavor + the inside is soft and custardy. They are known for their croissants. Not always my go-to but they are crisp, flaky, buttery, and the various flavors are all good; I'm usually most tempted when they have the toffee pecan. After getting used to these you definitely notice the downgrade in quality when you grab a croissant elsewhere. read more

I've been trying to visit Proof Bakery for a few months now, but unfortunately they close quite early and by the time I'm actually in Glendale, the bakeries already closed for the day. But luckily, I had some time after work and the bakery was still open! I made a call before heading over to make sure there were actually some pastries left. I didn't realize that Proof Bakery was in the very busy neighborhood of Atwater Village. Tons of brunch places, an outdoor farmer's market, and lots of people walking around and enjoying their weekend. Parking is extremely hard to find unless you're one of the lucky ones to secure a spot in the back lot. Otherwise, you'll have to scour the very narrow streets for a street spot. I just parked further away and walked to the bakery - not worth it to try to parallel park when there's tons of traffic. The only thing that I was able to purchase was the pistachio and cherry croissant - everything else that I wanted to try were already gone. They had some cookies and other items left, but they didn't appeal to me - and the price tag for each item definitely made me pick and choose which items I wanted to get. So I settled for a croissant, especially since I've heard good things about them. The pistachio cherry croissant was fresh out of the oven, still warm in my hands after I paid for it. Probably the most I've ever spent for a croissant - $6.50! - but I had spent the time to find a parking spot! And I have to admit, the croissant was one of the best I've ever eaten. Although there wasn't much cherry flavor, I did get a good amount of pistachio. I loved how there were the crispy edges to the croissant that were breaded from the pistachio and extra batter (not really sure if I'm describing it correctly). The croissant was flaky in some areas and soft and chewy in others. There was a coating of pistachio and cherry paste inside - I almost ate the whole thing sitting in my car ready to go to my next destination. I don't know how I was able to refrain and save a piece for my dad. I could taste the richness when I got to the flaky texture of the croissant, but when I got to the softer parts, it wasn't too heavy. If this was how good the pistachio cherry tasted, I definitely want to try their almond croissant! But for $6.50 and with horrible parking and items selling out very quickly, it'll probably be up to chance before I'm back for a second visit. read more

Great bakery - they craft their wares carefully. Long skinny sandwiches are very tasty. I never though I would enjoy a roasted broccoli sandwich, but they made it sing. I first heard about Proof Bakery from one of the BuzzFeed Worth It videos several years back and ever since I saw the chocolate espresso cake featured there, I had wanted to try this cake. Years went by and I completely forgot about this cake, but I suddenly remembered it when my mom asked me about what kind of cake I wanted for my birthday. Proof Bakery is a bit out of the way for me, and I thought myself a little ridiculous for driving 30 minutes there and back for a cake. I justified it by telling myself that it was a one time thing. When I got the cake, I was ecstatic to finally be able to try something I had desired so many years ago. The cake itself just looks delectable with its pristine smoothness and breading on its edges. I took my first bite and it was certainly delicious. Ultimately, I thought it was a great cake, but not worth the 1 hour drive in total. The next day, I woke up and craved the cake, so I went to my fridge and ate a slice. I still did not think it was worth the long drive, but each successive day, I thought about the cake and how I wanted to continue eating it. Eventually, I had finished the cake I had bought for my birthday and days after I kept thinking and about it and wondering why I was so fixated on it. I came to the realization that this was a truly amazing cake for messing with my head the way it did. Eventually, the cravings dissipated as time went on, but when my mom's birthday came around, I instantly suggested getting Proof Bakery's chocolate espresso cake (and we did!). If you're in the area and like cake, I highly recommend trying the chocolate espresso cake from Proof Bakery. In my honest opinion, this is the best cake that I have ever eaten. read more

Coffee - 2/10 - Just wasn't my type of brew it was too thick and syrupy for my taste. Not sure if they warm up treats there because the quiche was cold. I am so happy I found this bakery while looking for what is close to Maru Coffee for a nice treat! I got the seasonal croissant, which was spinach, onion, béchamel and cream cheese. What a creative and delicious croissant! Beautiful flaky layers with the creaminess of the filling was just a wonderful breakfast. I think the best indication as to how much I loved this bakery is by telling you that on my week vacation to Los Angeles, I ended up coming five days in a row. This place not only has some of the best selection of baked goods, but pretty gnarly coffee. Croissant: what originally brought me to Proof was their croissant. Usually when I go visit a new city I like to try whatever the best croissant is said to be. And boy was this it. Ultimate flakiness, with a crunchy exterior and layers. It's no wonder that these flew off the trays in no time. We ended up having one croissant a day for the entire trip. Both their plain croissant and ham and cheese croissant or a must do. The ham and cheese croissant was very tasty, though I will say that the ham was a little conventional (sort of resembling a slice of deli meat, not that that's a bad thing). Quiche Lorraine: we had this on the last day of our trip, and I will say that this is one of our biggest regrets. The quiche has a perfect crunchy crust with an egg soufflé like texture. The chocolate chip cookie was crisp with layers of rich dark chocolate and topped with coarse salt. A solid cookie, though not the best we have had. The cake had a chocolate ganache, espresso cream and buttercream filling. It was so rich, the two of us were not able to finish it in one sitting. Not the best balanced cake, and a whopping $7 for a slice.
