I am so happy I had the opportunity to come here! There was no line when I went an hour after opening. The drinks menu is so elaborate and explored flavor combinations I've never seen before. I got the tamarind ice drink which has tequila, tamarind, peanut and a peanut glass candy! The balance between the sourness of the tamarind and the savory component of the drink was delightful! The candy reminded me of a childhood peanut candy I love! I would definitely return to try out some more drinks! The ambiance was nice and relaxing with a sophisticated feel!

This is a Speakeasy bar located on the upstairs of a regular pho and banh mi restaurant. Upon walking up, the staff asked us to use the tablet for queue despite no on waiting ahead. The space is small, with a main center bar area and few small tables around so I understand that it could just be crowd control. The menu had a lot of fun drinks and snacks, including pho in a cup, presented like an instant cup noodles ramen. We ended up getting a few things to try. Overall, enjoyed the creativeness of the drinks and vibe. Prices are a bit high, but we had a good time!

Phocific Standard Time (PST) is one of my favorite speakeasy-style bars in Seattle. Located inside and above Pho Bac, PST is a small, cozy bar to get Vietnamese inspired cocktails. As a Vietnamese girl, I love having a place with unique drinks and Vietnamese representation. The bartenders are also very friendly and fun to strike up a conversation with. The drinks take inspiration from many different Vietnamese foods instead of sticking to the basics. We got a variety of drinks, and they were all very good, some a little stronger than others. The surprise winner was "Khoa Was Here", a shot of Jameson with pho broth. The pho broth is super savory, and shocking goes well with the Jameson, making it a very smooth experience. As much as I love PST, it's not somewhere I visit often due to the size. It's a very tiny bar, holding only about 20 people max. They don't take reservations, so the wait can be long, as a lot of people like to take their time and relax. Parking in this area can also be difficult to find. But if you have a free evening and want to grab a drink with a friend, I'd recommend trying Phocific Standard Time.

I was pleased to see so many savory flavor drinks on the menu. The interior was moody and calm. Only negative was that the service was unpersonable.

It's not exactly a speak easy, just a way for a restaurant to efficiently use their upstairs space. But they managed to use it effectively. It's quite cute upstairs and drowns out the noise from downstairs well. While I didn't have their food, the 3 cocktails that we shared were nice and refreshing with a homage to Vietnam. Bartenders were really friendly and engaging. It's really a 3 star place but our experience with the friendly bartenders pushed it up to 4 stars.

Hidden on the second level of a pho store! Super cute, it seems popular since they don't have many seats inside and have a kiosk to join the waitlist. I went on a Thursday night and only had to wait like 10 minutes luckily! The drinks are very unique and I wish I could have tried more! But this might also be a place to go if you like more alcohol forward drinks. I went by the ingredients for my first too drinks and they were too strong for my friend and I. But once I asked for recommendations saying I like a little less alcohol forward the next two drinks were great! Dua dua coconut - a lot more alcohol forward than I would expect based on the description. 2.5/5 La dua Pandan - also very alcohol forward. The candied flower helps to tone down the strong drink but the flower is only slightly sweet and a bit more on the tart side. Not my type overall and I don't taste Pandan at all 1.75/5 Nuoc mat cooling water - very well balanced! Not too sweet and light. I don't really taste americano, it's more on the fruity side 3.25/5 Dom dom firefly - great balance of sweet sour and not too strong alcohol! Liked this one a lot 3.5/5

I'm not the biggest drinker, but the ambiance was wonderful and intimate, and I enjoyed the Vietnamese-inspired cocktails. We got there towards the end of Saturday night and waited about 15 minutes for a party of two. It was an interesting experience waiting in the bright restaurant area before going up to the bar. We ordered the boozy pandan drink & cooling water, which had fun, fruity notes to it. The real ringer was the crab dip, it was absolutely delicious, and we would 1000% order again. I would return to try the other drinks, especially the "Khoa Was Here" for the pho broth shot!

This is a semi-speakeasy bar accessible through Pho Bac. The bar is on the second floor and they have limited bar seating and table seating. The bartenders/host are very attentive and kind. The menu is extensive for a speakeasy, offering great twists on classic Vietnamese ingredients. We tried the Nuoc Mat(Cooling Water), La Dua(Pandan), and Phin-tini. The Cooling Water was very refreshing and comes with 4 pieces of frozen Logan fruit. The Pandan was quite strong with a hint of the classic Pandan flavor. The Phin-Tini was perfect, a balance Vietnamese coffee flavor with Pandan dust. Out of all three, the Phin-tini has to be my favorite. We also ordered the Banh Bot Loc as a snack, it was delicious. They have plenty of snack options as well. The ambiance is intimate and cozy, not too classy but also casual enough. It's very dimly lit. We came at a time where there was no wait, but considering a weekend would require a bit of a wait.

I've been meaning to check out Phởcific Standard Time for years now, and finally got the chance to this month. Owned by the people of Phở Bắc and located upstairs inside the downtown location. My friends and I came around 9pm on a Friday, and only needed to wait about fifteen minutes. The space is small, it was inside the mezzanine away from the main restaurant. However, a very warm and intimate atmosphere with a dimly-lit setting. We sat at one of the tables by the shutter-windows, but you could definitely see the best vibes were at the bar section. The three of us ordered different drinks, the quynh bee/queen bee, dua dua/coconut, and the la dua/pandan. I ordered the pandan cocktail, which you could truly taste the flavour. It was super tasty and refreshing, I would describe it as florally/fragrant. I tried a bit of my friend's coconut cocktail which was also nice, little on the stronger side. There were so many signature cocktails to try, and they all sounded so good! Would love to try the food next time too. As a Vietnamese-American I truly appreciate being able to see the culture more reflected in different ways that's not just being a typical eatery. By seeing each drink inspired by the flavours of Vietnam it makes me feel grateful to have this space. My friends and I will most surely come back again soon!

I'm always looking for a unique speakeasy and the theme was cool. I had high hopes for the drinks but it was less than satisfactory--it was more bitter and plain tasting than expected :/ There isn't much seating either

Whoever conceptualized a Vietnamese speakeasy bar atop a pho restaurant is an absolute genius! All of the cocktails were inspired by Southeast Asian flavors, were so unique and beautifully presented. For the plot, we had to try the #khoawuzhere which consists of a pho fat washed shot of Jameson with a pho back, and let me tell you, I did not completely hate chasing my whiskey with a piping hot broth - may be a hot take lol. The vibes were immaculate, and I can't wait to come back when we're back in town!

Loved walking in and grabbing a seat at the bar on a Thursday evening. There was no wait around 7:45pm which was awesome. This place is unassuming on the second floor of a Pho restaurant. I was excited to get a mix of snacks (spring rolls and snack mix) plus a cocktail. Everything was delicious and gave a really cool take on Vietnamese cuisine. It is definitely worth checking out for a drink or an intimate evening with friends!

Roquette was a surprisingly small space with a wonderful vibe serving up "destination" bar-worthy cocktails. It reminded me of some of the neighborhood gem cocktail bars that I'd frequented on the East Coast. I grabbed a seat at the bar. Roquette's lineup of cocktails were varied in flavor profile using a wide range of spirits. They also served non-alcoholic offerings which looked equally intriguing as their boozy selections. I started off with the 99 Problems ($28), which, unfortunately, I forgot to note what was in the drink. It was boozy, clever, inventive, and most importantly delicious. My second drink was the Imperium Old Fashioned ($24) made with Westland Whiskey "Roquette" Barrel, Clement Cask Strength Rhum, Old Delicious Apple Brandy, Pineapple, and Spice. It was an excellent, boozy, balanced update to the classic Old Fashioned. Although I went with drinks off their menu, I have no doubt that any of their skilled bar professionals could've crafted me a wonderful cocktail if I had simply requested a classic or something on the fly based on my choice of spirit and desired flavor profile. Yes, the prices on the two drinks I ordered were pretty steep, but they were comparable to prices I've paid in Las Vegas. Plus, I don't have a problem with paying a premium for a well-made cocktail made with premium ingredients in a comfortable, welcoming setting (the drunken guy next to me who tried to engage with me in a political discussion excluded). Bottom-line: Roquette was a revelation. It served up two of the best cocktails that I've had this year.
