Phocific Standard Time is a small speakeasy located on top of Pho Bac in Downtown Seattle. It's a small bar area with seating for about 15 people I would say. I would definitely go early if you want to make sure you have a good spot. A lot of their drinks are more asian inspired with infusions of different flavors you wouldn't find in other bars. I would definitely come back but parking is a pain since it's in DT Seattle. Sanitation: very clean (5/5) Staff: (4/5) Chyrsanthemum Martini (4/5) This was really good and smooth. It is definitely more liquor forward but it has more of a floral aftertaste. I would get this if you want something faster to drink as it's only 3oz. Cooling Water (4/5) The Cooling water was a nice drink as well. I would definitely say the flavors were a little light on this drink but the frozen lychee that was a cute garnish. Xa Lad (5/5) I thought the salad was really good with the dressing, the croutons were a little too crunchy on some of the parts. I would definitely order this again cause it was a good portion size. Nachos (5/5) The crab nachos were really good, the cheese sauce had some fish sauce infused into which gave it more of an asian flare. The way that real crab meat was incorporated was good as well. Phocific Standard Time (PST) is one of my favorite speakeasy-style bars in Seattle. Located inside and above Pho Bac, PST is a small, cozy bar to get Vietnamese inspired cocktails. As a Vietnamese girl, I love having a place with unique drinks and Vietnamese representation. The bartenders are also very friendly and fun to strike up a conversation with. The drinks take inspiration from many different Vietnamese foods instead of sticking to the basics. We got a variety of drinks, and they were all very good, some a little stronger than others. The surprise winner was "Khoa Was Here", a shot of Jameson with pho broth. The pho broth is super savory, and shocking goes well with the Jameson, making it a very smooth experience. As much as I love PST, it's not somewhere I visit often due to the size. It's a very tiny bar, holding only about 20 people max. They don't take reservations, so the wait can be long, as a lot of people like to take their time and relax. Parking in this area can also be difficult to find. But if you have a free evening and want to grab a drink with a friend, I'd recommend trying Phocific Standard Time. read more

Hidden on the second level of a pho store! Super cute, it seems popular since they don't have many seats inside and have a kiosk to join the waitlist. I went on a Thursday night and only had to wait like 10 minutes luckily! The drinks are very unique and I wish I could have tried more! But this might also be a place to go if you like more alcohol forward drinks. I went by the ingredients for my first too drinks and they were too strong for my friend and I. But once I asked for recommendations saying I like a little less alcohol forward the next two drinks were great! Dua dua coconut - a lot more alcohol forward than I would expect based on the description. 2.5/5 La dua Pandan - also very alcohol forward. The candied flower helps to tone down the strong drink but the flower is only slightly sweet and a bit more on the tart side. Not my type overall and I don't taste Pandan at all 1.75/5 Nuoc mat cooling water - very well balanced! Not too sweet and light. We got there towards the end of Saturday night and waited about 15 minutes for a party of two. It was an interesting experience waiting in the bright restaurant area before going up to the bar. This is a semi-speakeasy bar accessible through Pho Bac. The bar is on the second floor and they have limited bar seating and table seating. The bartenders/host are very attentive and kind. The menu is extensive for a speakeasy, offering great twists on classic Vietnamese ingredients. We tried the Nuoc Mat(Cooling Water), La Dua(Pandan), and Phin-tini. The Cooling Water was very refreshing and comes with 4 pieces of frozen Logan fruit. The Pandan was quite strong with a hint of the classic Pandan flavor. The Phin-Tini was perfect, a balance Vietnamese coffee flavor with Pandan dust. Out of all three, the Phin-tini has to be my favorite. We also ordered the Banh Bot Loc as a snack, it was delicious. They have plenty of snack options as well. The ambiance is intimate and cozy, not too classy but also casual enough. It's very dimly lit. I've been meaning to check out Phởcific Standard Time for years now, and finally got the chance to this month. Owned by the people of Phở Bắc and located upstairs inside the downtown location. My friends and I came around 9pm on a Friday, and only needed to wait about fifteen minutes. The space is small, it was inside the mezzanine away from the main restaurant. However, a very warm and intimate atmosphere with a dimly-lit setting. We sat at one of the tables by the shutter-windows, but you could definitely see the best vibes were at the bar section. The three of us ordered different drinks, the quynh bee/queen bee, dua dua/coconut, and the la dua/pandan. I ordered the pandan cocktail, which you could truly taste the flavour. It was super tasty and refreshing, I would describe it as florally/fragrant. I tried a bit of my friend's coconut cocktail which was also nice, little on the stronger side. There were so many signature cocktails to try, and they all sounded so good! Would love to try the food next time too. As a Vietnamese-American I truly appreciate being able to see the culture more reflected in different ways that's not just being a typical eatery. By seeing each drink inspired by the flavours of Vietnam it makes me feel grateful to have this space. My friends and I will most surely come back again soon! read more

Hmm, we walked upstairs from the pho place and entered a separate universe. Think of the bar scene in Star Wars. An eclectic mix of customers were noshing on pho and various types of app like dishes. I love everything about Phocific Standard Time except the name--like what cornball dad got the final say on that one? The concept is otherwise ingenious, a speakeasy-style bar built into a tiny upstairs space above a pho restaurant. It feels like a smart second-generation venture built on the sturdy foundation of immigrant hustle. The bar is walk-in only, with seats for about 20 people, so expect to wait a while if you're going on a peak night. We managed to get in on a Saturday with a party of six because our hotel was basically next door, and I put us down on the waitlist on our way back from dinner. It was over an hour before I got the text saying our seats were available. The space was fantastic, attractive and contemporary with a cool loft vibe. It felt a little like being up in a treehouse or on a rooftop patio, even if the view was of Pho Bac's exposed ceiling. We took over one side of the bar and had a couple of leisurely rounds. The bartenders were great, friendly and very skillful. The drinks were delicious and innovative, made with a lot of Vietnamese ingredients I'd never encountered in cocktails. On the bright, citrusy side, I loved both the Queen Bee and the Firefly. The Queen Bee was a juicy, refreshing drink made with Sông Cái gin, jasmine honey, lemon, and cinnamon flower. The Firefly was bold and flavorful, colored a vibrant green, with Singani 63 brandy, lime, rau răm leaf, Luzhou Laojiao baijiu, cucumber bitters, and black lava salt. The one cocktail I didn't care for came from the boozier side of the menu, the Hey Darling with Sông Cái floral gin, bitter melon infusion, sakura, and aperitif. I like bitter flavors, but this was incredibly bitter, garnished with raw bitter melon. I guess there's a reason bitter melon isn't usually eaten raw. That taste took over my mouth for several minutes. I did enjoy the Tofu Martini, a smooth, strong cocktail made with tofu-infused gin, sesame oil-washed rice wine, ginger, and MSG. I ended my night with the Khoa Was Here, a must for anyone visiting PST. This was a shot of Jameson washed with pho fat, served with a pho broth back. A brilliant, warming treat. I'd highly recommend PST, especially if you happen to be visiting Seattle and staying in the Denny Triangle. We had a lovely time at this bar. PST is a very nice place to go for some casual drinks. They're located above Pho Bac. You check in your party on an iPad right by the entrance, and get a text when your seats are ready. It seemed like there was a really long wait since the top of the list showed a 90 minute wait time, but we were actually able to get seated in around 30 minutes. The inside isn't big at all, and its located on the second floor of pho bac. It's a bar seating around the main area, with two tiny tables too. I got the cooling water cocktail, which had soju, lychee, and some other things I don't remember. It was very refreshing indeed! The lychee skewer on top was cute, and it was also the right amount of strength and sweetness. For drinks we tried the Jameson pho shots which were so savory with a rich pho broth to cut through the alcohol. Our waitress recommended sipping back and forth rather than shooting all at once and it made for an amazingly pleasant drink!! We also tried the golden hour which was refreshing and citrusy as well as the tofu martini. The tofu martini I was hoping would be slightly more savory/salty but I still enjoyed it since it wasn't a sweet beverage. I ordered the "dom dom" firefly drink, and it really refreshing with the use of rau ram leaf and lime. My boyfriend enjoyed his La Dua - Pandan cocktail made of mezcal and pandan cordial, hibiscus flower. The cocktails are SO beautifully presented here, and taste amazing. The flavor combinations are so unique from any other bar I've been to. You really can't go wrong with any drink. I really liked the ambiance and decor; there were Asian fruits and ingredients on the counter and the music they played was V-Pop (Vietnamese pop) and a mix of other upbeat tracks. Phocific Standard Time is a relatively new restaurant that opened up on the second floor of Pho Bac in downtown Seattle. They have no reservations but when we got there we put our name down and waited for a text when our table was ready. We arrived at 5:30pm on a Friday and waited around 15 minutes before we got seated. There were only about 20 seats; there was a bar area and some small tables around the exterior. It was not big at all and I wouldn't recommend coming here with a party bigger than four. GOI CUON ($7) - one order had two spring rolls cut in half but we thought the star of the show was the peanut dipping sauce. We drenched the spring rolls in it because it was so good. 4/5 BANH BOT LOC (6 for $14) - this is their most popular dish and for good reason. The tapioca dumplings came wrapped in banana leaves and had an addicting chewy texture. This is a must-get! 5/5 BANH MI ($10) - I thought the banh mi was nothing special compared to something you'd get at a typical Vietnamese restaurant. It was spicy from all the jalapeños but was just okay. 3/5 PHO CUP ($15) - they delivered this dish in a large plastic bowl resembling cup noodles. The toppings laid on a little plate above the bowl and I think it would've been good if we removed it when it arrived because it continued to steam. After a while the noodles became really soft which resulted in an undesirable texture. They were also very short, like they were cut so they were hard to pick out with chopsticks. 3/5 For drinks I ordered the em oi aka hey darling ($17) and the la dua aka pandan ($15). The hey darling was so floral from the gin that it was overpowering the rest of the drink. The cool thing was that they had the PST stamp on the ice cube though. The pandan started off smoky from the mezcal then eased into the sweetness from the pandan. Between the two I liked the latter more but all their drinks had a unique Asian twist to them. Overall I thought the food was okay. We preferred the appetizers/snacks more than the main dishes and we like some drinks way more than others. One of my favorite bars in Seattle with unique Vietnamese inspired drinks unlike any other bars in the area! There's always a waitlist since the place is really popular but the line goes pretty quickly. It's also on the pricier side but the drinks are super tasty and worth it. My favorite drinks here are the Egg Coffee and the Phin Tini. The Egg Coffee is perfect if you like strong black coffee or a mix of bitter and sweet. The Vietnamese coffee was bitter and had a strong deep espresso like flavor. The egg custard complemented it with a slight sweetness and richness that elevated the whole drink. The Phin Tini is perfect if you like sweeter coffee drinks. It was light and sweet without being overly so and still highlighted the flavor of Vietnamese coffee with a bit of richness from the condensed milk. Another close favorite is the Firefly. The acidity of the lime and fresh melon-like cucumber flavors made a super refreshing drink. The food here is also pretty good. Obviously the pho and banh mi here are good since this place is above Pho Bac, but the Cua Dip is amazing as well. While the space is a bit cramped, I think that can be overlooked by the fact that both the quality of food and intriguing concepts all around. (Beef Pho Cup: B) - The beef pho cup is quite cute with the custom designed cup. The broth and noodles have some flavor development and the bowl was quite fulfilling overall. I think the only miss here is that more interesting cuts of beef could be used like tendon or tripe because the eye round was a bit dry. Otherwise, this is a fantadtic dish. (Pandan Cocktail: A) - While I was expecting a mote prominent pandan flavor that is sweet rather than meficinal, the drink is designed simply but elegantly. I also like the touch of the candied citrus to draw away from the monotone note. (Pho Whiskey Shot: S) - This is definitely the star of this bar. Its a novel and unique experience that tasted quite good and I wouldntecommend everyone to try. I love that the whiskey had a strong backbone, which is enhanced by a fat wash by the broth.
