How have I never heard of this place? I wish I read the reviews to know what to order, but honestly even the less popular goods I got were delicious. My friend got a croissant that she said was perfect. I got some almond pastry that I can't remember the name of that I didn't think I'd like too much (wanted to take a chance anyways) and the miso chocolate cake. Almond pastry was divine. Not too sweet or dense and a little moist. The miso chocolate cake is a deep and rich chocolate with a unique depth from the miso. My immigrant parents loved it because it also wasn't too sweet (although I wouldn't have complained if it was lol). I'm so happy I finally got to try the famous sea salt chocolate chip cookie from Proof!! It was absolutely deeeeelicious and not too sweet. The staff were friendly and helpful. I didn't like the hojicha strawberry combo for the mochi cake -- strawberry tasted strange tbh, so next time i would try a different dessert. I never venture to this part of town but when in the area I have to stop by proof bakery. The bakery is small and usually has a line but the line moves quickly. I am a big fan of their sweets and occasionally order a cake when I have time but the main highlight for me is their chocolate chip cookie. The chocolate chip cookie is a must get in my opinion and it's one of if not, the best cookie in LA which is a bold claim. Store is very nice with decor and staff is always friendly. Cute shop in a cute area. All of the pastry options looked really good and the four I decided to try were as good as they looked. Ham and gruyère croissant was flaky, flavorful, and each ingredient seemed well balanced. The chive and gruyère biscuit was dense, but it wasn't dry at all. Again, tons of flavor packed in. The morning bun and chocolate chip cookie were perfect sweet but not-too-sweet treats to round everything out. I really liked that the chocolate in the cookie was more on the semi-sweet/dark chocolate side and the cookie itself was slightly crispy on the edges and soft in the middle. Love their scones!! I've been here twice- the first time I had a cranberry scone and the second time I got a lemon poppyseed scone. Both times, the texture of the scone is perfection. Their chocolate chip cookie is also pretty good. Sadly, their coffee was not "it" for me. I got an iced cappuccino/short latte, and the espresso was definitely a lighter roast. The taste was not pleasant and I will probably refrain from getting coffee the next time I come here. Service is good though. read more

8/20/2025 Went last Friday before noon. Been a long while since I've last been here. But it's my first review on Yelp. Lemon Verbena Blackberry Napoleon - Good blackberry flavor, the blackberry cream was not overly sweet either. Love the light crispiness of the puff pastry layers that were thin, yet flaky. The napoleons I've tried are usually more thicker puff pastries that you have to cut into with a knife, but this one was easily eaten without one. It was perfectly delicate and it was a nice surprise. Love the sugared lemon verbena on top. It had a beautiful herbacious citrusy flavor. Gateau de Savoie - Mango was the fruit! Thought it was peach. I was a bit disappointed to find out. Not sure why I didn't ask first. Fluffy and spongy cake. Top was a light meringue crunchy texture. Did have that eggy taste, which I don't like. Whipped cream filling but had a slight cream cheese like sourness to it. Didnt love it. I'm skipping this next time. Pain Au Chocolat - Excellent! Very flaky and buttery. This was so good, I did not stop eating until I finished the whole thing! The bittersweet chocolate was good too, but wish there was a bit more. If I had to compare to the chocolate croissant at Artisanal Goods by Car, I think they win overall. But this is a very close second! Corn & Pepper Biscuit - This was disappointing. It was a bit dry in some areas. Was a bit confused when I ate it as my whole mouth was underwhelmed. It tasted like a corn biscuit with pieces of pepper in it, I thought it was thinly sliced salami or something at first. Really wanted a good biscuit and this was a big letdown. Customer Service - Overall it was good, professional service. Nothing exceptional. Parking - Street parking as always. I found neighborhood street parking on Garden Ave. after driving around the block twice. It's a bit confusing parking around this area. A great place in Atwater to grab some croissants and coffee or some interesting seasonal pastries. While I'm aware they have had some recognition of their croissants I would say they're a 7/10. Their pastries are unique and the greatness of them is they're usually made with seasonal fruits and ingredients. I have yet to find something here that throws me over the moon but it is still somewhere I don't mind frequently visiting for a latte and some goodies. On weekends there is usually a line, but during the week you will find it more mellow. read more

I have gone to Proof Bakery twice. I bought a slice of carrot cake, which looked way better than it tasted. They may have added orange peel to the batter, which drowned out the carrot flavor, which is the point of carrot cake. I went again for breakfast, and the latte was the perfect temperature, and the barista was pleasant, but the milk had turned. Seriously?! If the milk has a funky smell, please don't put it in espresso drinks that take time and effort to make. Even though some of the photos show coffee served in crockery cups, they only offer paper cups. I tried the quiche, but the crust wasn't in the least bit flaky, and I suspect it was made with vegetable oil instead of butter. There was hardly any filling in the quiche and not much flavor. Supermarket quiche is better. Almost all of the croissants were burnt, so I tried the less scorched flavored croissant, but the cherry inside was like a gooey pop tart filling, not fresh cherries or even cherry preserves. The little cakes were okay, but didn't have much flavor and were dense, not light and airy. To make matters worse, the counter server was very impatient. She kept asking me if I was through after each item I requested. No one was behind me for the first two items, but when someone showed up, she informed me that someone was waiting behind me and let me know I had to wrap it up. I only ordered 3 items, and I didn't take much time to request them. There were other counter staff milling about, so I don't understand why one of them didn't step up to help the next client. None of the tables outside were clean. I and another customer had to wipe off the tables ourselves. read more

One of my favorite bakeries! I came on a Sunday morning, so the line was a decent size. I got a cookie, a coffee, and a sandwich. I don't know what I loved more. I have mostly come to proof for their holiday special orders or full size cakes. I still haven't gotten a chance to try their sandwiches and haven't had much desire to make the trek over just for coffee and a pastry. I think they really shine with their special orders. Their Red Kuri Pumpkin Pie from the Thanksgiving 2025 menu was one of the best pumpkin pies I've had, from the super flaky crust to the incredibly thick pumpkin filling and the light whipped cream topping. I really like that the pumpkin filling had a LOT of spice in it. Might not be for everyone, but everyone at our party loved it. Even though the price is a bit steep, I'd still splurge. Also had a birthday cake from here one summer, I believe it was a stone fruit/2 layer cake. Also delicious. Proof is definitely a... Proof is one of LA's true bakery gems. It has that warm neighborhood co-op feel, but the pastries are seriously top-tier. The cakes, scones, and cookies are always excellent, and their afternoon baguette sandwiches are delicious too. I love Proof. read more

I had a lifechanging ham & cheese croissant and latte at Proof Bakery today. 100% worth the line. Every bite of the croissant was flaky and packed with savory flavor. It seems that I have been hitting up more new coffee shops this year rather than "Happy Hour" spots. What can I say...this girl LOVES her coffee and cocktails! This shop is located right next to "Out of the Closet," one of my favorite donation destinations so it's easy to find. The inside is small and you may have to wait for the line to move but it's worth it! The pastries are out of this world...freshly baked on the premises including assorted croissants, sandwiches, muffins and loafs. We ordered a cranberry/orange filled croissant that made my toes tingle it was sooo good, and a slice of the Lemon Poppy Loaf which was also very good. Ofc, I had to get my Extra Hot Latte to go along with my pastries. The prices for the pastries run between $4 - $6 and the coffee to go is around $5 and up depending on what you order. There is only 1 size cup which looks like 8oz (not big enough for me) hence the 4 stars. *No indoor seating. *Outdoor seating only in front *Service is very friendly *Meter parking and side streets if you can find it Definitely coming back. I've been wanting to rate Proof Bakery for a while now. I've been coming here since I was a kid, so this place is special to me. I typically get the Pain au Chocolat but today I saw the earl gray chocolate pie. I would give this a 9/10! There was an orange sauce on the bottom that overpowered the earl gray a little bit. However, the combination of everything together was really good. Service is good and smooth as always. If you come here on a weekend the line is out the door so just keep that in mind. I suggest their sandwiches they serve around 12-12:30pm or croissants. read more

Absolutely delicious I'm already excited to come back! This bakery is well worth the 40-minute commute and hunt for street parking (though I see in the reviews there's a parking lot in the back). We arrived just 30 minutes after it opened, and there was already a line out the door! Luckily, it moves incredibly fast. Highly recommend everything we got!! The almond espresso scone SO GOOD I only had one, and that was enough to convince me to return. I was fully expecting a dry, crumbly texture (what I regularly experience with scones), but this one was soft, held its structure even when cut, and had a slight moisture that made it perfect. The almond-to-dough ratio was balanced, offering a nice contrast of crunchy and soft textures, with roasted hints of espresso all bonded by their sweet almond glaze. So good! The flourless truffle cake and the Earl Grey citrus cake made beautifully, sold by slice to get a taste and by whole to take it home to share. The flourless truffle cake was smooth, creamy, and melt-in-your-mouth fudgy, with bits of cacao nibs adding a contrast in texture. The Earl Grey citrus cake was light, airy, and floral. The chocolate frosting/ganache was dense, rich, and perfectly sweet. Right before paying, the chocolate chip cookie caught my eye. Extra chocolatey chunks in every bite. Definitely best enjoyed warmed up! My only wish? Indoor seating please perhaps some bar stools by the window. Wow, what an amazing bakery! Proof has a wide selection of pastries to choose from ranging rom savory to sweet. I went for the first time recently and got several items including their plain croissant, basque cheesecake, and sage danish. All of them were excellent with the standout being the sage danish. It was perfectly light and airy with gentle crisp and the sage cream on top was flavorful and paired well with the danish. The basque cheesecake was fluffy and rich but not too sweet. The croissant had a beautiful golden color and it was fluffy and flaky all at the same time. There was a line when I went but it moved fast thanks the staff being fast with ordering. There's not really any seating inside and it's mainly take out orders. They also serve drinks ranging from coffee to teas. Parking is available on the street out front or at the back of the building! This is one of top bakeries that I've been to in LA! Highly recommend! read more

Not too sweet even with the icing. Americano - quite smooth, but initially it had a little bite to it. Kind of hard to mess up an Americano. I'd drive out of the way for this any day. Came here Saturday morning at noon and it's clear this place is definitely a neighborhood favorite! We waited for about 15-20 minutes which wasn't too bad but apparently there is usually a line out the door. We ordered the curry turnover, pistachio cranberry croissant, and chocolate chip cookie to eat and I got the chai tea to drink. Although both the curry turnover and chai tea was good, I LOVED the pistachio cranberry croissant and chocolate chip cookie. Over priced and over rated. The place is small and clean. I made the faux pas of asking for Splenda for my teeny $4.50 Americano ( I believe it was a 4 or 5 oz cup) it was as though I was requesting a ham sandwich in a synagogue. The Almond croissant at $6.75 was small and unremarkable. Times are changing I certainly understand, but I can't get on board the hype about this place. Farewell to proof...After going for coffee and baked goods for 10 years, I regret to say I'm done. Do I have to throw out my proof bakery T shirt? (This review could remind you of the Soup Nazi on Seinfeld) Why? For one thing they close at 3pm on Sunday. HARD 3pm. I'm a coffee nut and really don't like coffee with the cardboard taste of a to-go cup. So yesterday when I arrived near closing time and asked for a real plate for my cheesecake and cup for my latte, they said. "No, we are closing in 5 minutes." I was okay with cake on cardboard but was contemplating if I could finish my coffee in 5 minutes and get it in a real cup. "No, we're actually closing in 3 minutes!" I was told. Okay, I can handle cold coffee in a plastic cup, so I got an iced latte. Sitting at the table outside with my wife (she had an iced mocha from Elephant Coffee across the Street, I had actually deferred to get mine at proof) We saw the crew inside vault shut the door and draw the shades at 2:59 pm. A nice young woman trotted up with a smile on her face and her heart set on a coffee treat headed to the door. "You just missed it" I sadly confided. She tried the door with the endless optimism of youth, but had to leave unsatisfied... As we started on the cheesecake I found i had only gotten one fork so I went to get another. I knocked and the guy mopping 2 feet away on the other side of the glass door and the clock watcher person totally ignored me. I knocked again and the clock watcher rolls her eyes and reluctantly opened the door. WTF? Seriously? You can't be bothered to give me another plastic fork for the $15 slice of cake?? I did get the fork along with an abundant portIon of gaslighting "I didn't roll my eyes, we didn't hear you knocking" I know there's a line of waiting customers out the door all open hours, so I guess Soup Nazi style, people will put up with abuse for the honor of giving them money... This is the only worker owned cooperative bakery and coffee shop in Los Angeles that I know of! Incredible cappuccino, croissants, and savory + sweet baked good that are perfectly sweetened. Be ready to wait in a line for 10-15 min, and sitting is very limited outside but the river is close by to walk to. We enjoyed coffee and baked good by the river nearby. My only wish is for this business to offer an option for people who cannot eat dairy or are vegan so everyone can enjoy. read more

We went around an hour till closing and got their croissant, ginger scone, and orange financier. The croissant was stellar. It was extremely flakey, light, and buttery. The financier was too sweet for my personal taste which is why I don't usually go for financiers (my friend did) but I enjoyed the scone and the subtle ginger flavors. Was it worth $21 for a latte and 2 pastries? No not for the quality. The croissant was way overly sweet with strawberry filling, and on the outside it was stale and crunchy not at all what I would consider to be a decent croissant, the financier was pretty good, but it was six dollars for a small piece which is a little crazy in my opinion. Latte was just OK not deserving of costing eight dollars really should've been a four dollar latte these types of pastries should really be in a mediocre coffee shop at best. The reason that there is a line out the door is because they do not take phone orders of any kind and you must wait in line. There were several circumstances that made this place a ONE STAR. No it's not necessary the fault of Proof, just a bad situation all around. After reading in LA times about it being one of the best bakeries, I discovered it's just an okay place. Unfortunately for Proof, and for the people in Atwater Village area, the bakery world in Los Angeles has exploded, and expectations are now skyhigh for anything considered one of the best. This one is below average as far as being a BAKERY. I drove an hour, then spent 30 minutes circulating the neighborhood for parking. It turned out, they are just next to the Sunday Farmer's market so it took 30 minutes to circulate the neighborhood, and another 10 to 15 minutes walk each way, when I finally found a spot blocks away. Then I got in line for 10 minutes only to find nothing worth buying. After all that I left with NOTHING, sad. The bakery section has maybe 5 items: almond croissant, cheddar scone, ginger scone and another scone, and chocolate chip cookie. BORING! Another couple of tiny rounded something and tiny rods that looked like cigar bread - not impressed. At least I thought if they had oatmeal cookies, I could get something with fiber. Nope, that was discontinued soimetime ago due to lack of interest. All bakery items they had were basically flour and sugar with little else. Forget all the interesting items you see on their Yelp pages. They no longer exist. Most people just buy tightly rolled up sandwiches in 1.5" x 8" cylinders labeled salami or something ordinary, and they had tons of these. And coffee. This place does not strictly qualify as a full bakery, it's more like a sandwich and coffee place with a few bakery items so be aware and not make a mistake like me! I know the business will do fine given the popularity of the place but I hope they continue to be innovative and come up with healthier inventions using healthier and unrefined ingredients like nuts, seeds, whole grains, protein and fiber heavy unprocessed flours, dates, fruits and legumes. The hype is real! One of the best bakeries I've had so far. Bakeries & Coffee were impeccable! An Asian lady on bakery zone was a bit lackluster when I asked for recommendations on bakery shelf. Btw baristas and cashier guy were very nice though so I only took one star out on service. I did ordered many items because I couldn't choose so I bought and tried them all.
