Listen closely. I love pho and I am from a very accomplished, 30+yr family business and I understand why some of the reviews were less than 5 stars... and it has nothing to do with Phonatik. It has to do with the fact that, today, many people think they're amazing critics and very few make an effort to engage the business as a HELPFUL discussion....
But I did... and, for example, here's what I found:
1. Yes, there were some very minor gaps in the service when I was there but I found out its because the store was relatively new and having such great success that they had to hire more people quickly. So, that minor lag in service was not due to bad management... it was due to the amazing results of amazing food and ambience. Add to that, the waitstaff has ALWAYS been SUPER, SUPER FRIENDLY... I'm sure it's up to speed by now.
2. I was there almost a dozen times over 2 months. I saw the owner there every time and he ALWAYS greeted me personally... sometimes even sat with me. He even showed me how to "properly" eat pho. Prior to that, I thought I knew how to eat it and would just mix everything in the bowl and didn't realize there was a way other than *just eating it*; but he showed me how to take all the pure ingredients and combine it all in my mouth. I feel like I've been let in on a big secret because everyone else I know just mixes everything in the soup bowl and thus loses the original flavor of every ingredient. I got to taste everything individuall and then combined as I chewed.
3. Tony's broth is PURE. No additives, no powders, etc.... it's not some pre-made mix... it's pure and made fresh every day. The reason another person wasn't crazy about the broth, in my opinion, is because the avg person doesn't know the difference between broth with additives and PURE BROTH because pure broth is RARE. I would joke, "Like they made it 250 years ago, right?!" You actually are tasting the BROTH, not additives.
4. Tony is also a top notch entrepreneur with some awesome ideas which might already be in play by the time you read this. He mentioned being open 24hrs on weekends. Hello? 24hr pho? In the land of the midnight sun, a 24hr pho place is HUGE. Imagine some night you can't sleep and a can of Campbell's mushroom soup just isn't gonna do it for you... BAM, 5-10 minute drive and you've got a nice hot bowl of awesome pho. He also plans to make the noodles on the premises. Noodles made fresh, before your very eyes.... wow!
When I go out for Pho, I don't need 800 menu choices to confuse the heck out me. I just need enough tasty choices to satisfy my Pho-obsession. Studies prove that most people tend to stick to around 10 dishes throughout their lives. I don't need 3 pages of pho in which only 10% are actually unique. If you want awesome, dependable pho in a realistic number of varieties, this is your place.
If I could reach through the screen and make you go to Phonatik, I would do it. But I can't. You have to go yourself. And unless you think you're some glorious food critic who bristles if the napkins aren't folded to your liking, you're going to go back again and again and again.... and again. ;)
