Came here for our first brunch. This time I brought the husband. We sat at the bar for our Easter brunch. The bartender was great very polite and provided great service. It was a little busy due to the holiday but we enjoyed the old world like atmosphere bar tavern set up they have. We got a bottle of champagne to have mimosas with our meals. I got the delicious schnitzel Benedict. Loved it but next time I'll ask for the sauce on the side. I would have liked the traditional hollandaise. But it was a good twist. The potatoes were yummy. My husband had the schnitzel waffles. he ate the whole plate. So it's a winner. He said we can come back. So I again look forward to exploring more of the menu and having some beers. I mean pivo. What a great brewery & restaurant. Who knew you could experience authentic Czech cuisine and craft beers just an hour or so away from Austin? The connected hotel is wonderful (there is a separate Yelp listing to review it). How amazing is it to stay at an operating brewery? The old-world European charm and flavor can be felt throughout. An elevated brewery pub, if you will. The decor definitely lends to that vibe. The food is really good and I dare to compare it to food we've had in Germany. I also love that they do a playful fusions of sorts with Texas & Czech foods. For example, the Czexan Potted Beer Cheese has a combo of sausages, peppers, meats, breads, and a cheese spread made with Czech beer. Perfect appetizer for two people and then some. My boyfriend loves the Texan Pocket Schnitzel. It's fried pork filled with jalapeños, ham, and cheese, served with mashed potatoes. I like the classic, authentic version of this. They do a fine job! I also love the Bavarian pretzel. It comes with a couple of different dipping sauces. Incredible beer pours that pair nicely with any of the meal options. We shared a flight that consisted of four different lagers. They also offer whiskey flights, brandy flights, wine flights, and cocktails. We didn't have dessert but I'm interested in the crème brûlée cheesecake next time 'round. We may have just found our new favorite date night restaurant in Waco, TX. The service was outstanding, the pork shank was amazing, and the ambiance was exactly what we were looking for. Their beer flight was good and their pretzel was perfect. We'll certainly come back here again in the future. We made a reservation, but didn't need it at 6:30 PM on a Friday; it was much busier by the time we left. We came here because a couple months back we had a very good experience. I decided to come back on a weeknight with my kids since they really enjoyed their fish and chips. Unfortunately it was not what we expected. It was the same taste however the portion shrunk 50%. The cost was the same and when I asked the server if this was their lunch portion she said no that they had reduced the amount of food they serve because most people were only eating 2 of the 3 fish pieces. I understand raising prices because food costs have risen but to reduce the value you offer is never a good idea when it comes to running a business. I don't mind paying for value but when portions are reduced we have to take our business elsewhere. Wish I could rate higher but it was a disappointing experience. We had a quick girl's trip to Waco since we wanted to try their beer spa. And I thought it would be a good idea to stay at the hotel while we are here. Beer spa: an incredible and unique experience. Surprisingly the beer smelled very pleasant and a bit floral. It was so relaxing. Not sure about my skin being soft after though haha. We had trouble connecting to Alexa so we used our phone. My friend did the beer flight and I had a glass of rose. Not sure what they gave me but it was sweeter than I liked it to be. Food: We made reservation for dinner. Our server was friendly but wasn't attentive. I had the beef short ribs with the barley risotto. The meat was very tender, but it was on the fatty side. The barley risotto was well-cooked. We each have two vouchers for their beer at the restaurant due to staying at the hotel. I thought it would be like an 8 oz or something, but it was 17 oz! We felt bad that we couldn't finish it. So due to that I didn't get to try their cocktails. Hotel: Definitely recommended. And you get to experience the Czech culture while staying here. Easy parking. Friendly and attentive staff. We each got a room, and I felt safe while staying here. The room was clean and the bed was comfy. The walls in the bathroom were thin so I heard a lot from my neighbors. The towels were so soft. What I do like is that they provide a refillable glass bottle while having a water station on each floor. It is Mother's Day 2024 and they were super busy. We did not have reservations so they sat us at the bar. We had to ask for menus after 10 minutes. After we made our order, the service got better and we were served promptly, and the staff took good care of us. Thank you! We had 2 vouchers for a beer since we're staying at The Pivavar Hotel. One of the best locations to stay at in the area. So many walkable shops, restaurants and coffee shops. It's connected to the brewery and restaurant which is really convenient. I last booked a two queen room and it was super spacious. I would note that we had room 3 on the 2nd floor and by the early morning you could hear the traffic of the station across the street. A combination Czech brewery/restaurant/hotel/beer spa, Pivovar offers a one-of-a-kind experience. We paid the restaurant side of the operation a dinner visit and had an all-around terrific meal. The ambiance here is attractive, blending wood and green leather with a view of the brewery. Our server for the evening (Ian?) was also tending bar, and he handled both roles capably without breaking a sweat. A manager later came around to check on us, which speaks to a dedication to customer satisfaction. Pivovar's drinks menu features pilsners and lagers brewed in-house while the food offerings have a Germanic bent. You can still eat lighter here (salads and sandwiches), but anyone looking to indulge in sausage, schnitzel, or steak will be pleased with what's available. My wife and I split a pretzel starter and then opted for the sausage platter and the classic pocket schnitzel, respectively. The pretzel was large, soft, and well-salted, and it came with a trio of dips. Of them, the beer mustard was commendably robust, but the honey mustard and beer cheese were more enjoyable. The sausage platter included what appeared to be a bratwurst and two other sausages alongside corn ribs and sauerkraut. All of the sausages were tasty and offered a firm bite while the corn tasted fresh from the grill. While the schnitzel would have benefitted from a vegetable pairing, everything on the plate was excellent, from the garlicky mashed potatoes to the schnitzel's crisp batter, juicy pork, and cheesy filling. Dessert options included a crème brulee cheesecake that I couldn't pass up, and I'm glad that I had enough room for it. The graham cracker crust had spice notes that reminded me of carrot cake, and the thin layer of sugar topping was very satisfying. My wife also spoke highly of the dark lager. Pivovar isn't cheap, and some of the menu offerings seem like reaches (i.e. $18 for a meatless salad). However, our entrees ($21 and $19) were reasonable for the quality of the food. That Pivovar offers a kind of cuisine I don't usually find made it attractive, but the combination of ambiance, service, and well-executed food made it memorable. Make your reservation online for your one hour beer spa experience. You'll select your beer type, add a cheese board if you like and choose your music which you can control with Alexia. Park in the hotel lot and check in for the spa at front desk; arrive early. A staff member will lead you upstairs and explain everything. The tubs, shower and room were very clean. It would be nice to dim the lights; not sure if that was an option. I really liked that I could control the temperature and level of the water. The herbal beer soak was great; for the beneficial effect of natural elements it is better to undergo the treatment without swimwear. You don't have to worry about feeling sticky, after the bath the brewers yeast will make your skin soft. Another reason to not wear a swimsuit The cheese board was delicious and plenty for two people. The beer was tasty; I wanted more. Cabbage was a Czech take on sauerkraut, went nice with the sausage. Family tried the linguini alfredo which was VERY rich, and could have been shared. It was a little more runny than you might find elsewhere, and very rich and creamy. Stuffed peppers were simple and nice. My family and I visited Waco for a long weekend and sort of just stumbled into this place after we visited the Shops at the Silos nearby. It is just a short walk from there. My older son ordered the Texas pocket schnitzel. Our little ones had pizza. For appetizer, we ordered the Czech fried cheese. Everything was amazing. My risotto was one of the better risottos I've had. The creamy mushroom sauce was rich and perfect. Just the right amount of flavor without it being overwhelming. My son raved about his schnitzel. It was stuffed with cheese and jalapenos. Even though my meal was good, I was a bit jealous of his order. My wife's order was good, and usually I am drawn to any short rib at a restaurant, but this time I declined. Frankly, it was good but my risotto was better. The ambiance was good. Definitely an old school brewery feel to the place. It was nice, but not too nice that we felt out of place there. It was the perfect spot to take the kids and get a good meal. Kids loved the coloring pages and their food. Service was good. Not necessarily exceptional. Felt a little slow at times, but honestly that felt somewhat endemic of Waco in general. I loved the open brewery silo decor, the leather aprons and menu selections. We had the schnitzel and short rib goulash, both are absolutely outstanding. We also ordered the kids pizza which I would have liked but it's not a typical kid winner with real tomato sauce and flatbread like crust. Location is across from the popular Magnolia shops, I saw some parking after I already paid to park across the street for $15 so be sure to scope out parking around the building before committing. My only pet peeve is pricing inconsistency, on the food menu prices are rounded to the nearest whole dollar, but then on the drink menu everything is $.99. I wish they rounded it to the nearest whole dollar like the food menu, it's much classier and would be in keeping with the ambience of the restaurant. Hotel/restaurant/Biergarten...all in one place! Oh, and it's located right next door to the Magnolia Silos and a short walk away from the Dr. Pepper Museum, Union Hall and the Convention Center. The hotel is so cute and quaint. It's beautifully decorated, comfortable and clean. The hospitality is on point too...everyone was friendly and helpful. Plus we were given 2 free beer vouchers upon checkin and free breakfast vouchers for the restaurant. The European charm is felt through the entire place. Big kudos to the design team who worked on this...bravo! The restaurant is so good. We had breakfast, lunch and dinner there. Hearty portions and so damn tasty! Here are the standouts of food for us: breakfast Benedict schnitzel (omg!), the French fries, the brussel sprouts, the pivo peppers (omg!), and charcuterie board (heartily sized!). The cocktails, wine and beer flights were also good! We didn't get to try the pork shank but it looked good. The Biergarten is a beautiful space in the back.
