It was Neapolitan style but not as thick as most places, which allowed it to be cooked well and charred just right. It might even be the sourdough that made it taste light and flavorful. The taste was decent but for price, no dine in, poor service, okay taste---there are so many better choices. 3 years with no in-service, this is crazy. There are way better options: Stony's Pizza (8.5/10) Oak Hill 290, Via 313 (9.5/10), the Pizza Cave, Dripping 9.0/10. Pieous is a 5/10, just a bit better overall than Pizza Hut and Hill Country Ranch near HEB. But Hill Country has way better ambiance. I mean hello, Austin folks love to go to the next best thing. Pretty cool to find such a unique fancy pizza and dessert place way out by Dripping Springs. Awesome perfect soft Napolitano Pizza and the Brussels sprout spicy jam was so unique and tasty how the flavors countered each other. After eating at Pieous, I gained a whole new appreciation for pizza. I used to think of pizza as cheap and greasy take-out food, but Pieous changed that for me. The delicious Neapolitan pizza is made with so much love and dedication. Be prepared for long lines, but don't be deterred. First time we came, we waited in a standing line for 40 minutes before placing our order. There was only one cashier, so slow movement. Each pizza is individually fired in a gorgeous wood oven. However, second time around, the wait was only 10 minutes! We had the simple and elegant Margherita both times. It was perfectly crisp and the crust was especially amazing (despite usually being my least favorite part). All the toppings were extremely fresh. We had the pastrami platter too, which exceeded all expectations. The pastrami is like brisket, but smoked with a different, saltier flavor. The gigantic cookie (bigger than your face) is fun for the size, but too crispy and not soft enough. Wouldn't recommend. The decor is so fun, with chalk drawings lining the walls and communal picnic tables for seating. I wasn't too sure what to expect when this was suggested to us because it's fairly new to the scene and there's not yet a fully functional website to peruse, specially whether there is vegan menu options. I did find a menu on the Facebook page, after the fact - https://squareup.com/directory/crust-llc#category-7 We arrive on the scene and I can plainly see that despite Pieous being on the outer fringes of Austin, the place was fairly well populated. Definitely a good sign. A large proportion of the crowd consisted of families with small children - many of those children were scribbling away on the chalkboard walls. One such child, the owners' was adorably helping out mom at the cash register by running the credit cards through the reader. Too cute. Meanwhile, father and son were industriously handling the pizza making. I will say it was hella loud inside - terrible acoustics when factoring in the number of screaming children, which prompted us to seek solace on the outside deck. The menu scrawled above the cash register boasted a lovely variety of artisan pizzas, appetizers, and salads. I order one of the mixed leaf salad, asked for the mozzarella on the size, and added roasted chickpeas. The omnivores opted to split the bacon and brussel and jam (not sure if they added bacon?) pizza. Pieous also had a small selection of beers and locally produced wine, which happened to be pricier per ounce, so we settled on a bottle of commercially available wine. My friend also ordered a reuben sandwich and tiramisu to go for her husband. The salad, it was pretty great (see photo I uploaded), definitely a fluffy plate-ful of fresh and crispy greens with a small sprinkling of cherry tomatoes. The roasted chickpeas were evidently not as good as they had been my friend's previous visit. They simply weren't all that roasted . . . At least the house made balsamic vinaigrette was near perfect. However, the pizza was evidently delicious. I'm not sure that the thin-crusted pizza was sufficient for the two omnivores, but as it disappeared quickly. The reuben sandwich and tiramisu were also reportedly good once they reached their recipient. Although it was really odd when a server brought the reuben sandwich and we had to remind her about the tiramisu . . . somehow she was under the impression that we had already received it? Three stars for now. Overall a good experience, but the chickpeas kind of did let me down a bit. Maybe they will redeem themselves in the future. However, if you're all about pizzas, you should definitely try out Pieous. read more

Ok, I finally had the chance to check out this #1 rated pizza in Austin after a co-worker swearing over and over how great the pizza and pastrami is. So far I have Home Slice as the #1 pizza in Austin, so I had to see who wins. I must say, Pieous is the real deal! We had the regular "marinara" pie and then had to go and order another pie which was the classic Margarita pie. Both were really good. I also had to sample the Mozzarella plate and of course the pastrami sandwich. Everything was great. The entire family enjoyed everything. I'm going to put it this way...coming from NYC, home slice is still the best slice in town for ME because I love thin crispy slices. But otherwise Pieous is awesome and has more authentic variety. read more

Oh for sweet Jesus and all that is holy, you need to eat at Pieous! It's a truly transcendent pizza experience. They specialize in Neopolitan style pizza with a soft blistered crust (100% nailed it), and fresh high quality ingredients. I was impressed by the many types of meat -- soppressata, calabrese, pepperoni, house-made sausage, procuitto -- and the freshness of the mozzarella and tomato sauce. We decided to try both the Fat Queen (their version of a meat lover's pizza) and House on Fire, which had a nice heat to it. Both were A+. The Fat Queen was completely loaded with meat with a bit of mozzarella dotted around to hold it all together. It was on the saltier end as it's loaded with cured meats, but oh so good. Our favorite was the House on Fire as it had fewer ingredients which really let us taste each individual component. The heat was manageable, but if you don't like spicy food I'd suggest you order something else. The sauce, the cheese, and the spicy calabrese were a perfect marriage laid on the foundation of that sweet sweet crust. I'd go so far as to say it was heavenly. Next time I won't be afraid to order one of the more simple pizzas as even the basic ingredients here stand up and shout their praises to the pizza gods. The size of the pizzas straddles the line between enough for a hungry individual and enough for two. If you're here with a date, I'd recommend a pizza and salad, then maybe a dessert. Which brings me to my next point, dessert, oh dear god yes. Ever see the Bernini sculpture Ecstasy of Saint Teresa? That was me after trying the tiramisu. We took our desserts to-go, but despite being full, the tiramisu didn't last the drive home. We also ordered a gigantic brownie that was insanely good. I absolutely ADORE Pieous. Everything on the menu is wonderful - you really can't go wrong. That's because everything is made with such passion and precision. I had an inkling of the high quality the first time I visited, and then I watched the Diners, Drive-Ins, and Dives episode that featured Pieous, and it solidified it for me: the food at Pieous is made by people who care deeply about quality and taste. First, let's start with the pizza - perfect crust and delicious toppings. My favorites are the Bacon Bleu (blue cheese, bacon marmalade, and arugula) and the Brussels & Jam (pepper marmalade, Brussels sprouts, I also add gorgonzola and mushrooms). Next, the pastrami. It is out of this world and one of the best I've ever had. Finally, the pastries. Definitely get the caramel roll and pain au chocolat - so many delicious, perfectly flaky layers. I used to love Pieous. We were loyal customers at their previous smaller location and this one until after Covid. They still have not opened their dining room. I agree with others. The hours are odd, the ordering is strange, and the pizzas were good, but I haven't eaten here since Covid because they never reopened their dining area. It's a shame. With all the fast food opening around them, it will be hard to compete. It would be a shame to lose this place, but if they will not open like they were before, it doesn't look good. read more

Every single colleague in my advisory firm of over 100 knows I go to Pieous on Friday night and they know it's because they are the best example I've seen on customer experience (combined with great pizza). Pieous, like many restaurants, have had to move to takeout-only service. We tried it tonight. Brought our Fat Queen pizza home and warmed it up. Not gonna lie - the trip had an impact.. it wasn't as good as is is right out of the oven... but even after our 20 minute trip home and a heat-up in the oven it's still better than any other pizza I can get anywhere else in perfect conditions. Pieous new takeout process uses a 100% no-touch process. You MUST order and pay online. They will not touch your credit card physically because of germs. And I appreciate that. The phone app to order is a little cumbersome, so do yourself a favor and order from home and you can schedule the time you want to pick up. This is our new normal right now. My brother went on and on about this place and he was right, it was awesome! I had the pesto pie and some of the Pastrami and I'm pretty sure my blood pressure was climbing with every bite but it is so worth it. The crust is perfect not like a cracker or thick like a piece of bread but had soft dough texture almost like a doughnut or a soft pretzel. We arrived and were told we had to order on line so we did and had our order in exactly 25 min. I thought there would be some outdoor seating but there was not so we made our own seating in the parking lot with items from our cars. Pretty solid pizza place. However their pastrami may be even better than the pizza! Which is why I give it 4 stars. I prefer a crispier bottom crust but you can tell all the ingredients are fresh and flavorful. They also have a decent selection of baked goods and pastries. The salads are huge so beware! I was starving when we stopped here and probably would have eaten anything set in front of me. That being said, was highly let down with this pizza. We ordered a margarita pizza at 3 something on a Sunday afternoon. The place wasn't packed, which seems to be a departure from what I see in the parking lot. It always seems to be packed. This pizza is like ordering soup on gummy crust. And the weird thing; it's not consistent through the entire crust. The middle of the pizza or front of the sauce is so undercooked, that the ingredients slide off, if you don't fold it. It's pretty disgusting to have half your pizza fall in your lap. Had the pizza been cooked all the way through with a crispy or solid crust... this pizza would have been good otherwise. However, I simply can not rate this place highly based off what I was served.
