Good portions and hearty food. My boyfriend got the shrimp and barley risotto and it was absolutely incredible! It was weird that I couldn't substitute one of my sides (had to get an additional side of mashed potatoes instead of subbing) but I guess that could be them trying to preserve the integrity of the dishes. Charred lemon? Hmm I had the schnitzel listed in menu as being served with charred lemon, buttermilk mashed potatoes and parsley. The schnitzel itself was good, nice crunchy though the meat, I think it was chicken not identified on the menu, was dry. For the amount of schnitzel the serving of potatoes was very small, and the charred lemon was right out of the icebox. I'm a bit of a stickler for getting what the menu says so this was very disappointing. This restaurant goes overboard on so many details (don't get me started on the menu itself, it's crazy the amount of $ they must cost) the fact they overlook this detail is kinda shocking. read more

Visually when you enter Pivovar it's absolutely stunning! The woodwork, the craftsmanship, and the attention to detail is beautiful and inviting. We ate at Pivovar on a Tuesday evening during the summer (way less students in town) so it's hard to comment on what the wait would be during football season, Friday/Saturday nights. The food was delicious! We tried the bacon deviled eggs - bingo! Tasty, tasty, tasty! For my entree I had the Ancient Grains salad. It was so fresh and light, but also satisfying! We tried the chocolate mousse and if you're a chocolate fan do not miss out! Service was fantastic! Our server was there to answer any questions, explain specials, and assist when I accidentally spilled my water. The food runners were delightful as well, polite and helpful. Only drawback was the music was too loud. I understand using music to set the ambiance and wanting the energy of the restaurant to feel vibrant, but for as few people that were there (Tuesday evening during the summer break), the music was unnecessarily elevated. We really enjoyed our stay at this hotel. The beer spa was amazing, the restaurant was good, and our room was nicely appointed and clean. The location is great and in walking distance to most things you would want to see in Waco. There is free, onsite parking. The only reason I'm not giving a 5-star review is that we were charged $10 for accidentally breaking a tiny tasting glass. This seems petty and ridiculous since we spent $700++ at the hotel, spa, and restaurant for a one night stay. read more

5 stars for the hotel, right across from the silos, easy parking on the side, back or street in front of the hotel. Nice, clean rooms, very pretty. And everyone working there was very friendly and helpful. Free breakfast was really good, eggs, potatoes, bacon, toast. The lady working in the breakfast room was so nice and friendly. We were on the train side of the building and it does run by a few times a night, but I sleep hard so it didn't bother me. Restaurant, the atmosphere was really nice and the waiter was really nice, but service was so slow (and it wasn't busy) so we cancelled our apps and just had drinks. Wish we could have tried dinner because the breakfast was good! So I'm taking one star off for the restaurant. But I would definitely stay there again. read more

I booked a stay for Saturday Aug, 19, 2023 to celebrate my husband's upcoming 50th birthday. If you're celebrating an important event or looking for a romantic getaway, the hotel is worth the splurge. Dubbed "A Czech Inspired Luxury Experience", our experience exceeded our expectations. This is a brewery, hotel and restaurant all in one. When we first arrived, we were not sure if we were supposed to park in the Premium Parking lot adjacent to the hotel. However, upon check-in, we were quickly assured that this parking is included in our stay and I was handed a hotel parking pass to place on the dash of my vehicle. Karen took the time to check us in and go over our welcome package. We had a beer spa appointment later in the day and she confirmed that she would come up to our room to escort us to the beer spa. We had some time before our appointment and we settled into our well appointed room. The room type that I booked ("The Weary Traveler - King") has a copper tub instead of a shower. The bathroom also features two copper sinks and a separate bidet. After passing the entryway, there is beautiful desk and plenty of seating. There is a luggage rack as well as an area at the foot of the bed to accommodate your luggage. By the TV area, there is a bottle of complimentary water and a Keurig machine. Underneath, there is a refrigerator containing items for purchase as well as creamer for your coffee (and you can certainly use the refrigerator to store your own beverages). The is an RO water cooler and ice machine by the elevator where you can refill your glass water bottle. After inspecting our room, we took a very short walk across the train tracks to The Silos. There is a train that runs through the area, but we did not hear any train go by in the evening. After that, we headed to our back to our room and Karen escorted us to our beer spa, which was a few doors down from our room on the same floor (very convenient!). It is a private room containing two copper tubs full of beer and beer soap (this experience costs $200 whether for a single person or a couple). We were given a little over an hour to soak and enjoyed a beer flight. It is recommended that you rinse in the shower after your soak. We ended the night cashing in our free beer coupons that we received in our welcome package. The beer comes in these very large (17 oz) glass steins. All of their beer is delicious; very light and easy to drink! For dinner, we had the Czexan Schnitzel (I don't think that the Pivovar Sauce went well with this dish) and the Pork Shank (I'm not that was worth the $30). The restaurant was relatively busy and there was live music. My husband went to bed, relaxed and elated to be sleeping on top of a brewery. It was truly a wonderful experience and stay. read more

Service was lacking, that was just the start. The appetizers, fried cheese & spinach and artichoke dip with crostini. We ordered a family mac and cheese and mushrooms to go with out main entrees. We had the schnitzel. To start the Mac & cheese looked like it came out of the microwave. It was dry and the cheese had coagulated. It looked like it had oil or something to that effect. My wife and I stayed at this place for one night just because it was so close to the silos. After we checked in and got into our room, the room was very large and roomy. The reason why we gave this only three stars is cause the bed was like laying on a brick super hard just have been an extra firm bed. The other reason is in the morning around 9 o'clock we had 3 maids just to get in our room even though we had a privacy card on our door. They were trying everything to get in. I called the front desk and told the lady there that three maids were using there key card to get in our room. I told them that we were in the room but they kept trying. Then I went out there and was like can I help you I'm trying to sleep and your kicking down my door. They finally realized they were in the wrong room. Talked about being pissed off. read more

Not impressed with Pivovar. Made a reservation at 7pm for our anniversary. They were quite busy, and it took over two hours from start to finish. We started with a beer flight, good beer, but very slow to come to the table. Then we ordered spinach dip for our appetizer, we told the waiter because we think they forgot (after about 45 minutes of waiting) and then it did not come until AFTER our main course. And to be honest it was mediocre at best (and I loveeee spinach dip) :( We had the filet mignon and the truffle gnocchi for the mains. The truffle gnocchi was pretty good, I'd order it again but not stelllar. The Filet was also decent but only side was three small corn ribs. Then we had the cheesecake to finish (it was okay as well). When we got the bill we were happy to see they had comped the appetizer (which makes sense because it came after we ate our dinner) but then the waiter UNcomped it. Very very weird. We didn't want to fuss but we will not be coming back. A $80 tab (not including tip, which we still left a nice one!) for two people on a special night and it definitely left something to be desired. read more

Stopped in for dinner on Friday and lunch on Saturday. For dinner on Friday, I had the gnocchi. The dish was very tasty; I also tried some Schnitzel that another person in our group order. Both were quite tasty. For drinks, we had several of their beer types. I had the dark beer which was flavorful but not as heavy as many that I've had. In the end, it was a little pricey... For lunch on Saturday, I had the Cobalt Chicken (sandwich) with sweet potato fries and the chicken barley soup. I definitely liked the sandwich and fries - I think beef barley would be a better menu option. While the restaurant was not that busy (appeared to mostly be women who were visiting in Magnolia complex), the service at lunch was not awesome. They seemed to want to pack everyone in one section and while there was plenty of staff, our waiter was hard to find and we had to ask him for several things in our short lunch. In the end, I'm not sure how new they are but am hoping they are still working out the kinks and will have things running more smoothly in the coming months. read more

A delicious meal paired with a brewery paired with a bakery and add live entertainment and then don't miss the outdoor patio ambiance for a complete package. Let's talk food. Our meal was delectable. The schnitzel is so authentic you'd think you were in Europe. Make sure to squeeze the lemon on it to make those flavors explode. Short ribs were like eating something my grandmother would have cooked. Falling apart with gravy that didn't drown them out but only added a perfect pairing. Drinks: I was curious about the smoked salted rim of the margarita but AGAIN completely surprised at the flavor explosion it brought to an often typical drink. loved the dichotomy of the two! The Whiskey Sour had its own twist with a frothy top and sprinkle. Don't leave without sampling dessert! Their cheesecake was soft and creamy with a caramelized top, the likes of no other! I'd like to give this place another try, I understand cooks are different on certain days, and sometimes management can't get scheduling right so bartenders have to step in and help the 1 poor girl trying to do it all. I was just expecting so much more. This place looks like they did it right, it's beautiful decorated with quality furniture and an amazing sounding menu! The drinks were fantastic! However there was so much disappointment that I couldn't give this place a 5 star. I have this thing about service, I expect certain things and I tip very well for it. I don't want people to hand me food to set in front of myself or pass on to others, I want dirty unused dishes cleared from tables, when we leave and not a single things been cleared it irritates me. And the food, oh sad face, the food was nothing to come back for. Brussels were undercooked, the Mac and cheese was watery, the sweet potato fries were cold and undercooked, the buns on our burgers were burnt and our medium rare burger was sooooo well done that it was in-editably burnt. We can't thank the kind staff of Pivovar enough. Our car broke down as we were leaving the silos, headed to Dallas. We had pulled over right outside the Pivovar hotel. We soon realized we were stranded and needed to find a place for us and our little ones to stay for the night. We knew we couldn't afford such a fancy hotel, but found a discounted booking option online for one room to cram everyone in. The kind front desk lady asked what brought us to Waco and we explained our situation. She quickly upgraded us to a double room suite with the most beautiful view of the silos at Christmas time. They extended our check out for the entire next day so we wouldn't be out on the street with luggage waiting for our car to be fixed. We were really in need and this place blessed us immeasurably. Highly recommend staying. Everything is beautiful and custom. Perfect location to walk to magnolia and local restaurants. Hopefully we will be back under better circumstances in the future! read more

My food was very good. My adult children had the burgers and they enjoyed them but they needed more sauce. My wife had the filet ordered medium. The filet came out rare and cool to the touch (like it sat too long) I addressed this with the server who refired the filet to bring to temp. When he brought it back it was the same. Although the server was very polite, he explained that the cook was new to steaks. I get that everyone has to start somewhere but the lack of oversight is not good. For an expensive cut of beef, it needs to be done as requested. She couldn't eat it. Overall, it was a mediocre meal for a large price point. My wife and I decided to try Pivovar restaurant on a whim for a random lunch date, not knowing exactly what to expect from a Czech place but having heard good things. I'm happy to report that this place delivers. The atmosphere was cool and interesting, with good service - it could've been slightly quicker but we were there at an off-peak time, so it's understandable that they weren't 100% on their toes and it still wasn't bad. All the food was delicious, from the schnitzel and pork shank to the appetizers and the creme brulee cheesecake. I also tried the Czech beer flight to sample their in-house brewing, and there wasn't a bad option in the bunch. Would recommend any/all of Pivovar's offerings to anyone interested. read more
