My fiance and I recently went to Houston for a wedding and when he told me let's get pho.. I instantly hesitated. Pho Dien looks like any typical pho restaurant. Their menu is very basic. Just pho with different variations and fixings. We shared the pho dac biet XL and added a side of bone marrow with egg. The XL was truly XL and was enough noodles and meat to feed the both of us and keep us full. The broth was delicious and not too salty. Usually when I eat pho out, there's lots of MSG and makes me drink lots of water. This wasn't the case for Pho Dien. The bone marrow and egg added an extra béo-ness to the pho that was to die for! Don't forget to ask for the pickled onions on the side. The fresh squeezed orange juice was also very good. As some would say, it healed us. The broth overrated for I never can go here it's not the same as the original owners that ran the one in Kimson location, the original owners at were her parents she said daughter has different cooking skills or family from her parents. I had just placed one pho lean brisket Togo. It was the most least enjoyable experience that will keep me from returning here to not step into here until the broth taste legitimately better. If there are many that this would stay on the list I say top mid range list not anywhere in the top 5 of Houston and please when it's lean it should not be looking fatty like bacon strips that is a ratio of 3/4 fat to lean meat. So many pho choices on Bellaire but I always find myself going back to this one. Something about their broth is just really clean and comforting. It doesn't taste like made from bone broth powder. Color of the broth looks pure and balanced, not oily. I heard that they stew the broth for over 12 hours, I would believe it because no where else make the broth like them. Normally when I eat pho from other restaurants I drink a lot of water after because they are salty, not pho dien's. They sell so well that sometimes on the weekend they close early because they are sold out for the day! Besides the taste, the portion is really nice and affordable. They give a balance amount of noodle and meats, I'm full after eating a regular size bowl. Service here is like a blind box, sometimes good sometimes ok. Trying to figure out what to eat on a Monday morning after a whirlwind Christmas weekend 2025. My mind was focused on just being calm to run 50+ miles on Tuesday, 12/30/2025 In Missouri City, Texas. With that said, we arrived here at Pho Dien Vietnamese restaurant around 11:00am and it was already busy. We got there at the right time, since more people showed up after us and we were blessed to not to be waiting around for availability. My party of 3 spent about an hour or so here and I opted for the combination bowl of Pho, which was averagely priced. My friends also decided to grab Pho bowl as well. The menu was familiar and definitely enjoyable to be here. The service here was good and friendly, while being fast and professional. [[HIGHLIGHT]]The restaurant itself was pretty large for a typical Vietnamese restaurant but it can accommodate a lot of people at any given time. After checking out the many pho spots near me (a perk of living in Chinatown--so much good food!), I decided to try Pho Dien because of all the recognition they've gotten. I ordered the Large Beef Pho, and let me tell you, they did not skimp on the meat and veggies! I always skip the cilantro and onion, but basil and extra jalapeños are a must. I opted for the large dac biet which is a combination of meats, tripe, tendon, and meatball. I knew I wasn't going to be able to finish it, but I love having leftovers for the next day. I requested the broth extra hot, and it indeed came out extra hot and steaming. I was delighted by the amount of meat and noodles in this bowl! They definitely weren't skimping. I used a bit of the dried chiles in the condiment rack to spice up the broth towards the end, giving that tasty clean broth a little oomph. The only main complaint was the service. I saw the waiter once when he took my order, and that was it. Never received a refill of my empty water cup, and I had to go to the counter to get a togo container while paying. I typically will order pho Togo and let it sit for a day so the fat can turn into a solid and I love how this soup, is clear and not fatty which is very important. The Togo meal was packed welll, a little light on the onions which I think it needed more, nice slices of brisket, very cleaned packed. What I find very interested is the rectangle shaped Togo meat which is very fresh. It's thin pounded red meat that comes out tender. When the hot soup is poured over very tender. Love the good beef bone soup, you can tell it's not from powder, traditional pho broth. I would say it needs more onions, a little bit of a let down it came with 1 meat ball cut in half so the size of quarters, very little to no tendon. I mean kids size to be honest. This is easily the worst pho restaurant I've been to, and possibly the worst in Houston. There's a decided lack of interest in this place on the part of the employees, and it's visible from the moment you walk in the door. Trash all over the floors, tables and chairs needing to be cleaned up, tables bunched too close together despite being separate tables, the works. The waiter must have been used to predominantly Vietnamese clientele. He didn't communicate well in English nor understand me well, and I've been routinely told by non-native speakers that I'm easy to "practice English" with due to my neutral accent. The food itself was filling, but the experience was still disappointing. We ordered the well done flank and skirt flank, expecting the same type of thin sliced meat that we've been served at countless other Pho restaurants across the city. This was hands down some of the WORST pho I've ever had. The pieces ranged from half-fat to entirely fat and gristle. There was plenty of it, but nothing resembling "steak" meat. I actually counted two pieces of actual meat in the entire extra large bowl, each amounting to maybe a square inch of meat. In comparison, we probably had 15x as much fat strips in the bowl. Once we were served, the waiter didn't check on us again at all, but we kind of came to expect that based on the rest of the experience. A family of six got seated at the so-close-it-might-as-well-be-our-table next to us. The mother was clearly used to whatever this nonsense was. She immediately grabbed napkins and started wiping down areas that hadn't been properly cleaned before sitting her family down.
