This is a great family owned restaurant serving the best pho around. The broth is really really special. Full of flavors and potent. I usually add sriracha, hoisin sauce and lime to my pho just to feel something, but not a Pho Saigon. The broth is perfect. Just a few basil leaves and that's it. I absolutely enjoy the richness of the soup. It's indescribable, it's that good. The bowl is served blazing hot. Right amount of noodles. Generous meat cuts. I always go for the oxtail and beef rib pho. Meat falls off the bone like ice cream on cone on a hot summer day. Paul is awesome too. He's personable and just a great guy. My girlfriend and I came here right after flying from NYC to SEA and had this as our very first meal. We were amazed by it and thought, wow, maybe this is what all Seattle pho is like. Or maybe it was because we had just landed from a long flight and we were hungry. But no, this one is special. Over the course of a week, our mission was to find the best pho in Seattle. We tried 5 popular pho places around the Seattle area, and after each one, we kept craving and thinking back to the pho at Pho Saigon Garden. We knew we had to go one last time before our Seattle trip came to an end - to confirm if it was truly the best pho in Seattle. We arrived back to Pho Saigon Garden a week later to have it as our last meal before our flight back home. As soon as we walked in, the owner, Paul, remembered us, and we told him all about our trip. After we had the first sip of the broth, we instantly knew this pho topped them all. Paul's pho does everything right: the soup, the noodles, the meat, the tripe, the tendon. The soup is super clean and clear - not too salty or sweet, and also rich with flavor while also being light. The broth was piping hot, making the noodles a perfect consistency. The meat was super tender and flavorful (and plus there was ample meat). The tripe was crunchy and not chewy. Aside from the mouth-watering pho, Paul was very sweet, genuine, and happy. Although we are strangers and we've only seen him twice, we left Pho Saigon Garden feeling like we found amazing pho, but also more importantly, a new friend. If you want a hearty, delicious bowl of authenticity, try this place out. He asks for your name and is extremely polite and attentive to your needs I would recommend this place to everybody- the restaurant is family ran by him and his siblings. he has worked the place for over 20 years which is amazing. Paul, the owner is still running this place after fifteen years, as usual, he is always attentive, courteous and friendly. The star of the meal is Fish sour soup, not too many places serve this dish, and Pho Saigon does a good job of preparing it. The catfish in the soup was meaty, tasted fresh and tender, not overcooked, and with okra, tomato, bean sprouts and other vegetables; seasoned with tamarind plus other ingredients. This soup is very tempting tasty and with it's sour and spicy flavor,had become very appetizing. I consumed the good size bowl of rice with this dish. Fried noodle with Shrimp which my lady ordered was also very well prepared, good size prawns with stirred fried veggies and noodle went well with perfect seasoning and taste, very delicious and with good portioning too which made our meals very satisfying. The best pho!!! Found this place on accident near our home & let me tell you their pho does not disappoint! The owner Paul I believe has such a fun personality as well.
