We really enjoyed our meal here. We stopped by pretty late driving in to Fredericksburg and called ahead with our order. We parked in a nearby lot and were able to walk up and make our purchase. We brought our pizza back to one of the nearby tables. It was near closing time and pretty dark. We were quite hungry and dug in quickly. We got the Basta pizza and it was fantastic! The bison was such a unique topping and paired so well with the flavors - it was one of our first times trying nduja and we loved it. The honey made for such a pleasant aftertaste as well. As much as I was hoping for a new favorite pizza spot, I was slightly underwhelmed by Prometheus pizza. The outside is very nice and has lovely outdoor seating. The inside seems to be a bit of a mess with many random boxes lying around. The menu was looking great especially the drink section, however we were told that because of a rush the previous day a few food items were not available. We got the "hey bob!" Pizza which was alright we also got a choose your own pizza with just pepperoni and sausage which our group preferred. The service was good, our server was able to answer all of our questions and took our three person group order without writing it down and everything came out correct.( very impressive)Overall the experience was okay I would just change my order for next time I visit. read more

We tried the potato pizza (without olives) and the pepperoni. The pepperoni was a little greasy, but overall great! This is the worst pick up experience I have ever had. You may order from the brick and mortar, but be aware that you will not be allowed to pick up from the brick and mortar store in downtown Fredericksburg. You'll be deferred to a random pizza truck on the edge of town that reads permanently closed on Google maps.. this is incredibly misleading and unacceptable. If I could give them zero stars, I would. The food is fairly decent but rather expensive for its portion The service was extremely subpar and lacked attention to detail. The staff seemed to lack a refined sense of their own culinary offerings. When we placed our order, we specifically inquired about the spice level of the sausage, and the gentleman who took our order assured us it was not spicy at all, but rather earthy due to the sage used. However, when we received the pizza for our children, we were surprised to find the sausage was extremely spicy. The gentleman who took our order did not seem to monitor the progress of our order, and the appetizer arrived in a timely manner, but the pizza was nowhere to be found 29 minutes after ordering. We had to request his attention to inquire about the status of our order, at which point we discovered that the pizza had just been prepared in the back. We ordered the bruschetta app and enjoyed their take with soft bread bits tossed with bruschetta. The flavor of the olive oil, spices and vinegar made the app a winner. For entrees we ordered the mushroom pizza and steak frites. The steak was cooked to perfection and accompanied with three different suave options pesto, aioli and a jous. The fries were crisp and paired well with the aioli. The pizza was a winner. Visually I hesitated as their pizza crust has a bit of a wheat tone and the pesto was thick but with the first bite it all went away. This pizza is big enough to share between 2-3 people especially if you get an appetizer. We were to full to try dessert but look forward to trying the next time we visit. read more

Without a doubt, this is the BEST PIZZA I've had in years! In Texas, back home on the East Coast or anywhere else. This food truck is the real deal. As yes... the type of pizza experience that's memorable... hard to do, as pizza joints are as common as craft breweries these days. There are a gajillion of them, and many are pretty dang good. Prometheus drew me in with their 4.5/5 star rating and vibes of an "off the beaten path" place, even though it's clearly popular and well traveled. I mean, it's in a building that's basically a food truck without wheels. It's small, and they're working their tails off in there to feed a hungry throng of excited fans. Parking is somewhat limited and there are a handful of picnic tables, all outdoors and without cover. I ordered a cheese pizza for the kids and one of the specials for me, which was a bison off-the-menu special that had all sorts of other goodies I can't remember... including some spice and some honey for that fantastic sweet and spicy vibe. I ate the entire pizza myself and had zero regrets. Stellarrrrrr. The kids' cheese pizza went over well, too, and I had a leftover piece later that still tasted quality - although the night-of, fresh out of the oven, was far superior. The special bison pizza was pricey at $25, but wow was it good. Would I spend that much again? Maybe... but for the price point, I'd probably explore something a little less spendy. Nice folks working the joint, too. Really nice. Drink selection is limited, but the set-up is such that I imagine a lot of folks bring their own. A lot of traffic was also pick-up / to-go orders, of course. I can't remember last time I had better pizza! It's a BYOB place with outdoor seating and they cook it in a food truck. They have quite a few different types of pizza. We tried the pepperoni and the 'Zhazhilla (sage sausage, pepperoni, pancetta, pickled red onion etc). Both were great, the 'Zhazhilla was awesome! Perfect combination of flavors. Picked up the "Hey Bob" pizza last night and it was delicious! Making all my garlicky cheesey dreams come true. I don't think I've ever had pickled onions on a pizza before but really enjoyed that combination with the salty sausage and the spicy ness from the Calabrian chilies. We ordered their homemade ranch on the side which FYI is very 'dilly' so I wasn't the biggest fan of that but worth trying! Run, don't walk to the best Pizza I have ever had in Texas. They close around 8:45 pm so be sure to get there early. The staff is very nice and the Pizza is outstanding. If it's a nice night you can sit at their picnic tables and enjoy the meal. We ordered the Pepperoni and jalapeño pizza. It's 12 inches wide and great for sharing amongst the three of us. They have Mexican cokes and Fantas to drink. The Caesar salad was surprisingly good as well. The dressing includes ground up anchovies ( I like this ) and is served on the side. read more

After walking around main street the kids were starving. We tried two different pizza places and both had over an hour wait. I made a quick order online at prometheus. I didn't even realize it was a food truck until I arrived. It was a very short drive from main street. The pizzas were epicurean with really interesting choices. I tried a pizza with prosciutto, greens, and feta. For the kids I ordered pepperoni and they loved it. Now, it's hard to get excited about salad but the Caesar salad was so good. Crispy greens, shaved cheese, homemade croutons and a thick dressing. A Panna cotta was gourmet perfection with strawberry compote and crumble. Make the drive this place is well worth it! read more
