The combination Pho was delicious. The service was great and the fountain in there was really relaxing. It stayed pretty busy while we dined but service was fast!

Beef Bahn Mi

I didn't come in here with high expectations, but they certainly shocked me. The space isn't huge but we were able to get a table right away. Our server came and took our order pretty quickly. We ordered the Beef Pho, a Beef Banh Mi Sandwich, and the combination plate. The Beef Pho was so flavorful and the portion was pretty big. The Bahn Mi was so good. The veggies they put on it really set it off. The combination plate was also very flavorful. The salad dressing they use is unique and it's really good. The beef on the combination plate and on the Bahn Mi sandwich are the same but they have completely different flavor profiles based on what they're on. I would recommend checking this place out if you're looking for variety on the menu.

we've always had our "go to" pho place but didn't want to drive that far so decided to give this place a try. I cannot even begin to say how happy we did. We might just have a new go to place!! We had to large combo bowls of Pho, an order of fresh spring rolls, eggs rolls and potstickers. Everything was extremely fresh and tasted delicious. The fresh spring rolls may have just been the best I've ever had!! The two guys working there were super friendly!! Thank you. We'll see you all soon!

Going to Pho Binh Minh was an impulse trip, but I was not disappointed! The service: The guy working there was on top of everything, getting people food and taking orders and welcoming newcomers. Very impressed with how he handled it all! I got my food within 10-15 minutes of ordering. The environment: It didn't feel extremely clean. They had decor up, mainly pictures of their food. It was a moderately small restaurant, but didn't feel crowded. The food: They give large portions of food and it's delivered steaming hot! So be prepared to wait a couple minutes to let it cool down :) I ordered the wonton noodle soup. Very filling and had a large amount of wontons amid the noodles and broth. I will say, however, I don't have much of a taste for Vietnamese food, but this was interesting!

Heading home after shopping. Tired, hungry and just in need of calm. We wanted something tasty, easy and good. Hubby wanted a sandwich, I wanted something not so heavy. I turned for yelp for inspiration. What's this? Pho Binh Minh and they have Banh mi! Count us in!! We enter and there is a Fountain up one corner adding to a soothing dining area. We ordered a Chicken and a Pork Banh Mi. Thinking ahead, I suggested to my husband that we share. He gets half of my pork and I could half of a chicken so we could both savor the choices. Our sandwiches are brought to us, and they looked delicious. Better yet, they were delicious. The bread was crunchy without being so hard that you were afraid you're breaking your teeth. The protein was savory and flavorful without overwhelming the other ingredients The pickled vegetables, cilantro and jalapeños were equally tasty. I couldn't determine what the sauce was they use, but that was really good. The customer service was spot on. Warm, welcoming, and friendly. Definitely worth a trip back

P15. Spicy Hue Style Noodle Soup/ Bun Bo Hue - IG: @nelson_eats

I used to live in Maple Valley several years ago, so I've eaten most of the spots around the city and I can definitively say this is the best restaurant in Maple Valley. I been here three times and it's always consistent and the portions are very big for the price. The last two times I've ordered the Bun Bo Hue and it has everything in it including oxtail. It's a big bowl and I need to have my "A" game to finish it. I like how they put plenty of noodles too. In other places, some don't add enough noodles to the bowl. It's not just the noodle soup bowls that are good values. My friends have ordered the vermicelli and lemongrass chicken rice bowls and they need to-go boxes because it was too much for them. If I need to pass through Maple Valley, you bet I'll be stopping here even if I'm not hungry. I'll get something to-go because I know I'll regret it if I didn't stop. The only drawback is that this place doesn't have air conditioning or at least they need to increase the power. It can get warm in there, but I'm willing to look past it if the portions continue to be large.

Shrimp Spring Rolls

This place was recommended to me by several fellow foodies and since it is so close to where I live I gave it a try. Tucked away in a strip mall, there was adequate parking. Parking lot was clean and presentable. They have a very extensive menu! I selected the shrimp spring rolls to start. Generously sized portions and you can tell that they were made fresh. Nice peanut sauce to accompany them. The star of the show was the beef brisket pho. Again, nice sized portion and very fragrant and appealing. The broth was fantastic. A nice hint of star anise along with onion and cilantro. This was a full meal for me. Lobby is not large but very clean and well organized. Utensils at each table and fast and friendly service. I highly recommend Pho Binh Minh to anyone looking for a hidden gem.

Well I needed this tonight! I needed something comforting and this is exactly what I was looking for! I ordered this through yelp and I am loving this capability. I never have issues! I just got the chicken and vegetable soup which is pho style. I ordered the spring roles as extra veggie and freshness! The broth was yummy and well balanced. I love hoisin sauce but it was already deep in rich color. Beautiful white meat thinly sliced! So amazing. The spring rolls were just that. Spring and full of freshness and crunch! I didn't care for the sauce, to thick? That could be a me thing. All in all happy with everything and a huge thank you to this business

In Maple valley on a cold fall night and you look around for a hot Pho and this is the place with the highest ratings. And they did not disappoint! The Pho was amazing, the hot chicken broth with chicken which was cut perfectly and were very soft and tender in the broth and with lots of veggies. We ordered Chicken fresh rolls which was freshly wrapped rolls with grilled chicken along with a delicious peanut sauce. lastly, the Chicken Banh Mi was a delicious chicken sandwich with soft, juicy chicken. Great, friendly staff and good parking options!

Nothing makes me happier than knowing this delicious pho and Vietnamese restaurant is but a few mere short miles from my new place. When I moved to the area I was afraid I'd have to drive far, far away to get good pho. Nope, they've got it right here at Pho Binh Minh and it's simply delicious. First: their pho is sooo authentic and wonderful. The broth tastes like it's been simmering for years, full of rich, traditional pho flavors and (in the combo, which is my fave) they don't skimp on the meats or noodles. Next: their vermicelli bowls. Full of that perfect combination of thing, soft vermicelli noodles, grilled chicken and tofu, and crispy fresh veggies...and of course served with a simple-but-sublime traditional dressing that ties everything together. This dish, along with the pho, travels well for takeout and makes great leftovers. Finally: their banh mi sandwiches. I'm a big banh mi fan, and Pho Binh Minh does not disappoint. I prefer a traditional banh mi, but I love that they have vegetarian and vegan banh mi options to bring to my parents, who don't eat meat. The service is fast and friendly, too. Honestly, the biggest problem I have with this place is deciding what to order!

Let me tell you about my server, the absolute legend who conquered his two-pack-a-day habit through the revolutionary "Brisket Smoke Immersion Protocol." This hero of modern medicine discovered that 60 minutes of face-time with oak-smoked brisket vapors carries the same satisfaction as 47 cigarettes, but with the added benefit of making your hair smell like victory. "The trick," he'll tell you while delivering a plate of burnt ends, "is to position yourself exactly 7.3 inches from the top rack, where the smoke density hits that sweet spot between 'spiritual awakening' and 'temporary meat blindness.'" He tracked his progress in a leather-bound journal that's now permanently infused with smoky goodness. Day 1 entry: "Visibility limited, meat particles adhering to eyebrows." Day 15: "Have begun to communicate telepathically with the brisket. It speaks of great wisdom." Day 30: "I am become smoke, destroyer of cravings." The restaurant had to install a special timer just for these sessions. They call it the "Meat Meditation Chamber," and there's now a waiting list of people trying to kick various habits through strategic smoke exposure. One guy supposedly gave up energy drinks by huffing pulled pork vapors for three weeks straight. The best part? While sharing his journey to smoke-based enlightenment, he'll serve you the most transcendent BBQ this side of the astral plane. The brisket doesn't just fall apart--it voluntarily deconstructs itself out of respect for your taste buds. The ribs have converted more vegetarians than a bacon-scented hypnosis podcast. Five stars. Would absolutely sit through another 45-minute explanation of how the smoke molecules restructured his DNA while demolishing a plate of burnt ends again. Just don't ask about the time he accidentally fell asleep in there and woke up speaking fluent Memphis-style BBQ. P.S. They're thinking about bottling the smoke as a cologne. Had a dill pickle spear on the side and that set things off nicely. Observed that as people came in, they were served quickly and they had a good process down. It's also a bit awkward because they have an open kitchen, so you can actually see the employees moving slowly. So why three stars after all that? Because the sub was actually really good -- and that's what I came here for. The garlic bread was just a fun add-on. To be fair, I probably came at a bad time. It was 6p on a Friday, the line to the door, and DoorDash drivers were yelling at the workers, asking how much longer their orders would take. They clearly had enough on their plate without worrying about my $3.50 garlic bread. I'll give them another chance based on the taste and the fact that the guy taking orders (and my name for the to-go order) was extremely friendly. Hopefully, they won't miss part of my order next time. :(

When I got home it was actually a full on blueberry donut inside with green frosting on top. I'm not a fan of blueberry baked goods so that was disappointing. The empanada somewhat made up for it. I got the Chilean pino since that was the only flavor left. I had never heard of the flavor (and neither did the employee). It was delicious...but over toasted. Next time I will just heat up the empanada at home to avoid this. I would return for the empanadas. It would be nice if the donuts had signage for the flavors and/or if the employees were knowledgeable on what they are selling so customers like myself don't go home with mystery flavors!
