Came here for National Croissant Day, so naturally, I had to get a croissant. I've passed by Proof Bakery a million times, and every time, there's a line out the door. I mean, if there's a line, it must be good, right? Or maybe it's just a cult following, I don't know. Either way, I finally tried it, and yeah, it's pretty not bad. I went for the ham & gruyère croissant--and yes, I said gruyère, because apparently, at Proof, we don't just eat "cheese." We eat fancy cheese. The croissant was just the right size, which is a major win. Because let's face it, most ham and cheese croissants are as big as a small child. This one was the perfect size for someone who doesn't want to spend the next three hours unbuttoning their pants. But here's the kicker--no matcha. In my current phase of life, I am essentially 60% matcha, so this was a blow. But they did have a Houjicha latte, which was surprisingly delicious and helped me move on from my matcha heartbreak. Now, the price. At $6 for a croissant, I was mentally prepared for something that could solve all my problems. Normally, a croissant like this would cost me about $3.65 elsewhere, but hey, that's the price for fancy cheese, right? Seating is limited, but I managed to snag a spot because, thankfully, the crowd wasn't quite as intense as the line outside. It's a great spot if you're into people-watching, or if you enjoy the soothing sound of traffic and the occasional honking horn. Overall, Proof Bakery delivered a solid croissant experience. Was it worth $21 for a latte and 2 pastries? No not for the quality. The croissant was way overly sweet with strawberry filling, and on the outside it was stale and crunchy not at all what I would consider to be a decent croissant, the financier was pretty good, but it was six dollars for a small piece which is a little crazy in my opinion. Latte was just OK not deserving of costing eight dollars really should've been a four dollar latte these types of pastries should really be in a mediocre coffee shop at best. The reason that there is a line out the door is because they do not take phone orders of any kind and you must wait in line. This is why it creates a buzz and hype around it not because it's actually good. Hope that helps. read more

I came here with my partner to try the pastries for breakfast early Saturday morning. Not too long of a line. We got the breakfast sandwich, ham and Gruyère croissant and Meyer lemon cream puff! I have to say the pastries were splendid. My favorite was the Gruyère croissant because of the cheese blend, crunch and flakiness. The breakfast sandwich had an explosion of flavors, but I had it cold. I think it would've beefed warm due to how I enjoy eggs. The Meyer cream puff was also amazing and such a good combination for an after breakfast dessert. The green curry savory turnover caught my eye too. What a great bakery. So many items to select from. I did a preview on the website so I did have an inkling of what I'd l like to order. We arrived around 9:45am today. There were 1/2 dozen folks ahead of us but the line moved quickly. Ordered: * two ham & cheese croissants * chocolate croissant * almond croissant * cranberry scone for hubby * apple scone for hubby We went back to the car. This was our breakfast as we left Palm Springs at 7am on route back to the Bay Area. I dug into the ham & cheese croissant. Airy, buttery & flaky. Just enough cheese & ham tucked inside. A definite winner. Hubby ate both scones. He's a scone lover. He thought they were great. Later in the day as we headed north on I-5 we made another stop. There we chowed down on a couple more yummy items. I had the almond croissant this time. Crunchy toasted almonds & a sheet of almond paste inside. A good balance. By the time we got home 7 1/2 hours later we had only the chocolate croissant left. It'll be day old tomorrow. I'm confident it'll still be good. read more

A friend bought chocolate chip and chocolate crinkle cookies and they were amazing bakery style cookie perfection. The chocolate chip cookies were finished with a flaky sea salt that added that coveted salty sweet combo that everyone loves. Rather than individual chips these had huge chunks of chocolate creating these melty pools of chocolate that you encountered every bite! Farewell to proof...After going for coffee and baked goods for 10 years, I regret to say I'm done. Do I have to throw out my proof bakery T shirt? (This review could remind you of the Soup Nazi on Seinfeld) Why? For one thing they close at 3pm on Sunday. HARD 3pm. I'm a coffee nut and really don't like coffee with the cardboard taste of a to-go cup. So yesterday when I arrived near closing time and asked for a real plate for my cheesecake and cup for my latte, they said. "No, we are closing in 5 minutes." I was okay with cake on cardboard but was contemplating if I could finish my coffee in 5 minutes and get it in a real cup. "No, we're actually closing in 3 minutes!" I was told. Okay, I can handle cold coffee in a plastic cup, so I got an iced latte. Sitting at the table outside with my wife (she had an iced mocha from Elephant Coffee across the Street, I had actually deferred to get mine at proof) We saw the crew inside vault shut the door and draw the shades at 2:59 pm. A nice young woman trotted up with a smile on her face and her heart set on a coffee treat headed to the door. "You just missed it" I sadly confided. She tried the door with the endless optimism of youth, but had to leave unsatisfied... As we started on the cheesecake I found i had only gotten one fork so I went to get another. I knocked and the guy mopping 2 feet away on the other side of the glass door and the clock watcher person totally ignored me. I knocked again and the clock watcher rolls her eyes and reluctantly opened the door. WTF? Seriously? You can't be bothered to give me another plastic fork for the $15 slice of cake?? I did get the fork along with an abundant portIon of gaslighting "I didn't roll my eyes, we didn't hear you knocking" I know there's a line of waiting customers out the door all open hours, so I guess Soup Nazi style, people will put up with abuse for the honor of giving them money... I came here with a reocmmendsiron from my friend who told me the croissants here were out of this world amazing, so I strolled here with a friend on a Sunday and it was cuhrazyyyy. But, we made it in after insane parking and a super long line. It moves pretty quickly btw. I ordered the mushroom scone but was not a fan of the cumin punch that came with it. The cherry pistachio croissants were good. It was a lot and I couldn't taste much of the pistachio but there was a nice flaky crunch to it...the way croissants should taste (reminds me of tatte bakery in Boston, which I miss so much!!), a chocolate chip cookie that I could pass on next time and a pistachio cookie (kind of like a Mexican wedding cake) that didn't have much flavor. I got a turkey sandwich today which was good except it was one very thin slice of deli meat, a couple slices of radish and that's IT. Literally nothing else. One of my favorite bakeries here in L.A. There's always a line no matter what time of the day you go, but it is worth it! Moreover, there are many street parking around the neighborhood. I love their almond croissants- but honestly, any of their croissants because the dough is some of the best I've ever had. It wasn't too sweet, and the dough was flaky and puffy. If you want to get their croissants, I highly recommend going there in the morning or early afternoon because they run out pretty quickly. In addition, their savory galette (with mushroom and kale) and savory turnover (curry flavor) are other recommended items if you visit the store in the morning. Their sandwich is also delicious, but you can only get it after 11.30 am. Their service is always friendly despite how busy they are! Highly recommend! read more

After tasting the canele, that was proof you deserve 5/5 Yelp stars, but you didn't stop there, you continued to wow with the chocolate croissant and regular . Our box was filled with goodies and we enjoyed 95% of the delectable treats. Our box was filled by a sweet lady but the coffee crew weren't friendly. Not sure if there's one line for baked goods and one line for coffee or if anyone can help-- confusing in a small setting. I used to think it was nearly impossible to find a half decent croissant in Los Angeles. I then stumbled upon Lou the French on the Block and now Proof Bakery have my favorites in town! I also did not realize just how popular Proof is - I came by Saturday around 8am and there were a good 15 people ahead of me and more trickling in behind as I waited. Once inside, it's a small shop with some pre-packaged items like cookies and jams, and then the display cases with all the real fun. I decided on the ham and gruyere croissant, pain au chokolat, and a chocolate chip cookie, coming to about $13. The croissants are so flaky and buttery with a great crisp on the outside and super airy and chewy on the inside. Although I liked the flavors of the ham and gruyere, my only peeve for this is how little there is of each. It took 2-3 bites before reaching the ham and cheese while a single thin slice was folded in the middle of the pastry. As for the chocolate, there again was very little of it and it was very cheap chocolate being used. I used to work in a bakery and know the box-load of chocolate sticks used for pain au chokolat and this was that. I wish the quality and even the quantity of filling matched the greatness of the pastry itself which is the only reasons I can't get to a five star review here. As for the chocolate chip cookie - hands down one of the best in LA. Chewy, chocolatey, rich in flavor from the brown sugar and sweetness, it was just too good not to enjoy! read more

I cannot share how much I love Proof Bakery. I went here in a whim after having tried their lemon olive oil cake a year ago at a friend's birthday celebration. On my first visit I got a guava cheese danish, BOMB. Then the second time I got a chocolate croissant, BOMB and a breakfast sandwich, BOMB. This most recent time, I got the cherry pistachio croissant, a chocolate chip cookie and a Turkey sandwich (available after 11am). Again, proving my love for this bakery. Every time I've gone there's a nice-sized line showing me it's a well-loved spot. I ordered an iced latte each time and consistently have been really great. The staff are also really nice despite being busy. This has easily moved up on my spot of favorite bakeries in LA. read more

Very cute neighborhood spot! Super busy at 9AM on a Friday with a line out the door. Had to wait about 15 mins to order. Lemon poppyseed scone (4/5): Scone was really light, a little on the drier side and crumbly. The glaze is super super lemony. Almond financier (5/5): so moist and delicious flavor. Really nice small snack size. My almond cappuccino was also good. The espresso tasted a bit sour/acidic (which is pretty common in general...), but the milk was really creamy. I think they use the Califia barista blend. Lastly, the staff is all super warm and welcoming. read more

The bakery does not currently have any indoor dining as they currently displace merchandise and local goods for sale. There is however very limited outdoor seating on the sidewalk (less than 5 tables of 2), so plan to take your morning catch-up somewhere else. Parking: This location shares its parking with all the other businesses in the area. Typical LA setup, paid meter street parking with a very small lot behind the business. You're likely going to park in the neighborhood behind the businesses. Salami Sandwich: Their sandwiches come on stecca bread and are small and narrow. It reminds me of the baguette sandwiches you find in France. The sandwich was delicious and I would highly recommend. Be aware that the "filling" of the sandwich is light so if you're looking for the thick sandwich, this isn't it. Overall, a good place to come get coffee or some baked goods. read more

The most delicious thin European baguette sandwiches that will take you on a travel pass across the ocean to a lovely boulangerie. They have different options everyday but always a vegan and vegetarian version that are so flavorful. Come early because they do tend to run out within a few hours of opening. Their chocolate chip cookies are the BEST in LA and they also have carrot cake and strawberry shortcake that have gotten rave reviews from my friends when I've brought them for special occasions. We discovered this bakery two years ago and they had the best butter croissant in town! It was crispy outside and fluffy inside. Perfect to my taste. Two years later, they still have the best croissant in town! Their quantity of croissants are limited so it's best to go early (like as soon as they open). This place has gotten so popular among locals that the line has gotten longer compared to two years ago. This place also serves drinks and other bake goods and sandwiches during lunch. We purchased their mushroom puff pastry, apple chausson, yogurt cake, and pistachio cherry croissant. I also ordered an iced chai with oat meal. The yogurt cake was moist but wasn't anything special. I didn't like the pistachio and cherry combo and the iced chai was bland. What sold me was their mushroom puff pastry and apple chausson. I love apple baked in anything and their chausson checked all the boxes. The filling was delicious and the lamination was perfect. The sweetness of the filling in contrast to the dough was balanced. There were a few bites that only has dough but it was essentially eating toast. The mushroom puff pastry had the same delicious, flakey dough plus the savory, creamy mushroom filling. It was definitely decadent but worth it. It is also pricey but after tasting what they offer, they definitely take the time to bake. read more

Amazing! I looked all over LA for good coffee during a week-long visit and finally found it here, of all places. It was also the only place I found with cold, house-made simple syrup available for the customer to add to the coffee himself (most other places offer those wasteful packets of sugar). Then there are the baked goods. Everything was amazing! So delicious. The croissants are sumptuously flaky, the scones are delightful. I can't say enough good things about this place. The line is usually fairly long -- out the door or almost out the door -- but it moves fast. My only suggestion for them is that they also provide metal stirring spoons for coffee. They only provide the disposable wooden stirrers. read more

Unpleasant service.....I paid $6.25 for an almond Croissant today ,,,,WOW .... Every time I'm in the area I stop by to get some treats for my kids and lately they run out of things by noon. So annoying to drive there and leave disappointed in the middle of the day. Today I was there at 11am and they had ran out of plain croissants. This place is so good I wanna cry every time. Super solid bakery and I tell all my friends that it's the best in LA. My go-to's here are any of the croissants (seriously any), chocolate espresso cake (a MUST!!!), potato galette. Although, everything we've tried has been good! We came before for other treats but this visit we decided to come in for a little snack and coffee after brunch. We decided to get the peach scone. They're in season and right at the top of the display so our eyes were drawn! We ordered on, and the server bagged one (and promptly restocked the display). As a frequent customer of Proof I had hoped to find the time to write them a nice review. Unfortunately now that I have the time my impressions have soured. Their best products are their savory pastries, cookies, and a small baguettes called "stecca bread". Scones and other baked good are good but not memorial. Where they start to disappoint is with the croissants. Also pretty good most of the times, but very inconsistent, and sometimes terrible (layers flattened with one large hollow inside). Their chocolate croissant is particularly sad, with no adjustments in baking and very little actual chocolate (see photo). At $5 the quality should be much better, especially with so many other options for baked goods nearby. A very long line outside on a Sunday morning, while 5 staff people helping one person at a time inside, finally pushed me over the edge. If I'm going to overpay for over-hyped products then at least provide decent service. read more
