The schnitzel Benedict was delicious with a perfect poached egg. Loved the cappuccino. Aaron provided excellent service. Very knowledgeable on bourbons and scotches. Definitely will return when visiting Waco. read more

we arrived on Monday and the restaurant and bar were closed Tuesday not much better only opened for 4 hours These rooms are not cheap and I felt we should have gotten something more for our money read more

Excellent atmosphere, service, and food. I took friends from out of town, and the experience was first class.

Had the Czech schnitzel and it was perfect. Crispy crust and hot inside. Our party ordered the brussel sprouts and broccoli appetizers and they were also quite tasty. Missed out on the local brews as I was the designated driver. My loss as everyone loved their beer choices. read more

We can't thank the kind staff of Pivovar enough. Our car broke down as we were leaving the silos, headed to Dallas. We had pulled over right outside the Pivovar hotel. We soon realized we were stranded and needed to find a place for us and our little ones to stay for the night. We knew we couldn't afford such a fancy hotel, but found a discounted booking option online for one room to cram everyone in. The kind front desk lady asked what brought us to Waco and we explained our situation. She quickly upgraded us to a double room suite with the most beautiful view of the silos at Christmas time. They extended our check out for the entire next day so we wouldn't be out on the street with luggage waiting for our car to be fixed. We were really in need and this place blessed us immeasurably. Highly recommend staying. Everything is beautiful and custom. Perfect location to walk to magnolia and local restaurants. Hopefully we will be back under better circumstances in the future! read more

There is a train that runs right next to the building causing it to shake and waking up to a train horn 2x per night. Otherwise it's a perfect 4.5 star hotel. read more

My food was very good. My adult children had the burgers and they enjoyed them but they needed more sauce. My wife had the filet ordered medium. The filet came out rare and cool to the touch (like it sat too long) I addressed this with the server who refired the filet to bring to temp. When he brought it back it was the same. Although the server was very polite, he explained that the cook was new to steaks. I get that everyone has to start somewhere but the lack of oversight is not good. For an expensive cut of beef, it needs to be done as requested. She couldn't eat it. Overall, it was a mediocre meal for a large price point. Additionally, they were not busy to suggest they were possibly overwhelmed. Just a rough outing. read more

My wife and I decided to try Pivovar restaurant on a whim for a random lunch date, not knowing exactly what to expect from a Czech place but having heard good things. I'm happy to report that this place delivers. The atmosphere was cool and interesting, with good service - it could've been slightly quicker but we were there at an off-peak time, so it's understandable that they weren't 100% on their toes and it still wasn't bad. All the food was delicious, from the schnitzel and pork shank to the appetizers and the creme brulee cheesecake. I also tried the Czech beer flight to sample their in-house brewing, and there wasn't a bad option in the bunch. Would recommend any/all of Pivovar's offerings to anyone interested. read more

We went for breakfast. The schnitzel eggs benedict was wonderful. Service was great. Aaron was a great waiter and very knowledgeable about whiskey, bourbon and scotch. Would definitely go back. Had to change rating. Don't eat dinner here though. Service sucks. Waited 20 minutes then had to go to the bar. The manager for the night (5/20) was not helpful and should seek a new line of work. read more

Restaurant: Beautiful interiors and easily showing much thought, design and money went into it. Very nice menu. But-- No bread offered with the meal and no bread on the menu. Any restaurant in Europe, including Czechia, will provide bread-- it's a staple. Starters were not served with plates or silverware; staff needs more training. Brussel sprouts were tough and undercooked. read more

Came back tonight and service was awful! So disappointed. He didn't refill my drink even when I asked after waiting a long time. I finally filled it myself which embarrassed my kids. Steak was not cooked correctly. He didn't attend to us much at all. He charged us as a large party when there were five of us which has never happened. Talked to the hostess and she didn't care. Really sad. Not sure we will be back read more

Great service and the beer was terrific! Try the seafood risotto! It's in the 1st floor of a hotel and very close to downtown and the Silos.

Taylor the fabulous mixologist is what makes this place great. Kind professional & an expert at her profession. Thank you Pivovar for letting us have the pleasure of Taylors service & expertise. LoRusso read more

Schnitzel Sunday!! Ok - we did not even know this was a thing until we received our check- but Schnitzels are just $10 on Sundays - say what? The veal schnitzels were so tender and tasty - what a steal at that price! We had a great meal at Pivovar tonight. Service was attentive but unobtrusive. Beer flight was amazing - hoping they bottle their beer soon - they were great! Fried cheese appetizer was quite yummy too! Don't miss this incredible restaurant in Waco - you will not be disappointed! read more

Service, food & bakery were above rapport. We enjoyed all as first time attendees.

Delish! This is my first experience with Czech food from a dine-in restaurant. The flavors are so good! Lots of meat and potatoes offered and something for your picky eaters, too. Normally we grab kolaches in West on the way to a Baylor game, but now we have a new fave for Czech. Sic'em s read more

Waitress was clueless. Let us get halfway ordering breakfast before telling us it was no longer available. We ordered kolaches from the bakery only to be told they were out of the ones we ordered. Anything we asked for seemed to be a bother. Food was way overpriced and service was terrible. Won't be going there again. The bakery was actually very good, just out of many items when we came in. Could just be bad timing. read more

Consistent good comfort food. The scallops and shrimp risotto, cabbage sausage, Cobb salad and gnocchi w/ truffle were all generously plated and well seasoned. The bowl of fries were also really good but the signature dish is their czech schnitzel. read more

This place has a lot of potential. The building is phenomenal. The stuff seems like they have never worked at a restaurant. I feel bad because the kitchen never sends out the right food so the servers have to deal with all the problems. Basically they REALLY need to work on their team. It could be very nice just needs help. read more

Good beers made in-house. Sat at the bar and enjoyed the beer along with a nice charcuterie board. The cheese was perfect with the dark lager. Ambiance was nice and enjoyed the consistent Czech theme. Definitely want to try the Czech wine flight next time read more

Food is always great, service is always amazing. We love the newer styles menus and the wood and forest green decor. The last time we went it was surprisingly empty for a Saturday. We had a big party and didn't have any trouble getting in, which worked in our favor, but I was still surprised. The music was also great, so it is definitely worth a try if you are looking for a dinner place. Also, I had my cousin with me from out of town and she is super picky about her steak, and she said hers was fabulous. She couldn't stop talking about it. I love the schnitzel and my husband loves the salmon and beer flights. read more

Food is very good. Service at the table was great for post-pandemic Waco. This would have been a 5 star review, however... I was attempting to make a reservation for a future date. It was outside of their hours of operation so I sent an email to the address on their website. I received a replay back about 24 hours later. It read : 'No problem, our phone number is 254-xxx-xxxx.' I probably shouldn't be so taken back by this response, however it is the LITTLE things that make a restaurant great. This response was something a 15 year old would write. Do better. read more

Stay here! The staff go above and beyond! They accommodated our family of five in a beautiful suite. We were stranded with an oil leak and repairs took all day on Sunday. They were so kind to extend our checkout! The rooms are detailed with hand carved wood work, custom stone sinks, and unique pieces of furnishings that make each room special. Our suite had a huge brass tub! Beer shampoo was a surprise, too! The brewery had live music and of course great beer! The breakfast was no ordinary continental breakfast, rather a full service delicious experience. It's right next to the Silos and it's full on any Baylor event weekend! Book early and enjoy luxury in Waco! read more

We happened to pass Pivovar Brewery/Hotel on our way to an event at the Art Center Waco and decided to stop back for dinner afterward. It's brand new and hasn't started marketing yet. The room is enormous with mostly group seating. This is not meant to be an intimate, quiet place, but fun and boisterous. The huge copper brew kettles loom over everything. They have a full bar and four beers made in house. I had two of the beers (the Premium Lager and Vienna Lager) and both were excellent. The service was friendly and competent. As for food, I wanted the St. Louis style ribs, but they were out. So I ordered the 12 oz. strip steak with some trepidation. Usually, a $32 steak in a brewpub is not very good, but this was excellent. Perfectly cooked and flavorful. My wife had the salmon fillet and liked it very much. Our only complaint is with the sides. Most entrees come with "corn ribs", spears of corn still on the cob and grilled. Nothing special and next time, I'll order something else. Nonetheless, this is fun addition to the Waco restaurant scene and we're sure it will do very well! read more

I have eaten here many times and love the relaxed ambience. In house brewed beers are amazing. Our server, Jordyn, was great as usual. Food was great, although the fish came out cold. When restaurant is busy, you have to wait awhile for drinks. read more

Friendly advice, do NOT try to book your event with Pivovar. We had a disaster of a time trying to plan our party with them. We were ghosted by them for months, they suddenly changed the arrangement of prices, they booked the beergarten out from under us, and then ghosted us again! Do not work with these people. Details below. We thought Pivovar was a really cool concept and beautiful place. We've enjoyed a couple meals there and many beers. We have also spread good feedback about them around Waco. We want to see a small business succeed and hoped to host a big birthday party there for all those reasons. For our November party, we booked exclusive use of their beergarten in July. They gave us verbal confirmation that we were booked and told us we would pay per head and per drink. In August, we wanted to discuss menu, head count, and other details, so we emailed them. There was no response. After multiple unanswered emails, in late September we began pestering them via phone. We found out that the events coordinator had changed and we finally got a response confirming the beergarten and discussing food and cake details. We excused all of this as Pivovar being new and having trouble being organized. However, a week later, we received a call from the event coordinator informing us that Pivovar would not make us a cake. She also told us that they booked live music for their beergarten, we could no longer have our party there, and we had to use the banquet room inside. Also, she informed us that there would be a $6,000 minimum for the event. Considering we were told we would pay per head and expected to spend half of that, we were appalled! We refused that deal and insisted we would pay per head as agreed and would accept the location change. They agreed to that. We asked for that offer in writing since those moves destroyed our trust in them. Two weeks out from the party, we still had not heard from them with our deal in writing and we had still not been able to discuss any more party details. We gave them one last day to produce these for us or we would leave. After 3 days of continued silence, we canceled our party there. The final message from the events coordinator was rude and blame shifted onto us. We gave them the benefit of the doubt and worked patiently with them through this whole process. We canceled because they destroyed our trust in them with their unprofessional management of the party. It's a shame that the invitations we sent months ago all have their address on them. We are taking our party to a different local business. read more

Passing through Waco, worth the stop! Old world charm, authentic brews, great menu! Great addition to Waco walking distance to Silos.

Was great when it opened. Food isn't bad, beer just ok, but overall, it's going downhill. Not sure what happened.

This was the first time at Pivovar. The flight of beer was ok, but onion rings and Texas style schnitzel was not very impressive. Ian, our bartender was nice, but won't be going back anytime soon for $80. read more

Food was excellent and the service was even better. Great place to sit back enjoy the friends, food, wine/beer, and the culture.

I'll talk about the food in a minute. The only reason I didn't give five stars is because we arrived at 10 minutes till five and we're told there would be an hour wait because they had a bunch of reservations coming in at 5 PM. This restaurant probably has 30-40 tables. We chose to sit at the bar to eat and we were at the restaurant an hour and 10 minutes. During that time there were tables all around us that were never used and as we were leaving there were at least 20 empty tables. So now on to the food. it was delicious we had The tomato soup to start and it was out of this world. And then we had the blackened catfish, squash & sun dried tomato risotto, the shrimp and scallop risotto, and the ribs and they were all delicious. we finished off with the pudding and the cheesecake and they were both very good. We will definitely go back but only if we have a reservation. read more

Try the Schnitzel--it's sooo good. The breading is perfect and the meat is tender. We love going here for special occasions and casual meals. Also have had a steak that was mouthwatering. It's a winner every time. read more

Overpriced. Poor service. The hamburger was dry. Out of some items on the limited menu. Ordered the brownie with ice cream, the brownie was so hard you could not cut the brownie. We, as the Czech citizens living in the US, visited Pivovar today to check all the Czech style goodies.. what an amazing pilsner premium style beer with the real foam and typical bitterness!! The best in the US with no doubts. We also tried the fried cheese that really tastes like the Czech "smazeny syr" or "smazak". The prime rib goulash was delicious, do not expect "knedliky" with it, however, mashed potatoes are a great fit too. Their bakery served us a great poppy seed frgal, prunes cake and an amazing raisins strudel. All home made and authentic!! Coming back on Wednesday to try Wiener Snitzel! Simply the best place to taste a Czech beer and a cuisine in the US! Big congrats to this project! read more

excellent, unique, immaculately clean boutique hotel and more affordable than the other new boutique hotel in town. we had a one night stay, passing through town. room had traditional wood furniture mixed with modern touches. right next to magnolia . The restaurant was very good; affordable, and two free 17oz beers are provided with you hotel stay. the staff go an extra mile to provide czech inspires items for a unique experience for waco. our room was next to the tracks so we did hear a train, but did not ruin the stay. one less star because the restaurant was not open for breakfast and the bakery was closed for renovations. parking was next to the hotel with ample spaces. you will definitely want to stay here, if you are interested in spending time at magnolia read more

We read a several page write-up in a local magazine and decided to check it out. My husband and I were there for dinner on a Thursday about 4:30 pm. The restaurant WAS NOT BUSY. There were 3 Czech specialties on the menu My husband ordered the Pork knuckle and I order the Vienna schnitzel. I also ordered the salsa (gravy) for the schnitzel, which had to be ordered separately and cost extra. The server (not our waiter) brought my husband the Goulash instead of the Pork Knuckle. We told the server that it was the wrong dish. My Schnitzel was served WITHOUT THE GRAVY. When we could finally get out waiter's attention, we told him my husband's order was wrong. He offered to exchange it but it was too late into the meal. [We actually thought they were out of the Pork Knuckle - a signature dish and just didn't want to tell us]. When I asked for my gravy, he left and came back and said they didn't have any more. (It is much drier and less enjoyable without the gravy.) They served a small amount of mashed potatoes with each dish but NO SALAD NOR BREAD. We had finished our meal and waited over 30 minutes for our waiter to appear, again, so we could ask for the check. (As I said before, the restaurant WAS NOT BUSY.) Visually the woodwork and the craftsmanship are stunning! They should invest more in making sure they have the dishes they advertise, especially the Czech specialties, and train their wait staff to pay attention to detail. Overall, it was too expensive - $70 with the beer flight, very disappointing, and certainly not worth all the hype. read more
